FETTUCCINE WITH SWEET PEPPER-CAYENNE SAUCE

Steps:
- Melt butter in heavy large skillet over medium heat. Add bell peppers, garlic and cayenne; stir to blend. Cover skillet; cook until peppers are tender, stirring occasionally, about 7 minutes. Uncover; add cream and broth and simmer until liquid is slightly thickened, about 5 minutes. Stir in 1/2 cup Parmesan. Remove from heat.
- Meanwhile, cook fettuccine in large pot of boiling salted water until just tender but still firm to bite. Add peas to pot. Drain. Return fettuccine and peas to pot. Add bell pepper mixture and basil; toss. Season with salt and pepper. Transfer to large bowl. Sprinkle with 1/4 cup Parmesan.
SWEET RED PEPPER SAUCE
Something a little different when you aren't in the mood for a tomato sauce. Can use to serve over pasta or rice.

Steps:
- Heat oil in large sauce pan on med high heat.
- Add onion, then garlic.
- Stir about 1-2 minutes.
- Add red pepper and stir around about 5 minutes.
- Add wine, broth and spices.
- Reduce heat and simmer about 20 minutes.
- Pour out of pot to a blender/food processor.
- Blend until smooth and return to pot.
- Simmer 15 minutes.
- Ready to serve.

Steps:
- Heat oil and butter in large nonstick skillet over medium high heat.
- Add garlic, onion, and red peppers and cook for 5 minutes, or until tender.
- Add stock, salt and pepper.
- Cover, reduce heat, and simmer for 10 minutes or until vegetables are very tender.
- Puree in food processor (or use immersion blender), return to pan and simmer 8 minutes until sauce thickens.
- Cook pasta in large pot of boiling salted water until al dente.
- Drain well and add to sauce in skillet.
- Sprinkle with basil; toss for one minute to allow pasta to absorb flavours.
- Transfer to large serving bowl and sprinkle with lemon zest.
- Serve with cheese and pass the peppermill.

- 1. Cook pasta as directed, drain, keep warm. Spray a lg skillet w/ cooking spray, place over medium heat.
- 2. Saute bell peppers, garlic and cayenne pepper for about 5 mins, or until peppers are softened. Stir in sour cream, and broth. Simmer, uncovered for 5 mins.
- 3. Stir in grated cheese. Toss pasta and sauce until bleended. season w/ salt and pepper.

- 1.Bring a large pot of lightly salted water to a boil. Add pasta and cook for 8 to 10 minutes or until al dente; drain. 2.Meanwhile, spray cooking oil in a large skillet and saute red bell peppers, garlic and cayenne pepper over medium heat for 3 to 5 minutes. 3.Stir in sour cream and broth; simmer uncovered for 5 minutes. Remove from heat and stir in cheese. 4.Toss hot pasta with sauce and season with salt and pepper to taste; serve.
