This recipe was pulblished by Dole and is my favorite cranberry salad. It has become one of my most requested sides for our traditional holiday meals. This can be made with sugar free Jell-0 to reduce the calories without sacrificing taste at all. It is also a great make ahead dish for the busy holidays.

1 can(s) (20oz) crushed pineapple, undrained
2 pkg (4 serving size each) jell-o raspberry flavored gelatin
1 can(s) whole berry cranberry sauce
1 red apple, chopped
2/3 c chopped walnuts

Steps:

  • 1. Drain pineapple, reserving juice. Remove 1 Tbsp. pineapple; set aside.
  • 2. Add enough cold water to juice to measure 3 cups; pour into saucepan. Bring to boil; remove from heat. Add dry gelatin mixes; stir 2 minutes.
  • 3. Stir in cranberry sauce.
  • 4. Pour into large bowl. Refridgerate 1 1/2 hours or until slightly thickened.
  • 5. Stir in pineapple, apples and walnuts. Refridgerate 4 hours or until firm.
  • 6. Garnish with reserved pineapple, sliced apple and some fresh mint

I found this in my Sunday paper. I haven't tried it yet, but am planning on making it for Thanksgiving dinner. Sounds de-lish!

Number Of Ingredients 5

1 (20 ounce) can dole crushed pineapple, undrained
1 (6 ounce) package jell-o brand raspberry gelatin powder
1 (16 ounce) can whole berry cranberry sauce
1 medium dole apple, chopped
2/3 cup chopped walnuts

Steps:

  • Drain pineapple, reserving liquid in 1-quart liquid measuring cup. Remove 1 tablespoons of the crushed pineapple, set aside for garnish. Add enough cold water to the reserved liquid to measure 3 cups; pour into large saucepan. Bring to boil; remove from heat. Add gelatin; stir at least 2 minute until completely dissolved. Add cranberry sauce; stir (gelatin mixture should be thick. Pour into large bowl.
  • Refrigerate 1-1/2 hours or until slightly thickened (consistency of unbeaten egg whites).
  • Stir in remaining pineapple, apples and walnuts; stir gently. Pour into medium serving bowl.
  • Refrigerate 4 hours or until firm. Top with reserved crushed pineapple just before serving. Store leftover gelatin in refrigerator.
  • Cooking time would actually be refrigeration time.

2 pkg (4 oz size) or One 8 oz pkg of Jell-O brand raspberry flavor gelatin
1 can (16 oz) whole berry cranberry sauce
1 medium apple, chopped
2/3 cup chopped walnuts

Steps:

  • PART 1 1. drain pineapple, reserving liquid in measuring cup 2. remove 1 tablespoon of crushed pineapple and set aside for garnish 3. Add enough cold water to reserved liquid to make 3 cups and pour into large sauce pan 4. bring to boil, remove from heat. 5. add gelatin; stir at least 2 minutes until dissolved. 6. Add cranberry sauce; stir until well blended. NOTE: The gelatin mixture will not be smooth due to the presence of whole berries. 7. Pour mixture into large bowl and refrigerate for 1 1/2 hours until slightly thickened. PART 2 1. stir in remaining pineapple, apple and walnuts until well blended. 2. pour into medium serving bowl 3. refrigerate for 4 hours or until firm 4. garnish with crushed pineapple just before serving. 5. store leftovers in refrigerator
