This recipe is light and refreshing and yet very satisfying. Any time we have refreshments at church or work, I'm asked to make it. It's a wonderful salad for holiday entertaining.

Number Of Ingredients 8

4 skinless/boneless chicken breasts
1 (6-oz.) can crushed pineapple, drained
1 red apple, diced
1-2 stalks celery, diced
1 c pecans, chopped
1 Tbsp grated onion
1 Tbsp poppy seeds
mayonnaise to taste

Steps:

  • 1. Boil chicken breasts until done and allow to cool. Shred chicken into small pieces. Mix chicken together with all other ingredients. Refrigerate overnight before serving. Serve with crackers or cocktail bread. Enjoy!

This is a recipe of my aunts. It is one she makes during the holidays and we ask for it every time we have a get together! It sounds a little unusual but its a must try and will quickly become a family favorite. Also good for baby showers and other parties.

Number Of Ingredients 8

2 (8 ounce) packages cream cheese, softened
1 tablespoon bottled steak sauce
1/2 teaspoon curry powder
1 1/2 cups minced cooked chicken
1/2 cup minced celery
1/4 cup chopped parsley
1/4 cup chopped toasted almond
Ritz cracker

Steps:

  • Beat together first 3 ingredients. Blend in next 2 ingredients and 2 Tbsp parsley.
  • Refrigerate remaining parsley. Shape mixture into 9' log. Wrap in plastic wrap and
  • chill 4 hours or overnight. Toss together remaining parsley and almonds: use to coat log.
  • Serve with RITZ crackers. Yields about 3 Cups spread.

This is a mayo free recipe! My mom makes this all summer long. It's great for a hot summer lunch or dinner, great to bring to a picnic.

Number Of Ingredients 9

1 (8 1/4 ounce) can crushed pineapple, undrained
1 (8 ounce) container cream cheese
2 cups of chopped chicken
1 (8 ounce) can water chestnuts, undrained and sliced
1/2 cup of sliced celery
1/2 cup of slivered toasted almond
1/4 cup green onion, slices (including tops)
1/4 teaspoon salt
1 dash black pepper

Steps:

  • Drain pineapple, reserving 1/4 cup of liquid.
  • Combine reserved pineapple liquid and cream cheese, mixing until well blended.
  • Add pineapple, chicken, water chestnuts, celery, 1/4 cup of almonds(walnuts and pecans will work also), onions, salt and pepper to cream cheese mixture; mix lightly.
  • Chill at least one hour but overnight is best.
  • To serve place in tomatoes, lettuce cups, or large cooked pasta shells. Prep time does not include time to chill.
