There are many versions out there on how to make those theme park turkey legs that I have found. Some were way too salty or smokey for us. So I experimented and came up with this simple version that was close as we could get to those you get at the parks. We just use a simple back yard smoker, nothing fancy and they tasted so good.

4 -6 large turkey legs
1 cup kosher salt
1/2 cup dark brown sugar
2 tablespoons peppercorns
1/2 gallon vegetable stock, chicken stock or, water and use a chicken base
1 gallon ice water
6 teaspoons liquid smoke

Steps:

  • This is my version that worked well for us. I brine for 24 hours. Heat your smoker to 220 degrees with real charcoal chunks. Add your favorite wood chips if you like. We then smoke the legs until done, it's about 4 hours for nice sized legs. The turkey comes out with a nice "hammy" texture. They may not be exactly like the theme park turkey legs but sure comes close enough for us.
  • Heat 1/2 gallon of water or stock to a boil to dissolve the salt, brown sugar and base if using.
  • Allow to cool to room temperature.
  • Add to your brine pot along with 1 gallon of ice water and brine for 24 hours.
  • ***Note: Apple wood or Cherry wood chips are a sweeter milder smoke than Hickory wood.

County Fair Turkey Legs with Sweet and Spicy BBQ Sauce image

Turkey legs are a traditional snack at county fairs. They are also known as "caveman pops" because they are held by the bone and eaten like huge lollipops. Ree likes hers with a sweet and spicy BBQ sauce which, although not traditional, makes a delicious accompaniment to this meaty snack, and a great addition if you are serving these at a party.

4 turkey legs
1 tablespoon paprika
2 teaspoons chili powder
2 teaspoons ground cumin
2 teaspoons kosher salt
2 teaspoons ground thyme
1 teaspoon garlic powder
1 teaspoon freshly ground black pepper
1/4 cup honey
1/4 cup bottled BBQ sauce
1 tablespoon honey
1 tablespoon hot sauce or to taste
1 tablespoon soy sauce

Steps:

  • For the turkey legs: Set the turkey legs on a baking sheet and wrap the bone end with foil. Mix the paprika, chili powder, cumin, salt, thyme, garlic powder and pepper together in a small bowl, then sprinkle over the turkey legs liberally. Refrigerate for 1 to 2 hours.
  • Preheat the oven to 325 degrees F.
  • Roast the turkey legs until golden brown with an internal temperature of 160 degrees F, 40 to 45 minutes. Turn the oven to the broil setting. Brush the legs with the honey and return to the oven to broil until the skin is caramelized, 1 to 2 more minutes.
  • For the sweet and spicy BBQ sauce: Meanwhile, mix the BBQ sauce, honey, hot sauce and soy sauce together in a bowl. Serve alongside the turkey legs.

The title says it all. You can use any chicken seasoning, like McCormick Montreal Chicken Spice Grill Mates. I use a chicken barbecue spice rub that is local here. You can also replace the barbecue sauce with a grilling sauce like McCormick Mesquite Grilling Sauce Grill Mates. I just happen to prefer to use what I already have around. One more thing, it is probably best to finish the legs off in a smoker, but of course must of us only have a grill. You can always add wood chips to the grill and get the same effect. Either will do fine!

4 turkey legs (small to medium size)
4 tablespoons barbecue seasoning (chicken blend)
1/2 cup distilled white vinegar
3 cups water
2 tablespoons barbecue sauce

Steps:

  • Pat turkey legs dry with a paper towel. You can also remove the skin to cut back on the cholesterol and fat.
  • Mix 3 tbsp barbecue chicken spice blend, 1/2 cup vinegar, and 3 cups water in a pan or bag and marinate legs for 6 hours, turning once.
  • Drain off 1/2 liquid, and salt lightly with more barbecue chicken spice blend (about 1 tablespoons.).
  • Cover pan with aluminum foil and bake for 40 minutes at 350°F Turn legs over at 20 minutes.
  • Heat grill and and transfer turkey legs when bake time is done.
  • Brush on the barbecue sauce during the last 7 minutes of the grilling process; turn over legs and brush on the other side.
  • Cook until a desirable brown.
