Herb Roasted Alaskan Halibut with Fennel Confit, Nicoise Olives, Sweet Peppers and Yukon Gold Potatoes image

2 pounds Alaskan halibut fillet
Salt and freshly ground black pepper
2 tablespoons olive oil
2 tablespoons butter
5 sprigs fresh thyme
2 garlic cloves
1 tablespoon butter
1 cup fish fume
1 cup cooked diced Yukon gold potato
1 bulb fennel, small dice, cooked soft
1 heirloom tomato, small dice (recommended: Brandywine)
1-ounce nicoise olives
1 sprig basil, leaves chopped
Salt and freshly ground black pepper
Dash sherry vinegar
5 red peppers, roasted, peeled and diced
1 tablespoon parsley oil
3 scallions, julienne

Steps:

  • Halibut: Season the halibut with salt and pepper. In a medium saute pan over high heat add the oil. Once heated, add the fish and sear until golden brown. Add butter, thyme, and garlic and baste. Set aside.
  • Ragout: In a small saucepot combine the butter, fish fume, diced potatoes and simmer over medium heat. Add fennel, tomatoes, olives and basil. Season with salt and pepper, to taste, and add a dash of sherry vinegar. Add the roasted peppers and gently warm. Adjust seasoning, if necessary.
  • To Plate: In a large bowl place the olive ragout and garnish with the roasted peppers and parsley oil. Place the halibut on top and finish with the scallion.

BRAISED FENNEL AND RICE



Braised Fennel and Rice image

Number Of Ingredients 13

3/4 cup long-grain rice
8 ounces whole onion or 7 ounces ready-cut onion (1 2/3 cups)
1 teaspoon olive oil
1 large clove garlic
1 pound fennel
1/4 cup no-salt-added vegetable broth
3/4 cup dry white wine
1/4 cup no-salt-added tomato sauce
1/4 teaspoon hot-pepper flakes
1 teaspoon fennel seed
1/2 teaspoon ground coriander
1/2 teaspoon salt
Freshly ground black pepper to taste

Steps:

  • Combine rice and 1 1/2 cups water. Bring to a boil, reduce heat, cover and cook for 17 minutes.
  • Chop whole onion.
  • Heat oil in nonstick skillet until it is very hot. Add onion, and saute over medium heat until onion begins to soften and brown.
  • Meanwhile, mince garlic, and add to onion as it cooks.
  • Trim fennel and slice very thin. There should be about 4 cups.
  • When onion begins to dry out, stir in 1 tablespoon of the vegetable stock.
  • Add fennel, remaining vegetable broth, wine, tomato sauce, hot pepper flakes, fennel seed and coriander. Cover, reduce heat and simmer until fennel is tender, about 7 minutes.
  • As soon as rice is cooked, stir into fennel mixture and continue cooking.
  • When fennel is cooked, season with salt and pepper.

This is a simple Greek recipe, traditionally served at Lent, that works as a main or side dish. it calls for rice but can also be made with bulgur for a nuttier, heartier flavor.

1/4 cup extra virgin olive oil
1 medium onion, chopped
2 garlic cloves, minced
1 pound fennel (2 medium bulbs), trimmed, cored and diced small
Salt to taste
1 cup long grain rice, such as basmati, rinsed, or coarse bulgur
2 1/2 cups water
1/4 cup chopped fresh parsley
1/4 cup chopped fresh dill
Freshly ground pepper

Steps:

  • Heat 3 tablespoons olive oil over medium heat in a deep, lidded skillet or a wide, lidded saucepan. Add onion and cook, stirring often, until tender, about 5 minutes. Add garlic and stir until fragrant, about 30 seconds. Stir in fennel, add a generous pinch of salt, and cook, stirring often, until fennel has wilted and softened, about 8 minutes. Stir in rice or bulgur and stir to coat with olive oil.
  • Add water, salt, pepper, parsley and dill and bring to a boil. Reduce heat to low, cover and simmer 20 to 30 minutes, until rice or bulgur is soft and liquid absorbed. Remove from heat, uncover and place a towel across the top of the pan. Return lid and let sit for 10 minutes. Serve hot, with the remaining olive oil drizzled over the top.

3/4 cup long grain rice
1 1/2 cups water
1 teaspoon fennel seed
8 ounces whole red onion or 7 ounces chopped, ready-cut red onion (1 2/3 cups)
1 teaspoon olive oil
1 pound fennel to yield 1 cup chopped fennel
10 small oil-cured black olives
1/8 teaspoon salt
Freshly ground black pepper to taste

Steps:

  • Combine rice, water and fennel seed, and bring to boil; reduce heat, cover and simmer, cooking a total of 17 minutes, until the rice is tender and the liquid has been absorbed.
  • Chop whole onion.
  • Heat a medium nonstick skillet until it is very hot, reduce the heat to medium high, add oil and saute onion until it softens and browns.
  • Meanwhile, trim stalks from fennel, remove tough outer layer from bulb and cut fennel into julienne strips. Add to onion as it browns, and continue cooking.
  • Pit the olives; then, add to the onion and fennel and continue cooking until the rice is done.
  • Stir the rice into the onion and fennel, season with salt and pepper and serve.
