CHICKEN MARINADE

1/2 cup lemon juice
2 tablespoon Dijon mustard
Kosher salt and freshly ground black pepper
1 cup good olive oil
2 chicken breasts, bone-in and skin-on

Steps:

  • In a small bowl, whisk together the lemon juice, mustard, 1 teaspoon salt and 1/2 teaspoon pepper. While whisking, slowly add the olive oil until the vinaigrette is emulsified. Set aside.
  • Place the chicken breasts in a baking dish large enough to hold them in a single layer and sprinkle generously with salt and pepper on both sides. Pour half the marinade over the chicken, reserving the other half to use later. Allow the chicken to marinade for at least two hours in the refrigerator.
  • Preheat the oven to 350 degrees F.
  • Roast the chicken for 35 to 40 minutes, or until cooked through. Remove the chicken from the oven and pour the remaining marinade over the top of the chicken. Cover the dish with aluminium foil and allow to rest for 10 minutes.

I was bored one day, and standing in front of the spice cupboard knowing I had defrosted chicken breasts. This actually came out much better than expected. Measurements are pretty close, but I wasn't really measuring when I made it. Prep time includes marinating time.

1 1/2 tablespoons Worcestershire sauce
2 tablespoons low-sodium teriyaki sauce
1/2 teaspoon garlic powder
1/2 teaspoon onion powder
1/4 teaspoon dry mustard
2 boneless skinless chicken breast halves

Steps:

  • Combine all ingredients in a zip-top plastic bag, mix well.
  • Marinate in refrigerator three hours, turning occasionally.
  • Preheat broiler; spray shallow pan with cooking spray.
  • Place chicken breasts in pan, drizzle half of marinade over top.
  • Broil for 8 minutes.
  • Turn chicken breasts over, drizzle rest of marinade over top.
  • Broil an additional 8 minutes.
  • If chicken is not done, turn again and broil 2 minutes on each side.

1/4 cup Dijon mustard
2 tablespoons lemon juice
1-1/2 teaspoons Worcestershire sauce
1/2 teaspoon dried tarragon
1/4 teaspoon pepper
4 boneless skinless chicken breast halves (4 ounces each)

Steps:

  • In a shallow dish, combine the first five ingredients; add chicken and turn to coat. Marinate at room temperature for 15 minutes or refrigerate up to 4 hours. , Drain and discard marinade. Grill, uncovered, over medium heat, for 8-12 minutes, turning once, or until a thermometer reads 170°.
