SPINACH CHEESE SQUARES
This recipe is a favorite at every Christmas party. Note: This recipe freezes well. To serve, defrost and reheat at 325 degrees F (165 degrees C) for 12 to 15 minutes.

Steps:
- Preheat oven to 350 degrees F (175 degrees C).
- Place butter or margarine in a 9x13 inch baking dish and melt butter in oven. Remove when melted, approximately 3 minutes.
- In large mixing bowl, beat eggs well. Mix in flour, milk and baking powder. When the dough is well combined, mix in cheese, spinach, and onion. Spoon mixture into the baking dish with melted butter.
- Bake for 35 minutes. Let cool 45 minutes then cut into bite-size squares.

Steps:
- Preheat oven to 300 degrees F (150 degrees C). Line bottom and sides of an 8-inch square baking pan with parchment paper; crease corners well.
- Whisk together 1 cup flour and 2 tablespoons confectioners' sugar; cut in 1/2 cup butter until mixture resembles fine crumbs. Pat mixture evenly into prepared pan.
- Bake in the preheated oven for 20 minutes; remove to cool on a wire rack, about 15 minutes. Top base evenly with raspberry jam.
- Preheat oven to 375 degrees F (190 degrees C).
- Beat white sugar and 1/2 cup butter together until fluffy; beat in eggs until fluffy and pale yellow. Beat rice flour into egg mixture until well combined; stir in food coloring until batter reaches desired shade of red. Spread batter evenly over jam layer.
- Bake in the preheated oven until a toothpick inserted into the center comes out clean, about 30 minutes. Cool completely in the pan; about 20 minutes.
- Beat 2 cups confectioners' sugar and 1/3 cup butter together in a bowl with an electric mixer until smooth; stir in milk and maple extract. Spread icing evenly over cooled bars.
- Hold edges of parchment paper; lift squares out of pan to a cutting board. Slice into 1-inch squares with a very sharp knife.

This was a recipe my mother used to make when I was growing up. We always knew it was a special occasion when these were on the menu. I make them often for my family. We all love them!

Steps:
- Cream together margarine or butter and sugar.
- Beat in egg yolks.
- Stir in milk and vanilla.
- Sift together dry ingredients and beat in, mixing well, until smooth.
- Grease and flour an 8 x 8" square pan.
- Spread batter in prepared pan.
- Bake at 350°F for 20 minutes until top springs back when gently touched.
- Spread hot cake with raspberry preserves.
- Beat 3 egg whites stiff with 1/2 cup sugar.
- Spread on top of preserves.
- Sprinkle with coconut.
- Return to oven and bake until golden.
- Cool, cut into squares to serve.
