- In a large skillet, cook the sausage, beef, onion, celery and garlic in oil over medium heat until meat is no longer pink; drain. In a 4-qt. slow cooker, combine the diced tomatoes, tomato soup, mushrooms, tomato sauce, tomato paste, sugar and seasonings. Stir in sausage mixture., Cover and cook on low for 6-8 hours or until flavors are blended. Serve with spaghetti.

Steps:
- Brown beef with diced onion and drain.
- In separate sauce pan mix all other ingredients over medium high heat. Bring to boil.
- Reduce heat add beef and onions. Let simmer. The longer the sauce simmers the better it taste. (We usually simmer for 3-5 hours).
- I almost always end up adding more spices while it cooks to get it just right, so the measurements above are a starting point.

MY FAVORITE SPAGHETTI SAUCE WITH MEAT
This recipe for spaghetti sauce is my favorite as it's so easy and tastes so good! I use wine in it instead of water and it gives it a knock-your-socks-off flavor! Good served with french bread and/or specialty breads like Asiago Cheese and Olive bread.

- 1. In a large skilled place the ground beef and onions. Top with 2 tablespoons of Emeril's Original Seasong and salt and pepper to taste. Turn the stove to medium heat and brown the ground beef and onions. Once brown, add the package of Lawry's Spaghetti Sauce mix, the water or wine, can of tomato sauce, and the cans of diced tomatoes. Heat through, stirring constantly. Serve over spaghetti.
MY FAVORITE 'DOCTORED' JAR SPAGHETTI SAUCE
I sometimes use jarred, store-bought spaghetti sauce but just have to make it 'mine'. My favorite is the Gia Russa Brand Traditional Sauce but others will work. This is what I do.....................................

- Saute the garlic in 1 tablespoon of olive oil until aromatic but not browned. Add the butter to melt, then the sauce, basil and spices. Heat thoroughly for about 10 minutes. At this point you can add frozen store bought meatballs and heat till warmed throughtout. Serve over your favorite pasta.
- I prefer Trader Joe's Turkey Meatballs but any brand will do.

DON'S FAVORITE SPAGHETTI SAUCE
This is my husband's favorite spaghetti sauce that he requests frequently. I looked through 17 pages of spaghetti sauce on Zaar and never found one quite like it. It's very simple, tasty and freezes well. We like to add garlic, mushrooms, green bell peppers, basil and Italian sausage to this whenever I have them on hand. Although this is ready in about an hour, I usually let it simmer longer to meld the flavors.

Description from Laurie: I've been using this recipe for 17 years. A friend of mine was a nurse's aide at a nursing home, and was given this recipe by a sweet old Italian lady there--so what a surprise, since this recipe calls for all powdered spices. Besides this recipe making really delicious sauce, it is consistently good because everything is measured. I also measure the spices into a baggie and take it on vacation to make for dinner at the rental. I make the sauce nearly every week because it is a family favorite and the price is right (the sauce costs .88 per can and the paste is .33 a can, and all my spices are the cheapie brand. Sometimes I double it and freeze some --- but the armona is so enticing that it makes it worth it to cook it up fresh.

- Add all ingredients, except soda in a large crock-pot.
- Cook on low for 6-8 hours, stirring occasionally.
- Add soda (to reduce tomato acid) and 1/2 cup of cheese. Stir.

KIDS' FAVORITE SPAGHETTI SAUCE
No added sugar here. This isn't a sweet sauce, but a very hearty sauce. I found this in Valentine Treats book. My family liked this sauce and I liked the fact I was getting veggies into our diets. When I made this sauce I used ground chicken/turkey sausage, I used fine chopped petite baby carrots, I was out of tomato juice so I used tomato sauce, and I substituted water for the red table wine.

- In a skillet, over medium heat, brown the ground beef and sausage. (You won't need any additional fat; the sausage will provide enough). Use a wooden spoon to crumble and mix the meats.
- Meanwhile, in a dutch oven over medium heat, add the oil and onion and saute until onion is limp, about 5 minutes. Add the garlic, celery, and carrots and continue to saute for 3 minutes. Stir in the oregano, basil, celery salt, red pepper flakes, and paprika and continue to saute for 2 minutes.
- Using a slotted spoon, transfer the browned meat into the dutch oven. Stir in the tomato sauce, juice, and paste; wine; and water. Bring the mixture to a boil. Turn the heat to low and continue to simmer, uncovered, for 30 minutes. Turn off the heat, cover, and let the sauce cool to room temperature. If desired, use a hand blender to pulse the sauce several times for a smoother consistency. Reheat and serve over your favorite pasta. Refrigerate for up to 3 days, or freeze for up to 4 months.

FAVORITE SPAGHETTI SAUCE
This is the sauce I've made for years. We don't like loose hamburger, but instead like meatballs and Italian Sausage.

Steps:
- 1. Mix all meatball ingredients, moisten with small handful of water and then roll into medium sized balls and fry until almost done. Remove from pan.
- 2. Fry sausage pieces and garlic cloves until nicely browned. Remove from pan.
- 3. Cook tomato paste in the pan used for browning meats for a couple of minutes.
- 4. Empty tomatoes into a saucepan (I like a smooth sauce, so I blend them in a blender first). Otherwise, break up tomatoes with a spoon. Bring to a soft boil, turn down to a simmer and add the tomato paste to the simmering tomatoes.
- 5. Add the sausages, garlic cloves, meatballs and season all with a couple pinches of basil leaves and salt and pepper to taste.
- 6. Simmer for 2 hours partially covered and stir once in awhile.
- 7. Be careful when stirring not to break up the meatballs.
