Everyone's Favorite Spinach Salad with Poppy Seed Dressing image

This recipe quickly becomes the favorite of pretty much everyone that tries it. It's so tasty, it's easy to make, and the ingredients are interchangeable! You can use the dressing immediately or make it in advance and store in refrigerator up to a couple of days. I have substituted pears and mandarin oranges for the strawberries and feta instead of blue cheese. Be creative! YUM!

¼ cup white vinegar
½ cup vegetable oil
⅓ cup white sugar
1 tablespoon poppy seeds
2 teaspoons finely minced onion
½ teaspoon Worcestershire sauce
¼ teaspoon paprika
1 (10 ounce) bag baby spinach
1 cup sliced fresh strawberries, or as needed
1 (4 ounce) package crumbled blue cheese, or as needed
½ cup roasted pecan halves, or as needed

Steps:

  • Whisk vinegar, vegetable oil, sugar, poppy seeds, onion, Worcestershire sauce, and paprika together in a bowl until sugar is completely dissolved.
  • Layer spinach, strawberries, blue cheese, and pecans in individual bowls; drizzle dressing generously over each salad.

Family Favorite Salad with Homemade Ranch Dressing and Croutons image

1 head butter lettuce, washed, spun dry and torn or cut into bite-size pieces
1/2 head red leaf lettuce, washed, spun dry and torn or cut into bite-size pieces
3/4 cup Ranch Dressing, recipe follows
1 cup Croutons, recipe follows
1 pint cherry or grape tomatoes, cut in 1/2
2 ripe avocados, halved, pitted and flesh diced
2 pieces bacon, cooked until crisp and crumbled
1/3 cup sour cream
1/2 cup mayonnaise
1 cup buttermilk
3 tablespoons freshly chopped chives
2 tablespoons freshly chopped Italian parsley leaves
1/2 teaspoon dried dill
1 teaspoon salt, divided
1 teaspoon freshly cracked black pepper
1 tablespoon white vinegar
1 tablespoon garlic paste, (use half of the salt and 5 cloves garlic smashed with the flat side of a knife, to make paste)
1/2 teaspoon salt, plus more for sprinkling
1 teaspoon freshly cracked black pepper
1/4 teaspoon cayenne
1/2 teaspoon paprika
2 teaspoons dried parsley
1 teaspoon dried basil
2 teaspoons garlic paste, (2 cloves garlic smashed with the flat side of a knife and a sprinkle of salt, to make paste)
1/3 cup extra-virgin olive oil
4 cups cubed stale Italian bread, cut into 3/4-inch cubes

Steps:

  • In a chilled salad bowl, add the greens and lightly coat the inside of the bowl with Ranch Dressing. Add the Croutons and toss lightly. Garnish with the tomatoes, avocado and bacon, serve immediately.
  • In a medium bowl, combine the ingredients and blend well with fork or stick blender. Cover and refrigerate for at least 1 hour before serving.
  • Preheat the oven to 325 degrees F.
  • In a large bowl, combine all the ingredients, except the bread, until well combined. Adjust the seasoning, if needed. Add in the bread and mix well with your hands, tossing to coat all sides of cubes. Pour out onto a baking sheet and spread evenly. Bake in the oven for 20 to 30 minutes, turning after 10 minutes. Remove from the oven and let cool. Store in an airtight container.

This is a great flavorful dressing made right in the blender. It makes a fair amount so you can cut the recipe in 1/2, but I make the whole recipe and then refrigerate for later in the week. I often have a small salad for lunch and this is perfect with it. I love to serve this with Recipe #413909.

3/4 cup vegetable oil
1/4 cup Dijon mustard
1/4 cup sour cream
1/4 cup red wine vinegar
1/8 teaspoon Worcestershire sauce
1 teaspoon minced garlic
1 teaspoon sugar
1 pinch dill
salt
pepper

Steps:

  • Simply add the mustard, sour cream, vinegar, worcestershire, garlic, sugar into a blender or small food processor and blend until smooth and creamy, just a minute or so. Then slowly add in the oil with the blender on low. Last, add the dill in the last few seconds, pulse to combine and check for salt and pepper seasoning.
  • Refrigerate and serve over your favorite salad. I like to serve this over Recipe #413909.

From Dr. Andrew Weil's book, 8 Weeks to Optimum Health. His note: "Seasoned rice wine vinegar can be bought in a Japanese grocery store or the Asian foods section of a supermarket; it is seasoned with sugar and salt. Avoid brands that contain MSG (monosodium glutamate). You can also buy plain rice wine vinegar and season it yourself with sugar or honey and salt to taste." His recipe did not provide an exact measurement for the seasoned rice wine vinegar, just instructions as I've paraphrased in the directions below. He also notes that he uses the dark-roasted sesame oil sparingly because its flavor is so intense that a little goes a long way.

I don't remember the source for this recipe but I think it was a cowboy recipe book. Cooking time is the time to set aside to develop flavors. It is really great over a spinach salad w/ sliced mushrooms and crumbled bacon. My DH's favorite dressing for green salads w/ any combo of veggies that I have on hand-hope it becomes a favorite of yours. Enjoy!!!

1/2 cup vinegar (I usually use red wine vinegar but have tried all kinds)
2 tablespoons oil (something light like canola or evoo)
1 tablespoon chopped green onion
1 tablespoon chopped parsley
1 tablespoon chives
1 teaspoon Worcestershire sauce
1 teaspoon prepared mustard (I love to use Country Dijon, too)
cracked black pepper
