Favorite Mango Bread image

Mango season in Hawaii this was my favorite mango bread recipe and I used the Queen of mangoes called Hayden mangoes.

Number Of Ingredients 10

2 c flour
1 1/2 c sugar
1 tsp cinnamon
1/2 tsp salt
2 tsp baking soda
3 medium slightly beaten eggs
1 c canola oil
2 c coarsely chopped mangoes
1/4 c coarsely chopped nuts
1 tsp vanilla extract

Steps:

  • 1. sift together: 2 c flour 1 1/2 c sugar 1 t cinnamon 1/2 t salt 2 t baking soda
  • 2. Add: 3 slightly beaten eggs 1 c canola oil 2 c coarsely chopped mangoes 1/4 c coarsely chopped nuts 1 t vanilla Fill bread pans 2/3 full. Bake at 350* 50-55 minutes.

MANGO NUT BREAD

We live on the slopes of Haleakala, where carrots, potatoes, cabbage, bananas, litchis and mangoes are grown. This is my favorite recipe using mangoes.

Yield 2 loaves.

Number Of Ingredients 11

2 cups all-purpose flour
1-1/2 cups sugar
1 teaspoon baking soda
1/2 teaspoon salt
1/2 teaspoon ground cinnamon
3 eggs
1/2 cup vegetable oil
1 teaspoon vanilla extract
2 cups chopped mangoes
1/2 cup chopped dates
1/2 cup chopped walnuts or macadamia nuts

Steps:

  • Preheat oven to 350°. In a large bowl, combine the first five ingredients. In another bowl, beat eggs, oil and vanilla. Stir into dry ingredients just until moistened. Fold in mangoes, dates and nuts (batter will be stiff). , Spoon into two greased 8x4-in. loaf pans. Bake for 50-55 minutes or until a toothpick inserted in the center comes out clean. Cool for 10 minutes before removing from pans to wire racks.

I make lots of these during mango season and give away to friends and family. It's great for breakfast or afternoon snack! Sometimes I even stick it in the toaster for a different texture.

2 cups all-purpose flour
2 teaspoons ground cinnamon
2 teaspoons baking soda
1/2 teaspoon salt
1 cup granulated sugar, can substitute 1/4 cup for dark brown sugar (better crust)
2 large eggs
3/4 cup vegetable oil
2 1/2 cups mangoes, peeled and chopped
1 teaspoon lemon juice
1/4 cup raisins

Steps:

  • Preheat oven to 350 degrees.
  • Combine all of the dry ingredients.
  • Beat eggs with oil and add to flour mixture.
  • Add mangos, lemon juice and raisins.
  • Mix well.
  • Pour into 2 greased 8x4 loaf pans.
  • Bake for about 1 hour or until toothpick comes out clean.

2 cups all-purpose flour
2 teaspoons baking soda
2 teaspoons ground cinnamon
½ teaspoon salt
3 eggs
¾ cup softened butter
1 ¼ cups white sugar
1 teaspoon vanilla extract
2 cups chopped mango
½ cup shredded coconut
¼ cup chopped walnuts

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Grease and flour 2 loaf pans.
  • Sift flour, baking soda, cinnamon, and salt together in a large bowl; make a well in the center.
  • Whisk eggs, butter, sugar, and vanilla extract together in a separate bowl. Fold mango, coconut, and walnuts into the egg mixture; pour resulting mixture into the well in the center of the flour and mix well. Pour batter into prepared loaf pans and let sit at room temperature for 20 minutes.
  • Bake in the preheated oven until a toothpick inserted into the center comes out clean, about 1 hour. Cool in the pans for 10 minutes before removing to cool completely on a wire rack.

4 cups all-purpose flour
2-1/2 cups sugar
4 teaspoons ground cinnamon
3 teaspoons baking soda
1 teaspoon salt
6 large eggs, room temperature
1-1/2 cups canola oil
2 teaspoons vanilla extract
4 cups chopped peeled mango
1 cup chopped walnuts, optional
1 cup raisins, optional

Steps:

  • Preheat oven to 325°. In a large bowl, whisk flour, sugar, cinnamon, baking soda and salt. In another bowl, whisk eggs, oil and vanilla until blended. Add to flour mixture; stir just until moistened. Fold in mangoes and if desired, walnuts and raisins. , Transfer to a greased 13x9-in. baking dish lined with parchment. Bake until a toothpick comes out clean, 1-1/4 to 1-1/2 hours Cool completely in dish on a wire rack.

2 cups all-purpose flour
2 teaspoons baking soda
1 teaspoon baking powder
2 teaspoons cinnamon
3 eggs, well beaten
3/4 cup canola oil
1 1/2 cups granulated sugar
2 cups peeled and diced fresh mango
1/2 cup raisins
1/2 cup macadamia nuts, chopped
1/2 cup grated coconut

Steps:

  • Preheat oven to 350°F.
  • Grease and flour two 9x5 inch loaf pans.
  • Sift the flour, baking soda, baking powder and cinnamon into a small bowl.
  • In a large mixing bowl, combine eggs, oil and sugar and mix with dry ingredients until well blended.
  • Fold in mango, raisins, nuts and coconut.
  • Pour into loaf pans and bake 45 to 50 minutes or until a toothpick inserted in the center comes out clean.
  • Let cool 10 to 15 minutes, unmold and let completely cool on baking racks.

I found this recipe on the alohaworld website (http://alohaworld.com/ono) and just adore it! I'm always looking for a good banana bread recipe and this one fits the bill! It's moist and has a nice crisp, almost caramelized crust. Now if I could just figure out how to keep the crust during storage!

2 cups flour
2 teaspoons baking soda
1 teaspoon baking powder
2 teaspoons cinnamon
1/2 teaspoon salt
3/4-1 cup sugar
1/2 cup canola oil
1/4 cup butter or 1/4 cup margarine, melted
1/4 cup nuts, chopped (optional)
1 teaspoon vanilla
2 cups ripe mangoes, chopped coarsley
1 overripe banana, chopped
3 eggs, beaten
1/2 cup raisins (optional)
1/2 cup shredded coconut (optional)

Steps:

  • Combine dry ingredients in a large bowl. Make a well in the middle and add other ingrediendt. Mix thoroughly. Pour into a greased loaf pan and let stand for 20 minutes. Bake at 350 for 45 minutes to an hour or until nicely browned and the "skewer test" comes out clean or with just a few crumbs.
