salt
1 lb bucatini, thick spaghetti or your favorite pasta
6 to 8 cloves garlic
4 tbsp unsalted butter
1 tsp garlic salt
2 tbsp oyster sauce or vegetarian oyster sauce
4 to 6 oz grated parmigiano

Steps:

  • Boil a large pot of water to cook 1 lb (a box) of pasta. Add generous amount of salt into boiling water and add the pasta. Cook the pasta by following the directions of the package.
  • Meanwhile, chop garlic. It should be around 2 tbsp.
  • In a large skillet add butter, chopped garlic and garlic salt. Turn the heat over medium heat and sauté garlic with butter for 2 to 3 minutes or until garlic edges are slightly turning into light brown color.
  • Reduce heat to low and add oyster sauce and cook the oyster sauce for 1 to 2 minutes.
  • Add the cooked pasta and top of the hot pasta, add cheese directly, so the cheese will stick to the pasta. Toss everything together and it's ready to serve!
  • It can be serve by it self or serve with your favorite steak (my teriyaki steak will be amazing with this garlic noodles!), lemongrass chicken/pork, deviled shrimp, garlic shrimp, baked salmon.. it's endless! Enjoy!

These deceivingly simple, yet devastatingly delicious garlic noodles were invented back in the '70s at a restaurant in San Francisco called Thanh Long. Usually served with roasted Dungeness crab, the recipe is a very closely guarded family secret, but after lots of investigation, and even more experimentation, I think this is very close.

2 tablespoons soy sauce
1 tablespoon oyster sauce
2 teaspoons Worcestershire sauce
2 teaspoons fish sauce
¼ teaspoon sesame oil
1 pinch cayenne pepper
8 cloves garlic, minced
4 tablespoons unsalted butter
¼ cup finely grated Parmigiano-Reggiano cheese
1 tablespoon chopped green onion, or to taste
6 ounces spaghetti
1 pinch red pepper flakes

Steps:

  • Stir soy sauce, oyster sauce, Worcestershire sauce, fish sauce, sesame oil, and cayenne pepper together in a small bowl for the secret sauce.
  • Place secret sauce near the stove. Place garlic, butter, Parmesan cheese, and green onion in individual bowls within easy reach.
  • Melt butter in a skillet over medium heat. Add garlic; cook and stir just until fragrant, about 1 minute. Quickly stir in the secret sauce and turn off the heat.
  • Bring a large pot of lightly salted water to a boil. Cook spaghetti in the boiling water, stirring occasionally, until tender yet slightly firm to the bite, about 12 minutes.
  • Transfer spaghetti into the sauce using tongs, bringing some of the cooking water with it. Toss until well coated and stir in Parmesan cheese. Splash in more pasta water if noodles are too dry.
  • Plate noodles. Garnish with red pepper flakes and green onions.
