1 head cauliflower
1 (8 ounce) package cream cheese
salt and pepper (optional)

Steps:

  • Steam the head of cauliflower until soft.
  • Mash cauliflower and softened cream cheese together or puree in a blender/ food processor if you want it smooth. (We prefer it chunky).
  • Adjust to your own taste, or desire for fat intake, or desired creaminess.
  • Add salt and pepper if desired.
  • Can be prepared with low fat cream cheese as well.

Ok, on Low Carb diets we use cauliflower as a substitute for potatoes. This particular recipe is a re-write of my Garlic mashed potato recipe. I just removed the exact same amount of potato and replaced it with the same exact amount of frozen cauliflower. Not only did I find THIS recipe much easier than using real potatoes, it tastes 10 times better and is LOADED with Vitamins! I'm forever giving this recipe out. I WILL be posting a recipe for "Low Carb, Low Fat Shepherd's Pie" soon, and I always use THIS recipe for the "Mash" potatoes you cover the Shepherd's pie with. I ask that you all please make THIS recipe for mashed potato when making my Low-carb recipe for Shepard's Pie for maximum benefits. This makes 12 SMALL servings or 6 larger ones (or 1 gluttony) Thank you!

2 lbs frozen cauliflower (2 one pound bags, you can even mix it up a bit for fun and get 1 bag just cauliflower and the other )
1 head garlic
1 tablespoon olive oil
1 (14 ounce) box of classic Philadelphia Cream Cheese (you can use 1/2 as much if you want to cut back on fat, but it will impact the recipe)
1/4 cup sour cream
4 tablespoons butter
milk or cream, if needed
salt
white pepper
chives (fresh or dried)
onion powder
garlic powder (totally optional, this is for garlic-holics)

Steps:

  • Steam the frozen cauliflower (all 2 pounds of it) until it's ready.
  • Separate head of garlic into individual cloves.
  • Toss in olive oil and wrap tightly in small piece of aluminum foil.
  • Bake in 350°F (180°C) oven for 45 minutes.
  • When the garlic has cooled to the touch you should be able to squeeze it out of the 'paper' shell of the individual cloves.
  • Mash the roasted garlic with a fork.
  • .
  • Place the cooked cauliflower into a food processor/Cuisinart along with the garlic, sour cream, cream cheese, butter, and salt and white pepper in a mixer bowl, and whip at medium speed until smooth and all the spices are blended.
  • OPTIONAL: Add cream or milk to adjust consistency. Note: If you are going to be using this as a topping for the Shepherd's Pie, you will want to keep it thick. If it's a side dish and you want it a bit thinner - go for it.

I lost 70 lbs on a low-carb diet and really missed having mashed potatoes. This is a great substitute (especially if you like cauliflower) since it when mashed it is the same consistency as mashed potatoes.

1 head cauliflower, cut into florets
4 quarts water
4 tablespoons butter
8 ounces sour cream
salt
1 clove garlic, mashed (optional)

Steps:

  • In a large cooking pot add cauliflower and water.
  • Cook on medium high until cauliflower is soft (about 15 minutes).
  • Drain cauliflower.
  • In a large bowl add cauliflower, butter, sour cream, garlic (optional), salt and pepper.
  • Mash with a potato masher or use a hand mixer on low speed until creamy.

Another variation on a cauliflower for potatoes recipe. We really like the flavor of the cream cheese and touch of garlic. You can also use this instead of mashed potatoes for Shepherd's Pie - it's really good this way!

  • Chop cauliflower and steam with garlic until very soft.
  • Discard garlic clove.

1 medium head cauliflower
1 tablespoon cream cheese, softened
1/4 cup grated parmesan cheese
1/2 teaspoon minced garlic
1/8 teaspoon straight chicken base (may substitute 1/2 teaspoon salt) or 1/8 teaspoon bouillon (may substitute 1/2 teaspoon salt)
1/8 teaspoon fresh ground black pepper
1/2 teaspoon chopped chives (to garnish)
3 tablespoons unsalted butter

Steps:

  • Set a stockpot of water to boil over high heat.
  • Clean and cut cauliflower into small pieces. Cook in boiling water for about 6 minutes, or until well done. Drain well; do not let cool and pat cooked cauliflower very dry between several layers of paper towels.
  • In a bowl with an immersion blender, or in a food processor, puree the hot cauliflower with the cream cheese, Parmesan, garlic, chicken base, and pepper until almost smooth.
  • Garnish with chives, and serve hot with pats of butter.
  • Hint: Try roasting the garlic and adding a little fresh rosemary for a whole new taste.
