My kids don't like nuts, but love the inside of a pecan pie. I found this receipt in Southern Food and it has become a big hit with everyone. I now make a REAL pecan pie and a MOCK one.

2 eggs
2/3 c margarine/butter, melted
2/3 c granulated sugar
2/3 c light corn syrup
2/3 c regular rolled oats
1/4 tsp salt
1 tsp vanilla extract
1 unbaked 9-inch pie crust (i use a deep dish, forzen pie crust)

Steps:

  • 1. Combine the eggs, margarine, sugar, corn syrup, oats, salt and vanilla in a bowl. Mix well.
  • 2. Pour into unbaked pie crust and bake for 1 hour at 350. You may want to put the pie on a cookie sheet to catch any over flow

2/3 cup corn syrup
2 eggs
2/3 cup sugar
1 teaspoon vanilla
1/4 teaspoon salt
2/3 cup margarine, melted

Steps:

  • In a mixing bowl, lightly beat the eggs.
  • Add all ingredients and mix well.
  • Pour into unbaked pie crust.
  • Bake at 350 for 55 minutes.
  • Lay a square of foil on top of the pie if it starts to get too brown.
  • Let cool before serving.

1 (9-inch) refrigerated pie crust, unbaked (I used Pillsbury)
3 large eggs
1 cup light corn syrup (or dark if your preference, or half and half)
1 teaspoon pure maple syrup or vanilla extract
1 cup sugar
2 tablespoons unsalted butter
Scant 1/2 teaspoon salt
2 1/2 cups Rice Krispies cereal

Steps:

  • Unroll pie crust onto waxed paper on the counter; sprinkle lightly with flour and smooth out with your hand. Place another piece of waxed paper on the top of the crust; carefully flip over and sprinkle other side with flour and smooth it out. Fit crust in pie plate and crimp edges as desired. Set aside. Melt butter then set aside to cool slightly. Preheat oven to 340 degrees F. In a mixing bowl, lightly whisk the eggs; whisk in the corn syrup and maple syrup or vanilla. Whisk in the sugar, melted butter, and salt. Gently fold in the cereal. Pour into pie crust. Bake for 55-60 minutes, or until center is set when pie pan is lightly shaken. (After the first 30 minutes of bake time, cover the edges of crust with strips of aluminum foil if over-browning). Cool completely on a wire cooling rack. Serve with whipped cream or whipped topping. Cover and refrigerate leftovers, just let set out for 10 minutes before serving time.

1 cup corn syrup
1/2 cup granulated sugar
2 tablespoons melted butter or 2 tablespoons margarine
1 teaspoon vanilla
1/4 teaspoon salt
3/4 cup quick-cooking oats (not instant)
1 9 inch pie shell, unbaked

Steps:

  • Preheat oven to 350 degrees F.
  • In medium bowl, with fork, beat eggs lightly.
  • Beat in corn syrup, sugar, butter or margarine, vanilla and salt until blended.
  • Stir in oats.
  • Pour into pie shell.
  • Bake 45 to 55 minutes or until puffed.
  • The centre should be slightly jiggly.
  • Cool.
