ROASTED GARLIC MASHED FAUX POTATOES - LOW CARB!!!
Ok, on Low Carb diets we use cauliflower as a substitute for potatoes. This particular recipe is a re-write of my Garlic mashed potato recipe. I just removed the exact same amount of potato and replaced it with the same exact amount of frozen cauliflower. Not only did I find THIS recipe much easier than using real potatoes, it tastes 10 times better and is LOADED with Vitamins! I'm forever giving this recipe out. I WILL be posting a recipe for "Low Carb, Low Fat Shepherd's Pie" soon, and I always use THIS recipe for the "Mash" potatoes you cover the Shepherd's pie with. I ask that you all please make THIS recipe for mashed potato when making my Low-carb recipe for Shepard's Pie for maximum benefits. Steps:
- Steam the frozen cauliflower (all 2 pounds of it) until it's ready.
- Separate head of garlic into individual cloves.
- Toss in olive oil and wrap tightly in small piece of aluminum foil.
- Bake in 350°F (180°C) oven for 45 minutes.
- When the garlic has cooled to the touch you should be able to squeeze it out of the 'paper' shell of the individual cloves.
- Mash the roasted garlic with a fork.
- .
- Place the cooked cauliflower into a food processor/Cuisinart along with the garlic, sour cream, cream cheese, butter, and salt and white pepper in a mixer bowl, and whip at medium speed until smooth and all the spices are blended.
- OPTIONAL: Add cream or milk to adjust consistency. Note: If you are going to be using this as a topping for the Shepherd's Pie, you will want to keep it thick. If it's a side dish and you want it a bit thinner - go for it.

LOW CARB FAUX MASHED POTATOES
I think one of the hardest things for us low carb folks is giving up potatoes and rice. I working on a low carb recipe for the rice but I think this "mashed potato" recipe is good. So good, that I have fooled several carbaholics with them!

Steps:
- 1. If using fresh cauliflower, separate the flowerets. Cut larger pieces to about the size of the smaller pieces. This is very important. You want all the pieces to cook evenly. Steam the pieces until they are soft but not mushy about 8-10 minutes. The microwave works great for this. But check the cauliflower for doneness at 5 minute intervals if you use the micro wave. Overcooked cauliflower has a strong cabbage like flavor and the dish won't taste like mashed potatoes.
- 2. Transfer the cooked cauliflower to a food processor. Add cream cheese and butter. Process until smooth. You may have to add a bit of milk but generally the cauliflower has enough moisture. If you add too much liquid the cauliflower will be thin and runny.
- 3. Add salt and pepper to taste.. Season salt like Lawry's is great for this dish. If the cauliflower has a strong flavor you may need to add more cream cheese. The cream cheese seems to smooth out the flavor and give you that "potato" taste.
- 4. These are great served with a low carb gravy. I made a Shepherd's Pie using these "potatoes". It was sooooo good! I've put them in small oven proof dishes dotted with butter and browned them in the oven. Then I add cheese bacon bits and sour cream to make "twice baked" potatoes.

I give monthly classes for ESL parents & kids to 'cook' or 'make' something cute and delicious. They love this fun recipe and can be done with pre-schoolers!

- I put all ingredients in bowls in front of the kids. Make a big deal out of putting on the aprons, tying back their hair, washing hands, etc.
- Give each child an ice cream scoop. Help little ones to scoop the ice cream out into a nice ball on the plate. Help them squeeze the bottle of 'gravy' sauce out over the ice cream.
- Give each child a plastic knife and help them learn how to cut while holding their little fingers out of the way! Cut the candy bar into small nugget sizes.
- Spoon out a few spoons of peas onto the plate. Add some spoons of carrots. Mix with their fingers and it's ready to serve! This is a great plate for them to make for Mother's or Father's Day!
FAUX MASHED POTATOES
Steps:
- Cook cauliflower as package directs. Add other ingredients and blend until smooth. This makes a very low-carb, low-calorie replacement for mashed potatoes.
