Here's another bread recipe I've played around with while I was dieting. These make great snacks and the kids love 'em, too! Enjoy!

Number Of Ingredients 8

1 cup unsweetened blueberries (fresh or frozen)
1 3/4 cups all-purpose flour (I use the "unbleached" kind)
2 1/2 teaspoons baking powder
1/3 cup Splenda granular
1/4 cup Egg Beaters egg substitute (equals 1 egg)
1/4 cup unsweetened applesauce
1/2 cup nonfat milk (skim)
1 tablespoon Splenda granular (to top muffins)

Steps:

  • Preheat oven to 400 degrees.
  • Lightly spray muffin tin with non-stick spray (I've found that paper muffin holders do not peel away from these muffins easily).
  • Wash and drain blueberries. Set aside. If using frozen blueberries, thaw before using.
  • In large bowl, sift flour. Add baking powder and the 1/3 cup Splenda. Mix together.
  • In another bowl, mix the Egg Beater egg substitute, apple sauce and milk.
  • Combine the wet mixture into the flour mixture. Stir just enough to blend (electric mixers aren't really necessary). Gently fold in the blueberries.
  • Pour batter into the prepared muffin tin, filling each cup about 2/3 full. Use the last tablespoon of Splenda to sprinkle on top of each muffin (this adds zero calories and has zero fat) and bake for 17 minutes, or until tops are light brown.
  • After baking, allow muffins to cool before removing them from the tin. Please note: 1 serving = 1 muffin. Enjoy!

This is a recipe I made up to make muffins that were fat-free, so just a little more wholesome. Basically, it's a mix of pumpkin bread and banana bread, but without butter or oil. This recipe is good for adapting to those that do not care about it being fat-free. Adding mini chocolate chips makes the muffins sweeter, but still not too unhealthy.

4 large overripe bananas
¾ cup brown sugar
⅔ cup pumpkin puree
⅓ cup egg whites
¼ teaspoon allspice
¼ teaspoon ground cinnamon
¼ teaspoon ground ginger
¼ teaspoon ground cloves
¼ teaspoon grated orange zest
2 cups whole wheat flour
1 ⅛ teaspoons baking soda
¼ teaspoon salt
1 cup mini chocolate chips

Steps:

  • Preheat the oven to 350 degrees F (175 degrees C). Grease a 12-cup muffin tin with cooking spray.
  • Mash bananas in a large bowl. Mix in brown sugar, pumpkin, and egg whites.
  • Mix allspice, cinnamon, ginger, cloves, and orange zest together in a small bowl. Set aside 1/2 teaspoon of mixture.
  • Combine whole wheat flour, baking soda, salt, and remaining spice mixture in another large bowl. Slowly add banana-pumpkin mixture and mix until completely moistened. Fold in chocolate chips.
  • Spoon batter evenly into the prepared muffin tin. Place a pinch of reserved 1/2 teaspoon spice mixture on top of each muffin.
  • Bake in the preheated oven until a toothpick inserted into the center of a muffin comes out clean, 35 to 40 minutes. Leave muffins in their tin for 5 minutes before transferring to a wire rack for further cooling.

3/8 cup Splenda granular
1/4 cup pasteurized pasteurized liquid egg-whites (equals 1 whole egg)
1/3 cup unsweetened applesauce
5/8 cup nonfat milk
1 1/8 tablespoons Splenda granular (to sprinkle on top of muffins)

Steps:

  • Preheat oven to 400 degrees.
  • Lightly spray muffin pan with non-stick spray or use muffin holders.
  • Wash and drain blueberries. Set aside. If using frozen blueberries, thaw before using.
  • In large bowl, sift flour. VERY IMPORTANT: REMOVE 2 TABLESPOONS OF THE FLOUR BEFORE DOING ANYTHING ELSE! After removing the 2 tablespoons of flour, add in the baking powder and the 3/8 cup Splenda. Mix together.
  • In another bowl, mix the liquid egg white, applesauce and milk.
  • Combine the wet mixture into the flour mixture. Stir just enough to blend (electric mixers are not necessary). Gently fold in blueberries.
  • Using a spoon, fill muffin cups about 2/3 full. Use the last 1 1/8 tablespoon of Splenda to sprinkle on top of each muffin and bake for 15 minutes, or until tops are light brown.
  • After baking, allow muffins to cool before removing them from the pan. Please note: 1 serving = 1 muffin. Enjoy! For those on Weight Watchers, each muffin = 1 point!

1/2 cup wheat and barley cereal, nuggets (I substituted 1/2 cup oatmeal here since I didn't have this ingredient)
1/2 cup sugar
1/2 teaspoon baking powder
1/2 teaspoon baking soda
1/4 teaspoon salt
2 medium ripe bananas, mashed (about a cup)
1/2 cup plain nonfat yogurt
1/4 cup egg substitute (I didn't have these either so I used 1/4 cup of eggs(about an egg and a half)
1/2 teaspoon vanilla extract

Steps:

  • Preheat oven to 350°F.
  • Spray 24 mini-muffin-pan cups with nonstick cooking spray.
  • In medium bowl, mix first six ingredients.
  • In large bowl, with wire whisk or fork, mix bananas, yogurt, egg substitute (egg) and vanilla well; stir in flour mixture just until moistened.
  • Spoon batter into muffin-pan cups.
  • Bake muffins 20 minutes or until tops are golden and toothpick inserted in center of muffin comes out clean.
  • Remove from muffin-pan cups to wire racks.
  • Serve warm, or cool to serve later!
  • Note: I made these in heart-shaped pans I bought at a local grocery store.
  • This recipe only yielded four heart-shaped cakes when I did that, and I baked them for about 45-50 minutes.

  • Preheat oven to 375. Use either paper liners or grease muffin pan with no-stick cooking spray. In first bowl, combine dry ingredients, spices, and brown sugar (break lumps). In 2nd bowl, combine egg whites, yogurt, applesauce and mix. Add wet mixture to flour mixture, stir until moistened. In 3rd bowl, toss blueberries lightly with 2 tablespoons graham flour (helps keep them from sinking to the bottom). Fold blueberries into mix. Pour into prepared muffin tin, bake 20-25 minutes.

1 1/4 cups fat-free buttermilk
1 cup unbleached flour
1 teaspoon baking soda
1/3 cup brown sugar
2 egg whites
1 cup chopped dried apricot

Steps:

  • Combine the bran and non fat buttermilk and let sit for 25 minutes.
  • Combine the flour, soda, brown sugar together.
  • Add the bran to the egg whites, stir well.
  • Add the wet ingredients into the dry ingredients just until all are moistened.

14 pitted prunes
⅓ cup water
1 cup self-rising flour
¼ cup honey

Steps:

  • Preheat the oven to 375 degrees F (190 degrees C). Grease 2 mini muffin pans, or line with paper liners.
  • In a food processor, combine the prunes and water. Process for a moment to chop the prunes. Add the flour to the food processor, and mix until it reaches a bread crumb consistency, about 10 seconds. Pour in the honey, and mix until just blended. Spoon the gooey mixture into the prepared muffin cups. One teaspoon per muffin ensures easy removal.
  • Bake for 20 to 22 minutes in the preheated oven, or until the tops spring back when lightly touched. Serve alone or with warmed honey or maple syrup.

  • Mix all ingredients together.You will need to use an ELECTRIC MIXER, the batter is very dry, like brownie batter, KEEP MIXING it WILL mix together. DO NOT ADD EGGS OR MILK.

2 cups Equal sugar substitute or 2 cups Splenda granular
3 cups flour
1 teaspoon baking soda
1/4 teaspoon salt
1/4 teaspoon baking powder
1 tablespoon cinnamon
1/2 cup chopped walnuts
3 eggs
2 cups finely grated zucchini
1/4 cup oil
3/4 cup applesauce
1 tablespoon pure vanilla extract

Steps:

  • Mix dry ingredients in large bowl.
  • Then mix other ingredients in smaller bowl.
  • Gently mix other ingredients into dry ingredients, just until moist. (Mix gently, and only until mixed; otherwise the muffins will be tough and dry).
  • Spoon into cupcake liners in pan.
  • Bake about 15-18 minutes at 400°F degrees.
  • (Or pour into 3 loaf pans or 2 if you want larger loaves and bake at 350°F for about 60 minutes).

This is a great recipe since it's has no fat and no added sugar but tastes wonderful. If you have any alergies like I do, you can substitude the milk for almond milk (or soy if you're not alergic to it!) the eggs for Energy Egg replacer, the flour for brown rice flour or soy flour, and finally you can sub the yougurt for either rice yogurt or soy yogurt and if you don't have that you can always just put twice the amount of apple sauce. Number Of Ingredients 12

1/8 cup yogurt
1/8 cup apple sauce
2 Teaspoons vanilla
1 cup non fat milk
2 egg whites
1 TBSP creamed honey (or regular if there isn't any creamed)
1 3/4 cup of water
2 cups whole wheat flour
1/4 TSP salt
1/4 TSP baking soda
1/2 TSP baking powder
1/3 cup blended blueberries

Steps:

  • Preheat the oven to 350 degrees and make sure that the oven rack the muffins will be sitting on is in the middle of the oven and not too close to the top.
  • Mix all the wet ingrediants together and stir well until the honey has dissolved completly.
  • Mix all of the dry ingrediants together and make sure you mix that too so you don't get a mouthful of baking soda or salt.
  • Mix the dry and wet ingrediants together and stir well. Don't worry the batter isn't runny like usual muffin mixes so don't worry about it.
  • Spray a muffin tin with canola oil spray and put them in the oven and let them bake for 52 - 55 minutes.
