It enhances the flavour of many foods, I live in Egypt and use it often, I always have in the fridge to liven up the taste buds. Ideal condiment for Liver, spaghetti, foul medames (Egyptian fava beans)

4 cloves garlic
2 chili peppers
1 teaspoon salt
1 tablespoon cumin
1/2 cup vinegar
1 lemon, juice of
some cold water

Steps:

  • Liquidize everything together (traditionally should be crushed with a mortar and pestle), not too much to keep some pieces in the liquid.
  • Put into a ½ litre mineral water bottle, add the lemon juice and top up the remaining space with cold water, shake it’s ready!

1 (15 ounce) can black beans, rinsed and drained
1 (15 ounce) can white kidney beans, rinsed and drained
1/2 cup chopped cucumber
1/2 cup chopped sweet red pepper
1/4 cup chopped onion
1/4 cup minced fresh cilantro or 1/4 cup parsley
1/3 cup cider vinegar or 1/3 cup red wine vinegar
1/4 cup olive oil or 1/4 cup vegetable oil
1/2 teaspoon salt (optional)
1/4 teaspoon garlic powder
1/8 teaspoon pepper
lettuce leaf (optional)

Steps:

  • In a large bowl, combine the first six ingredients.
  • In a small bowl, whisk vinegar, oil and seasonings.Pour over bean mixture and toss to coat.
  • Cover and refrigerate until serving.
  • Using a slotted spoon, serve over lettuce leaves, if desired.

The name of this dish is Egyptian Salad, but I've seen this in Moroccan Restaurants, Ethiopian Restaurants, Israeli Restaurants...It's name should be more like North African Salad.

2 red bell peppers
2 yellow bell peppers
2 green bell peppers
4 medium onions, sliced into cresents
2 -3 tablespoons olive oil
1 cup tomato juice
6 medium tomatoes, cut into wedges
1 teaspoon salt
1 teaspoon pepper
1/2 cup red wine vinegar

Steps:

  • Cut all the peppers in half length wise and de-seed them.
  • Cut all the peppers, length-wise, into 1/2 inch slices.
  • In a large covered pot, saute onions in oil until translucent, then add the peppers and cook for 5 minutes.
  • Add tomato juice, cover and cook on med heat for 5-10 minutes.
  • Add tomatoes, salt and pepper; cover and cook another 15 minutes.
  • Add vinegar, cover and cook another 10-15 minutes.
  • serve hot, cold or at room tempreture.
  • Excellent side dish with almost anything.

1 large sweet onion, chopped
2 tablespoons olive oil
1 cup chopped carrot
3 garlic cloves, minced
1 teaspoon cumin seed
1 cup diced tomato (with juice, if canned)
4 cups vegetable broth or 4 cups chicken broth
1 1/2 teaspoons sweet paprika
1/4-1/2 teaspoon cayenne pepper
2 bay leaves
1/2 teaspoon kosher salt
1/4 teaspoon black pepper
2 tablespoons chopped Italian parsley
3 tablespoons fresh lemon juice
2 cups cooked fava beans (rinsed and drained if canned)
fresh mint leaves, to garnish

Steps:

  • Sauté chopped onion in olive oil until almost tender.
  • Add carrots, garlic and cumin, cooking briefly.
  • Stir in tomatoes, broth, paprika, cayenne, bay leaves, salt and pepper, stirring to mix.
  • Cook over medium heat until carrots are tender.
  • Mix parsley, lemon juice, and fava beans into soup and heat gently.
  • Serve garnished with fresh mint, if desired.
