1 lb ground beef
15 ounces Mexican-style tomatoes, diced
1 cup frozen corn, thawed
1/2 cup shredded Mexican blend cheese
2 tablespoons Mexican blend cheese
1/2 cup flour
1/2 cup yellow cornmeal
1 tablespoon sugar
1 1/4 teaspoons baking powder
1 egg, beaten
2/3 cup milk
2 tablespoons cooking oil
1 cup red grape tomatoes, halved
1/4 cup chopped fresh cilantro
1/3 cup green olives, halved

Steps:

  • preheat oven to 350 degrees. brown beef, drain fat. Stir in undrained tomatoes and corn; heat through. Transfer to greased 2 quart baking dish. Sprinkle with 1/2 cup of cheese.
  • For corn bread toping, in medium bowl combine flour, cornmeal, sugar, baking powder, and 1/2 tsp salt. Stir in egg, milk, and oil. Evenly spread on beef mixture. Sprinkle remaining two T cheese over the topping. Bake uncovered for 30 minutes or until topping is set. Let stand five minutes.
  • Stir together tomatoes, cilantro, and olives. Spoon over casserole before serving.

2 lbs lean ground beef
1 (1 1/4 ounce) package taco seasoning mix
1/2 cup water
1 (16 ounce) can refried beans
2 cups sharp cheddar cheese, shredded
2 cups mozzarella cheese, shredded
3/4 cup onion, chopped
tomatoes, chopped (optional)
lettuce, chopped (optional)
sour cream (optional)
tortilla chips (optional)

Steps:

  • Brown ground beef; drain off fat. Add taco seasoning and 1/2 cup water. Cook over low heat about 15 minutes or until liquid has been absorbed.
  • Spread meat mixture into greased 9 x 13" baking pan. Spread beans over meat.
  • Sprinkle with cheeses, then with chopped onion.
  • Bake at 325°F for 20 minutes or until hot.
  • Makes 8 Serving suggestion: Serve over tortilla chips and top with sour cream, chopped lettuce and tomato.

This was the result of a fridge clean-up. I'm sure you could play around a lot with the measurements and ingredients. Everyone here loved it, and it was so easy. Dinner was early for a change. I decided to post it before I forgot it. Many thanks to those who have tried, enjoyed and reviewed this recipe. I always try a zmail to thank you, but can't always get through.

10 ounces pasta (I used spirals)
1 1/2 lbs hamburger
1 -2 medium onion, chopped
1 bell pepper, chopped
2 garlic cloves, minced
1 -2 ounce taco seasoning (I used a whole sachet)
1 cup water
1 cup taco sauce (I used medium heat, but any other would be okay)
1 cup sour cream (or more)
3 cups cheddar cheese, grated
1 cup corn kernel (optional)
1/4 cup jalapeno pepper, minced (optional)
1/4 cup black olives, sliced (optional)

Steps:

  • Cook pasta in salted boiling water according to package directions. When done, drain and set aside. By the way, I managed to finish everything else in the time that it took the pasta water to come to a boil and the pasta to then cook.
  • When pasta water comes to a boil, preheat oven to 350 degrees.
  • Saute the hamburger in a large frying pan. Mash with the back of a wooden spoon, so it crumbles into little pieces.
  • When the hamburger has lost most of its pink, add the onion, bell pepper and garlic. Saute until everything is softened to your taste.
  • Add the taco seasoning and the water. Stir well and simmer, uncovered, for 5-10 minutes -- until the water evaporates.
  • Turn off heat to frying pan.
  • If your frying pan is big enough, you can keep adding ingredients to it and cook it all in the same pan. Otherwise transfer the meat mixture to a Dutch oven before continuing.
  • Add the taco sauce, sour cream, 2 cups of the cheese, and the corn, jalapenos and olives if you are using them. Stir well.
  • Bake in oven for 30-40 minutes -- until it's nice and bubbly.
  • Ten minutes before the casserole is done, sprinkle the last cup of cheese over the top.

1 lb hamburger
1 medium onion, chopped
1 bell pepper, chopped
2 garlic cloves, chopped
1 -2 ounce taco seasoning
1 cup water

1 cup sour cream
1/4 cup siced olive (optional)
1 cup corn

Steps:

  • cook rice.
  • preheat oven to 350 degrees.
  • saute hamburger.
  • add onion, pepper and garlic to hamburger.
  • add taco seasoning and water to hamburger and cook until water evaporates.
  • stir in all the rest of ingrediants except 1 cup cheese and the sour cream.
  • cook 30-40 minutes. During the last 10 minutes add cheese on top.
  • serve with sour cream on the side. It can be added as people wish.

1-1/2 pounds ground beef
1 envelope taco seasoning
3/4 cup water
1 can (16 ounces) refried beans
1/2 cup salsa
6 flour tortillas (6 inches)
2 cups frozen corn, thawed
2 cups shredded cheddar cheese
Optional: Shredded lettuce, chopped tomatoes, sliced ripe olives and sour cream

Steps:

  • Preheat oven to 350°. In a large skillet, cook beef over medium heat until no longer pink; drain. Stir in taco seasoning and water. Bring to a boil. Reduce heat; simmer, uncovered, 5 minutes. , Meanwhile, in a microwave-safe bowl, combine beans and salsa. Cover and microwave 1-2 minutes or until spreadable., Place three tortillas in a greased round 2-1/2-qt. baking dish. 12 ounces corn chips, crushed
1 (8 ounce) can cream of mushroom soup
4 ounces chilies, diced
1 lb hamburger
2 cups cheddar cheese
serve with shredded lettuce and chopped tomato
picante sauce or taco sauce, sour cream

Steps:

  • Brown hamburger. Add soup, sauce and chilies and mix well. Crush 1/3 nachos or fritos and add 1/2 hamburger mix,place in bottom of casserole and then layer as follows 1/2 onion and 1/2 cheese, 1/3 nachos or fritos then remaining hamburger mixture, onions and cheese. 1 onion, chopped
1 stalk celery, chopped
8 ounces egg noodles
1 (15 ounce) can chili
1 (14.5 ounce) can peeled and diced tomatoes
1 (15 ounce) can whole kernel corn, drained
¼ cup taco sauce
1 (1 ounce) package taco seasoning mix

Steps:

  • Preheat oven to 250 degrees F (120 degrees C).
  • In a large skillet over medium heat, combine the ground beef, onion and celery and saute for 10 minutes, or until the meat is browned and the onion is tender. Drain the fat and set aside.
