This Strawberry Delight is a luscious dessert of strawberries, cream cheese, gelatin, and whipped topping. It's easy, no-bake, and delicious!

1 1/2 cups graham cracker crumbs and some extra crumbs for garnish if desired
3 tbsp sugar
1 tsp almond extract
5 tbsp butter (melted)
10 strawberries (sliced (or enough to make a single layer over the graham crackers))
1 cup cold whipping cream (chilled)
2 8 oz blocks of cream cheese (softened)
3/4 cup powdered sugar
1 tsp vanilla
2 tsp lemon juice (freshly squeezed)
1 3.4 oz Strawberry gelatin box ((will use 3 Tablespoons from this box))
1 8oz Cool Whip

Steps:

  • In a medium bowl mix together the graham cracker crumbs, sugar, almond extract and melted butter.
  • Press the mixture into an 8×8 dish. Flatten the mixture using the bottom of a flat glass. Place in the freezer for 30 minutes.

3/4 cup boiling water
1 pkg. (3 oz.) JELL-O Strawberry Flavor Gelatin
2 cups frozen strawberries
3/4 cup thawed COOL WHIP Whipped Topping

Steps:

  • Add boiling water to gelatin mix in medium bowl; stir 2 min. until completely dissolved. Add strawberries; stir until gelatin starts to thicken.
  • Pour 1/2 cup gelatin mixture into separate medium bowl. Add COOL WHIP; whisk just until blended. Spoon into dessert cups; top with remaining gelatin mixture.
  • Refrigerate 15 min. or until firm.

Found these in Food & Family, Fall 2005. We made the strawberry variation here at the home and the residents couldn't get enough of it! Try a tempting strawberry treat or another one of the delectable fruity flavors for a sweet bite any night for dinner or any other meal. The answer is within the swirls of this delightfully creamy, no-fuss recipe that can be made in mere minutes. This can be made with sugar-free gelatin, frozen fruit and non-dairy whipped topping - a nice dessert for diabetics or anyone.

1 (4 ounce) package raspberry gelatin powder or 1 (4 ounce) package blueberry gelatin
3/4 cup boiling water
2 cups frozen raspberries or 2 cups frozen blueberries
1 cup non-dairy whipped topping
slivered almonds or any other nuts, garnish

Steps:

  • Stir boiling water into package of gelatin in a large bowl at least 2 minutes, until completely dissolved.
  • Add frozen fruit, stir until gelatin starts to thicken.
  • In a separate bowl, mix 1/2 cup of the gelatin mixture into whipped topping with wire whisk until well blended.
  • Spoon whipped topping mixture evenly into 4 dessert cups.
  • Spoon remaining gelatin and fruit mixture over whipped topping mixture in each cup.
  • Refrigerate 15 minutes or until set.
