FASOLAKIA (GREEK GREEN BEANS)
Fasolakia are Greek green beans stewed with olive oil and tomato, with a few pieces of potato added for good measure. This is a main dish in Greece, not a side dish, and a prime example of plant-based eating! Good crusty bread is essential for mopping up the sauce and I always need to have a healthy chunk of feta on the side. Serve fasolakia warm or at room temperature for best flavor.

Steps:
- Heat olive oil in a large saucepan over medium heat and stir in onion. Cook until onion has softened, about 5 minutes. Add green beans and stir to coat in the oil. Cook, stirring occasionally, 2 to 3 minutes. Add pureed tomato, potatoes, salt, pepper, and sugar. Stir well, then add water until beans are barely covered.
- Bring to a simmer, partially cover with a lid, and cook gently over medium-low heat until green beans and potatoes are soft, 25 to 30 minutes. Uncover towards the end of cooking to reduce sauce if it is too watery.

EASY FASOLAKIA
Greek-style green beans with tomatoes and potatoes cooked in olive oil. This dish may be served warm or cold. As a nice option, top with crumbled feta cheese.

- Heat 1/4 cup olive oil in a skillet over medium heat; cook and stir onion until tender, about 10 minutes. Mix remaining olive oil, green beans, tomatoes, potato, mint, parsley, salt, and pepper into onion, adding enough water to cover the whole mixture. Bring liquid to a boil, reduce heat to medium-low, and simmer until potatoes are tender, about 1 hour.

- Prepare the string beans... rinse well and trim all stems Quarter the potatoes and give the onion a rough chop Roughly chop tomatoes (keep any juices) Heat a couple of tbsp olive oil in a large pot or Dutch oven over medium heat Add the onion, potatoes, tomatoes, and bay leaves Sprinkle with salt and pepper (and oregano, if using) and stir Set string beans on top of potatoes Cover and then reduce heat to low/medium heat Cook for about 30 minutes Meanwhile, finely mince the garlic cloves and parsley In a small bowl, mix the garlic, parsley, and about 3 tbsp olive oil Stir to mix and then aside until potatoes are ready After about a half hour, check potatoes for doneness Taste for seasonings- add salt and pepper as desired Remove bay leaves Plate and top with the garlic-parsley blend The more of a garlic fan you are, the more you'll want... I say the more the merrier

I first ate this dish at the Olympus Restaurant in Newport, RI in the late 1960's. It has been a favorite ever since.

Steps:
- 1. Heat oil in a large saucepan over medium heat. Add onions and saute until tender, about 5-7 minutes.
- 2. Add garlic and pepper flakes and saute until fragrant, about a minute.
- 3. Add tomatoes, green beans, oregano; salt and pepper and simmer until the beans are soft; about 40 minutes.
- 4. Remove from heat, mix in dill and parsley and serve garnished with feta cheese.
GREEK GREEN BEANS (VRASTA FASOLAKIA FRESKA)
Steps:
- Cut beans into 2" lengths and snip ends. Boil beans to not quite tender. Remove beans to bowl. Saute onion in butter until soft, add back the beans and remaining ingredients and simmer until beans are tender
VRASTA FASOLAKIA FRESKA
This is a Greek green-bean recipe. The fennel seeds in the recipe impart a sort of licorice-like taste, so if you don't like licorice you might want to omit these. I've made it both with and without and it still tastes good, though different, without the seeds. A good side dish to serve with moussaka.

FASOLAKIA LADERA (GREEN BEANS STEW)
Fresh green beans and potatoes stew. I used to dislike this when I was a kid, but as the years past, it strangely became my favourite dish. It's my comfort food and I have to have it at least twice a month.

Steps:
- If using fresh beans cut off the tips on both ends and if necessary remove strings along the edges.
- Heat the olive oil in a pan and fry the onions and garlic until softened.
- Add the beans and fold gently a few times until beans soften up a bit.
- Add the tomatoes, salt, pepper & paprika and 300 ml of boiling water, bring to the boil and simmer for half an hour.
- Add potatoes and make sure they are just covered in the water. (Add more boiling water if necessary). Cover pan and simmer for 1-1½ hours or until potatoes are very soft.
- Turn heat off and stir in the cinnamon. DO NOT ommit the cinnamon. This is what makes this dish really special.
- Garnish with parsley (optional) and serve with fresh bread and feta cheese.
- Can also be eaten cold.

- Heat oil in heavy large nonstick skillet over medium-high heat.
- Add onion and saute 5 minutes.
- Add green beans and cayenne pepper and saute until onion is translucent, about 3 minutes.
- Add potatoes and parsley.
- Pour tomato paste over vegetables.
- Bring to boil.
- Reduce heat.
- Cover and simmer until potatoes are tender, stirring frequently, about 45 minutes.
- Season with salt and pepper.
- Remove from heat.
- Serve warm or at room temperature.

GREEN BEAN AND POTATO STEW (FASOLAKIA ME PATATES) RECIPE - (4/5)

- 1. Heat the oil in the base of a pressure cooker over medium-high heat. Add the onion and saute until translucent, about 4 minutes. 2. Add the green beans and potatoes to the pot and toss together for a few minutes. 3. Dissolve the tomato paste in the water and add to the pot. Add the olive oil, and salt and pepper to taste. There should be enough liquid in the pot to come half way up the vegetables. If not, add more water. 4. Seal the pressure cooker lid and turn the heat up to high. Once the pressure cooker starts steaming, reduce the heat to medium and cook for 12 minutes. 5. Remove the pot from the heat and release the steam. Once the stew has cooled for a bit, it is ready to serve. Bread and feta cheese compliment this dish quite well.

- 1. In a heavy dutch oven, heat 1/2 cup oil on high, add the onions and saute for about 5 minutes. 2. Add the garlic, peppercorns, and half the parsley, and saute for another 5 minutes. 3. Add the tomatoes, salt, and pepper. Bring to a boil and cook for 5 min. 4. Stir the potatoes into the sauce. 5. Layer the green beans on top. Do not stir them in. 6. Sprinkle with remaining parsley. Do not stir them in. 7. Cover and simmer vigorously for approximately 1 hour. Check every 15 minutes to make sure the sauce is not sticking and that the liquid comes up to approximately the middle of the green bean layer. Add water as needed. Stir only if sticking is a problem - or turn down heat and cook longer.
