CHRISTMAS MORNING CASSEROLE AT THE FARMHOUSE

Another winner from the ladies at Gooseberry Patch--I've been making some version of this for YEARS!--and the family loves it no matter what I throw in the pan. The recipe calls for Monterey Jack cheese, but I've had equally good results with Cheddar or a mixture of Ched with Swiss or Provolone. And I've NEVER thawed the hash-browns (having not enough sense to actually PLAN much ahead it seems!), so you can folllow the recipe and thaw them, or fly by the seat of your pants and use them frozen. Also...if you add MORE meat, you'll have a main dish meal for a busy weeknight when everyone is flying in and out the door at a different time. My, my! All these choices!

20 ounces pkg frozen hash browns, thawed
4 cups shredded monterey jack cheese
2 cups diced cooked ham (or more for a main dish meal)
7 eggs
1 cup milk
1 teaspoon dry mustard (we use more than this)
1/2 teaspoon salt

Steps:

  • Preheat oven to 350; grease a 13x9 pan; set aside.
  • Spread potatoes in pan, then sprinkle with cheese and ham; set aside.
  • In a mixing bowl, combine eggs, milk, salt and mustard; pour over layers in pan.
  • Cover with foil, bake for 1 hour; uncover and bake 15 minutes more (golden brown).

Number Of Ingredients 14

2 (2 1/2 lb) chicken, cut into serving pieces
1 cup flour, seasoned with
1 teaspoon salt, and
fresh ground black pepper
2 tablespoons butter
1 tablespoon oil
12 tablespoons white pearl onions
12 small new potatoes, peeled
8 mushrooms, cut into quarters
6 slices bacon, fried until crisp and crumbled
2 cups chicken broth
1 tablespoon cornstarch, dissolved in
2 tablespoons cold water
2 tablespoons finely chopped parsley

Steps:

  • Dredge chicken pieces in seasoned flour. Heat the butter and oil in a large skillet and fry the chicken until golden brown. Transfer the chicken to a casserole.
  • Add onions and potatoes to the skillet and cook until lightly browned.
  • Shake the skillet occasionally to prevent potatoes from sticking.
  • Transfer onions and potatoes to the casserole.
  • Add mushrooms to the skillet and cook over moderately high heat for 4 minutes.
  • Place mushrooms in the casserole.
  • Add crumbled bacon and chicken broth.
  • Cover the casserole and place in a 350º oven for 50 minutes.
  • Thicken juices with cornstarch dissolved in cold water.
  • Garnish with parsley.

Getting the kids ready and out the door in time for the traditional Lutheran church's Christmas Eve Children's Worship Service is made MUCH easier with this recipe on hand. Get things ready ahead of time, make a loaf of garlicky French bread, and before the little whipper-snappers have time to realize what's happened, you've eaten a healthy AND festive supper, AND are STILL out-the-door in time for church to hear the story and sing the carols of the Birth of Our Savior! Those lovely ladies at Gooseberry Patch take the credit for coming up with this one.

1/2 cup butter
1/2 cup chopped green pepper
1/2 cup chopped onion
1/2 cup chopped celery
2 (4 ounce) cans mushroom stems and pieces, drained
2/3 cup flour
1/2 teaspoon minced garlic (1 clove pressed)
1/2 teaspoon salt
1/4 teaspoon paprika
1/4 teaspoon ground red pepper (optional)
1 (10 3/4 ounce) can cream of shrimp soup or 1 (10 3/4 ounce) can cream of celery soup
2 cups milk
2 lbs frozen shrimp, thawed (cooked, tails off)
1 (16 ounce) package frozen imitation crabmeat, thawed
1 (8 ounce) can water chestnuts, sliced, drained
1/4 cup butter, melted
1 cup breadcrumbs
1 cup shredded sharp cheddar cheese
French bread, sliced, garlic-buttered

Steps:

  • Melt butter over medium-high heat; saute green pepper, onion, and celery until tender (5 minutes?); stir in mushrooms.
  • Sprinkle flour over veggies, stir and cook for ONE minute; add garlic and remaining Roux ingredients.
  • Whisk in the Sauce ingredients; cook for ONE minute, until thickened.
  • Preheat oven to 350; grease a 13x9 pan.
  • Combine remaining Main Thing ingredients in the cake pan, pour sauce over and toss lightly to coat.
  • Combine Topping ingredients in a small bowl, sprinkle evenly over the casserole.
  • Bake, uncovered for 30 minutes until bubbly.
  • At the last 15 minutes, pop in a loaf of sliced and garlicky-buttered French bread (wrapped in foil for optimum delicious-ness).

This is a very tasty comfort food, that takes very little time. You can control the heat if the jalapenos are an issue, or maybe too spicy for the little ones.

olive oil flavored cooking spray, for pans
1 small russet potato (about 4 oz.)
1 cup mozzarella cheese, shredded (low-fat, or regular)
1 lb ground sirloin
1 medium yellow onion, chopped
2 garlic cloves, minced
1 (14 1/2 ounce) can whole tomatoes, chopped up (I use my hands and squeeze them)
1 tablespoon chili powder (to taste)
2 cups green cabbage, shredded
salt & freshly ground black pepper, to taste
1 -3 tablespoon your favorite taco sauce
6 slices pickled jalapeno chile (optional)

Steps:

  • Preheat oven to 375°F (C.190°).
  • Lightly coat a 2-qt. casserole with cooking spray.
  • Peel and grate the potato into a bowl.
  • Stir in 1/4 cup of the cheese.
  • Spread evenly over the bottom of the prepared casserole. Bake for 15 to 20 minutes, until the potato is browned and crispy.
  • Meanwhile, brown the ground sirloin, onion, and garlic in a large non-stick skillet, breaking up the beef with a wooden spoon as it browns. Discard any excess fat.
  • Stir in tomatoes with their juice, chili powder, and the cabbage. Season with pepper to taste.
  • Saute, stirring, for a minute or two. If mixture seems too dry, add a tablespoon of the bottled taco sauce, adding up to 2 tablespoons more.
  • When potatoes are done, spoon beef mixture on top of potatos. Top with remaining cheese and jalapeno slices(if using).
  • Bake for 25 to 30 minutes, until cssserole is hot and bubbly. Serve at once.

3 cups frozen hash browns (shredded, not cubed)
3⁄4 cup shredded monterey jack pepper cheese
1 cup cubed cooked ham, or cooked breakfast sausage
1⁄4 cup green onion, well chopped
4 well beaten eggs
1 (12 ounce) can evaporated milk
1⁄4 teaspoon black pepper
1⁄2 teaspoon salt

Steps:

  • Grease 2 quart rectangular baking dish.
  • Arrange potatoes evenly on bottom of baking dish.
  • Sprinkle with cheese, meat, onions.
  • Combine milk and eggs and seasonings.
  • Pour over potatoes and cheese.
  • Refrigerate over night.
  • Bake at 350 for 40-50 minutes until set.
  • Let rest 5 minute.
