6 large eggs
1 cup fine sugar
3 cups milk
1 cup heavy cream
1 teaspoon vanilla extract or 2 teaspoons vanilla essence
ground nutmeg

Steps:

  • Preheat oven to 180°C Brush an 8 cup capacity oven-proof dish with melted butter.
  • Whisk all ingredients, except nutmeg, together for one minute.
  • Pour into prepared dish.
  • Place filled dish into a shallow baking dish and pour hot water into baking dish to come halfway up the side of filled dish.
  • Place on oven shelf and sprinkle with nutmeg.
  • Bake for 20 minutes then reduce heat to 160C and bake for 40 minutes or until custard is set and a sharp knife comes out clean when inserted.
  • Remove dish from water.
  • Serve hot, warm or cold.
  • Temperature conversion is 180C = 350F. 160C = 325F.

When my daughter was pregnant with her first child, she craved this custard. I made this almost every day for her. My grandmother told me that the secret for smooth custard is not to beat the eggs too much; just make sure they are blended well and that there are no pieces of egg floating around the mixture. Also, put a clean dish towel in the bottom of the baking dish that you are placing the custard cups into, and add water to the dish. It don't know what this is supposed to do, but my custard is always smooth and good.

2 large eggs
1/3 cup sugar
1/4 teaspoon salt
2 cups milk
1 teaspoon vanilla

Steps:

  • Beat slightly to mix well--eggs, sugar, and salt.
  • Scald the milk and add slowly to the egg mixture.
  • Add the vanilla.
  • In a baking dish or pan, place the custard cups; fill them with the egg mixture.
  • Add water to baking dish.
  • Grate or sprinkle nutmeg on top of each one.
  • Bake 350 degrees for 30-35 minutess or until a silver knife comes out clean when thrust into the center of the custard.
  • NOTE: Usually that time is good for me and I don't need to check it with a knife.

3 eggs, beaten
1/2 cup sugar
3 cups milk
1 teaspoon vanilla
1/2 teaspoon ground nutmeg

Steps:

  • Preheat oven to 300°F.
  • Combine eggs, milk, sugar and vanilla in a bowl, mixing until smooth.
  • Pour into six ramekin dishes or custard cups.
  • Sprinkle with nutmeg.
  • In a large baking dish filled half-way up with water, place custard cups.
  • Bake for 1 hour 15 minutes to 1 hour 30 minutes or until knife comes out clean when inserted into middle of one of the custards.
  • Refrigerate until serving time.

8 medium potatoes, peeled
1 1/2 ounces butter, melted
3 garlic cloves, crushed (mixed with the butter)
1 1/2 teaspoons salt
pepper
1 1/2 ounces parmesan cheese (optional)
2 tablespoons fresh whole wheat bread crumbs

Steps:

  • Cut the potatoes into thin slices 3/4 way through, leaving a small uncut portion of the potato (fan like).
  • Put half of the butter and garlic in an oven proof dish and place the potatoes in the dish.
  • Sprinkle with salt & pepper.
  • Drizzle with remaining butter and garlic.
  • Bake in 375°F oven (takes about and hour depending on the size of the potato).
  • Baste occasionally with the butter in the dish.
  • After 30 minutes sprinkle with the cheese and bread crumbs- do not baste after putting on the cheese and crumbs.
  • Finish baking until potatoes are done and golden.
