12 ounces farfalle (bow-tie pasta)
Coarse salt and ground pepper
1 small red onion, quartered and thinly sliced
2 ounces bar cream cheese, cut into small pieces
1/4 cup fresh dill, coarsely chopped, or 1 teaspoon dried dill weed
2 tablespoons capers, drained and rinsed
4 ounces smoked salmon, cut into bite-size pieces

Steps:

  • Cook pasta in a large pot of boiling salted water until al dente, according to package instructions. Reserve 1/2 cup pasta water. Add onion to pot; immediately drain pasta mixture, and return to pot.
  • Add cream cheese, dill, capers, and salmon to pasta. Toss, adding reserved pasta water a little at a time to create a thin sauce that coats farfalle (you may not need all the water). Season lightly with salt and pepper. Serve.

1 pound farfalle (bowtie pasta)
4 medium yellow crookneck squash (about 1-1/2 pounds), unpeeled,
trimmed and coarsely shredded
2 tablespoons unsalted butter
1 small shallot, minced
1/4 cup vodka
2-1/4 cups heavy cream
4 ounces thinly sliced smoked salmon, cut into thin strips
Salt and freshly ground pepper
3 large egg yolks
1 cup freshly grated Parmigiano-Reggiano cheese, plus more for serving
Freshly grated nutmeg
Kosher salt and freshly ground pepper
2 tablespoons minced chives

Steps:

  • In a large pot of boiling salted water, cook the farfalle, stirring occasionally, until al dente; about 1 minute before pasta is done, add shredded crookneck squash. Drain immediately and squash, reserving 1/4 cup pasta cooking water. Meanwhile, in a large, deep skillet, melt the butter. Add the shallot and cook over moderate heat until golden, about 3 minutes. Add the vodka and cook until evaporated, about 1 minute. Add 2 cups of the heavy cream and simmer over moderately high heat, stirring often, until reduced by half, about 4 minutes. Stir in Parmesan cheese, nutmeg, and the smoked salmon and season with salt and pepper, and remove from the heat. In a small bowl, beat the eggs yolks with the remaining 1/4 cup of heavy cream. Drain the farfalle. Add it to the skillet and stir well. Add the egg-yolk mixture and stir over low heat until warmed through and the sauce is creamy, about 30 seconds. Season with salt and pepper. Transfer the pasta to bowls, scatter the chives on top and serve.

I decided to plant yellow squash this year and they are coming in so I figured let's do something with them along with the other stuff coming out of the garden. * any additional toppings can be used, and timing may be different for others, this was my first yellow squash baby so I was tender. :-)

1 medium size yellow squash, slied 1/8 in
2 large onions, scapes diced
1 tablespoon fresh basil, chopped
1/2 teaspoon cracked pepper
1 pinch salt
1 egg
1/2 cup milk
1/2 cup flour
1/2 cup cornmeal
1/2 cup parmesan cheese, divided
1 tablespoon butter or 1 tablespoon margarine
2 tablespoons olive oil
1 brown paper bag, lunch size

Steps:

  • slice squash into 1/8 in slices.
  • chop onion scapes and basil together.
  • crack egg into bowl add milk.
  • add in onion, basil, squash and turn to cover.
  • in the paper bag, add flour, corn meal, cheese, salt, and pepper (if you like spicey you can add in hot peppers, red peppers, ).
  • shake, shake, shake.
  • put into med hot skillet with butter and oil and fry up, turn when edges are turning brown.
  • at this point sprinkle with remaining parm cheese.
  • take out and lay on a plate lined with paper towels to drain sprinkle with additional parm cheese or ther heat as you choose.

A yummy creamy pasta, that's super quick and easy to make. Great for if you're cooking for friends and fancy making something quick but impressive.

150 ml double cream
1 large tbsp of Philadelphia soft cheese
1 large garlic glove, finely chopped
50g of spinach
Half a tsp of basil
Pepper - season to taste
Small amour of extra virgin olive oil
150 ml double cream
1 large tbsp of Philadelphia soft cheese

75g farfalle pasta
150g smoked salmon, sliced
1 medium carrot, sliced

Steps:

  • Place the pasta to boil as per the packets instructions.
  • Once the pasta has been boiling for around 7 mins add the carrots to the same pan.
  • Whilst the pasta and carrots cook, add the finely chopped garlic to a saucepan with oil, and cook for 1-2 until the garlic is softening.
  • Add the spinach to the garlic and oil, and cook until reduced.
  • Once reduced, add cream, Philadelphia cheese and cook and gently simmer until cheese is melted - at this point taste the sauce and add pepper to your taste.
  • Drain the pasta and carrots, return to saucepan and add the sliced smoked salmon.
  • Pour the sauce over the pasta, carrot and smoked salmon mix, return to a low heat and stir sauce through for a couple of mins, and serve immediately.

3 Tbsp. KRAFT Lite Balsamic Vinaigrette Dressing
2 Tbsp. maple syrup
1 Tbsp. GREY POUPON Harvest Coarse Ground Mustard
2 tsp. chopped fresh rosemary
3 cups Brussels sprouts, trimmed, cut in half
2 cups butternut squash cubes (3/4 inch)
4 skinless salmon fillets (1 lb.)

Steps:

  • Heat oven to 400ºF.
  • Mix dressing, syrup, mustard and rosemary until blended.
  • Combine vegetables in medium bowl. Add 3 Tbsp. dressing mixture; mix lightly. Spread onto foil-covered rimmed baking sheet sprayed with cooking spray.
  • Bake 15 to 20 min. or until vegetables are crisp-tender. Remove from oven.
  • Use spoon to move vegetables to one side of baking sheet. Add fish to other side; brush with remaining dressing mixture.
  • Bake 15 to 17 min. or until vegetables are tender and fish flakes easily with fork.
