This is the BEST recipe for hot wings and I have tried many others over the years ---I make these quite often for my parties and everyone loves them --- you may double all ingredients if desired, if you are doubling the ingredients, I suggest to just start with 2 tablespoons hot sauce such as Louisiana hot sauce then add more to reach the desired heat --- I have even prepared these on the grill instead of the broiler and then finished cooking them in the oven with the sauce, another idea is you may cook the wings hours in advance or even a day ahead cool slightly and just leave them in the fridge overnight, then the following day just coat them in the hot sauce and then bake them in the oven, you may even prepare the hot sauce a day ahead in fact it tastes even better if prepared in advance just refrigerate overnight, preparing the wings and the sauce in advance is a great time saver if you are making them for a crowd,

3 lbs chicken wings, cut in two and tip removed
1/2 cup ketchup (I have even used the hot ketchup for this!)
1/4 cup water
1/4 cup honey
1/4 cup white vinegar
2 tablespoons light brown sugar
1 tablespoon Dijon mustard
1 tablespoon Worcestershire sauce
1 tablespoon soy sauce
2 tablespoons hot sauce (use more or less, depending on amount of heat desired)
2 -3 minced fresh garlic cloves
3 tablespoons minced dried onion

Steps:

  • Set oven to broil.
  • Prepare the wings on a shallow cookie sheet that is lined with foil, and spray with a non-stick cooking spray, or prepare a broiler pan.
  • Arrange the wings evenly in a single layer.
  • Place under the broiler until lightly browned (watch closely to not burn the wings) set wings aside.
  • In a saucepan combine all sauce ingredients, and bring to a boil; reduce heat and simmer for 15-20 minutes (adjust the hot pepper sauce to suit taste).
  • Up to this point, all above can all be prepared a day in advance and refrigerated.
  • Set oven to 375 degrees F.
  • Using long tongs, dip each wing in the hot sauce, and place evenly on a greased baking sheet.
  • Bake for 35-40 minutes (basting with remaining sauce during cooking).
  • To crisp up the wings, place under broiler for a couple of minutes.

I have been trying out many chicken wing recipes and finally came up with a recipe that is easy to make, quick to cook and has a nice crunchy coating and it tastes so good.

12 chicken mid-joint wings
1/3 cup all-purpose flour
1/2 teaspoon salt
1/4 teaspoon cayenne pepper
1/2 teaspoon smoked paprika
3/4 cup panko breadcrumbs
2 large eggs
3 tablespoons whole milk, homogenized
1/3 cup butter, melted
2 tablespoons sriracha hot chili sauce, See Note
1/8 teaspoon black pepper
1/2 teaspoon granulated garlic powder
1 -2 cup canola oil or 1 -2 cup extra virgin olive oil

Steps:

  • Remove wing tips and any loose skin and discard. Leave the remaining skin on if desired.
  • Rinse wings in cold water, pat dry with paper towels and set aside.
  • In a large zip-loc bag, combine flour, salt, cayenne pepper and paprika, shake well.
  • Add chicken to the zip-loc bag, seal and toss to coat well. Refrigerate for 1 to 4 hours. "Chilling the chicken wings is important to achieve nice, crispy wings.".
  • In a mixing bowl add Panko bread crumbs.
  • In another bowl, whisk together eggs and milk until frothy.
  • Remove chicken from the refrigerator and shake off any excess flour coating.
  • Dip coated chicken in the egg mixture, then roll in the Panko bread crumbs until well coated.
  • In a heavy bottom 12 inch frying pan or skillet, add oil and heat to 375°F.
  • Place chicken in the pan with the main meat side up and fry for 6 minutes.
  • Turn the chicken over and continue to fry for another 6 minutes. The wings should be nicely browned.
  • Test for doneness by making a cut into the thick portion of the wing to make sure there is no pink showing.
  • Remove chicken from the frying pan onto paper towels to absorb any excess oil, and immediately place in a large bowl.
  • In a small saucepan, add butter, Sriracha hot chili sauce, black pepper, granulated garlic powder and heat just to boil, stirring constantly.
  • Pour the hot sauce over the chicken wings and toss to coat well.
  • Serve immediately or while they are still hot.
  • You may also freeze the chicken after it is cooked and then reheated in a preheated 400 F oven for 10 minutes.
  • NOTE: You may also use the following choices of hot sauces.
  • 1 tablespoon of Red Hot Sauce - wings will be medium hot.
  • 2 tablespoons of Sriracha Hot Chili Sauce - wings will be hot.
  • 2 teaspoons of Sambal Oelek - wings will be very hot.

I love wings! I have had many a mediocre wing, some decent wings, some really good wings and a few outstanding wings. I am proud to say that my favorite wing is the one I learned to make myself. After years of trying different techniques (baked, fried, boiled first (blech), various sauces, etc) I have come up with what I think is wing perfection. I have discovered that the best wing is deep fried, but first must be coated and left to "rest" before frying. Once fried, these wings are crisp, juicy and delicious as is. My favorite wing however is sauced with a hot and sweet concoction which is super easy to put together and is, I must say, a blend of two commercial sauces with a bit of butter melted in. I hope you enjoy these as much as I do!

2 lbs chicken wings
1/2 cup flour
1 teaspoon cayenne pepper
1 teaspoon salt
1/2 teaspoon garlic powder
1/2 teaspoon lemon pepper
1 teaspoon paprika
1/3 cup teriyaki sauce
1/4 cup Frank's red hot sauce (more or less, depending on how hot you like it)
4 teaspoons butter

Steps:

  • In a small bowl mix flour, cayenne pepper, salt, garlic powder, lemon pepper and paprika. Put into a large freezer bag and shake a few wings at a time in this mixture until they are well coated. Place coated wings into a large bowl or dish and cover with plastic wrap. Refrigerate for 1 1/2 - 2 hours (this is the secret step!).
  • Heat oil in fryer to 375 degrees. While the oil is heating, mix the sauces together in a small saucepan, add the butter and heat until the butter is melted. Stir well.
  • Fry wings for 8-10 minutes (depending on the size of your wings) or until they begin to brown. Lift fryer basket and shake off excess oil. Pierce one of the larger wings down to the bone and take a peek to make sure it is cooked; if not, pop the whole works back into the fryer for another minute. Lift basket and shake off oil once more. Dump wings into a large bowl and toss with the sauce, then turn out onto a serving platter. Enjoy!

12 chicken wings, seperated,and rinsed
6 cups peanut oil
2 cups hot sauce (frank durkee's is preferred)
1 1/2 cups brown sugar
salt
pepper
garlic powder

Steps:

  • you can adjust the"hot/sweetness" of this by starting with 1 cup of hot sauce and brown sugar and adding more of whatever your preference is.
  • mix hot sauce with brown sugar, stir and heat in microwave, just until mixed smooth.
  • sprinkle wings with salt, pepper, or garlic powder (optional).
  • heat oil, and drop wings in, fry for 9-12 minutes depending on the fryer you are using, you want them to be a golden brown and crispy.
  • remove the wings from the oil and let them drain on paper towels for 2-3 minutes.
  • dip wings in hotsauce-brownsugar mixture.
  • put wings back in peanut oil for 2-3 minutes.
  • careful of any splattering.
  • remove wings again.
  • place on paper towels again for 1 minute.
  • then put all wings into hotsauce-brownsugar mixture.
  • serve with blue cheese dressing.

24 chicken wings (about 4 lbs.)
to taste salt (optional)
to taste black pepper, Freshly ground
4 cups vegetable oil or 4 cups corn oil
1/4 cup butter or 1/4 cup margarine
2 -5 teaspoons hot sauce (Louisiana Hot Sauce)
1 teaspoon white vinegar
to taste blue cheese dressing

Steps:

  • Cut off tips and separate each wing at the joint. Sprinkle wings with salt and pepper to taste. Heat oil in deep fryer or large heavy pot. When it is quite hot, add half the wings and cook about 10 minutes, stirring occasionally.
  • When wings are golden brown and crisp, remove them and drain well.
  • Add remaining wings and repeat process.
  • Meanwhile, melt butter in saucepan, add hot sauce and vinegar to taste. Pour hot sauce over wings and mix well to cover.
  • Serve with Blue Cheese Dressing and celery sticks.

2 lbs chicken wings, cut up buffalo style
6 whole serrano chili peppers
6 whole red chili peppers
10 whole jalapeno peppers
2 cups white wine
1 (2 ounce) bottle Tabasco sauce
0.5 (10 ounce) bottle Worcestershire sauce
10 tablespoons cayenne pepper
10 tablespoons durkee brand hot sauce
1 tablespoon salt
3 tablespoons pepper
1/2 cup vinegar

Steps:

  • In a blender, carefully puree the peppers, wine, vinegar and all spices. Caution, the fumes are deadly and wear rubber gloves or your fingers will burn!
  • Put the puree into a bowl and marinate the wings in the bowl in the fridge for 5 days.
  • After 5 days, carefully remove the wings and broil them until cooked. Usually approx 15 mins (+/- 5 mins).
  • Take the marinade, put it on the stove, add 1/4 cup sugar and heat to a boil. reduce until thick.
  • Pour over wings and re-broil for about 5 more minutes, serve with soda water for maximum heat effect but keep plenty of ice water handy.
