QUICK & TASTY CORNBREAD



Quick & Tasty Cornbread image

From the Fannie Farmer Cookbook (1965 edition). Fannie says you can use butter, bacon fat, chicken fat, or beef drippings for the shortening, but I usually use canola oil.

Number Of Ingredients 8

3/4 cup cornmeal
1 cup flour
1/3 cup sugar
3 teaspoons baking powder (1 t baking soda plus 2 t cream of tartar for richer version)
3/4 teaspoon salt
1 cup milk (or 1 c yogurt plus 1/4 c milk for richer version)
1 egg, well beaten
2 tablespoons shortening, melted (or 2 T canola oil)

Steps:

  • Preheat oven to 425 degrees. Grease an 8" square baking dish.
  • Sift dry ingredients together.
  • Combine wet ingredients and gently mix into dry mixture.
  • Spoon into baking dish and bake 20 minutes.

Just a basic Corn Bread recipe with no extras. Good old plain Corn Bread! Best when hot right out of the oven!!! This recipe is from the fannie Farmer cookbook.

3/4 cup cornmeal
1 cup all-purpose flour
1/3 cup Splenda sugar substitute
3 teaspoons baking powder
3/4 teaspoon salt
1 cup milk
1 egg, well beaten
2 tablespoons shortening, melted

Steps:

  • Sift together the cornmeal, flour, Splenda, baking powder, and salt.
  • Mix in the milk, egg, and melted shortening.
  • Pour mixture into a buttered 8 inch square pan.
  • Bake 20 minutes at 425 degrees.

FANNIE FARMER'S RICH CORN CAKE

This is the only cornbread, "corn cake" recipe that we used at the restaurant. Due to the large amount of portions needed when we made this, we would increase the recipe and make in a hotel pan.

1 c all purpose flour
1 c yellow cornmeal
1/4 c sugar
1 tsp baking soda
2 tsp cream of tartar
3/4 tsp salt
1 c sour cream
1/4 c milk
2 eggs
4 Tbsp butter, melted

Steps:

  • 1. Preheat oven to 425 degrees F.
  • 2. Whisk together all dry ingredients to blend well.
  • 3. Thoroughly mix the sour cream, milk and eggs and add to the dry ingredients.
  • 4. Whisk in the butter until smooth.
  • 5. Turn out into a prepared 9 X 9 pan or into a cast iron skillet.
  • 6. Bake 20 minutes. Let rest for 5 minutes, cut and enjoy!

FANNY'S WHISTLE-STOP CAFE CORN CASSEROLE

I got this recipe from Fannie Flagg's Whistle Stop Cafe Cookbook. I bring it to just about every potluck dinner we go to. The paprika is my own variation.

1 (17 ounce) can cream-style corn
1 (11 ounce) can whole kernel corn, drained
1 (8 ounce) container sour cream
2 eggs, beaten
1/2 cup margarine, melted and cooled
1 (8 1/2 ounce) box cornbread mix
1 teaspoon paprika (or cayenne for added "heat")

Steps:

  • Heat oven to 350.
  • Combine first five ingrediants, mixing well; stir in cornbread mix.
  • Pour into greased 12x8x2 casserole dish. Sprinkle with paprika or cayenne.
  • Bake for 45 minutes.
