GOLDEN CORN CAKE
My Aunt gave this recipe to me quite a few years ago. Since then I have won two 1st place ribbons(only times I entered it) at our local fair. Wonderful to serve alongside chilli!

Steps:
- Mix and sift dry ingredients.
- Add milk, egg, and shortening.
- Pour into a greased 8-in square pan.
- Bake at 350* for 25 minutes or until done.

FANNY FARMER CORN BREAD
This came from my first, and most favorite cookbook. It makes a slightly sweet cornbread, which I adore. My hubby won't eat sweet cornbread, though, so I adapt it for him by leaving the sugar out. You can also make this recipe with buttermilk, by adding a 1/2 t. of baking soda along with the other ingredients. I'm posting it here so that I can access the recipe when I am away from home and don't have my book. (I also usually grind my own flour and cornmeal, and it still makes great bread!)

- Preheat the oven to 425 degrees F. Grease an 8 inch square cake pan. Mix the cornmeal,flour, sugar, baking powder, and salt in a large bowl. Add the milk, egg, and shortening or bacon fat, and blend well. Spoon into the pan and bake for about 20 minutes. Cool and cut in squares.

FANNIE FARMER'S RICH CORN CAKE
This is the only cornbread, "corn cake" recipe that we used at the restaurant. Due to the large amount of portions needed when we made this, we would increase the recipe and make in a hotel pan.

Steps:
- 1. Preheat oven to 425 degrees F.
- 2. Whisk together all dry ingredients to blend well.
- 3. Thoroughly mix the sour cream, milk and eggs and add to the dry ingredients.
- 4. Whisk in the butter until smooth.
- 5. Turn out into a prepared 9 X 9 pan or into a cast iron skillet.
- 6. Bake 20 minutes. Let rest for 5 minutes, cut and enjoy!
