This tasty, savory cheese omelet is the easiest comfort food you could possibly make and it's a family favorite for breakfast, brunch, or dinner! Eggs are beaten and cooked just enough to still be wonderfully tender, then filled with melty cheese!

3 large eggs ((at room temperature))
1/8 tsp salt ((to taste))
1 tsp butter ((or cooking oil - see notes))
1/2 cup cheddar cheese ((grated))
1 Tbsp milk ((or use water - both are optional))

Steps:

  • In a bowl, combine the 3 large eggs with salt, optional milk or water, and whisk or blend with a fork.
  • Heat a 9-inch non-stick skillet to medium heat and melt the butter (or use oil, or a combination of oil and butter), spreading to coat the entire skillet bottom.
  • Pour the beaten eggs into the center of your heated skillet and lift the handle to tilt the pan and spread the egg mixture out toward the skillet edge. Once the eggs begin to firm up, use a spatula to lift the edges, and tilt the remaining uncooked egg toward the edges. *Also, break any bubbles that are forming and fill them with the uncooked egg as well.
  • Let the omelet cook for about 10-15 seconds after filling any gaps and rounding out the edges. Then fill with half of the grated cheddar cheese. Use a spatula to flip the first edge inward over the filling, then the opposite edge to close the omelet.
  • Slide the cooked omelet onto a plate and finish topping with the remaining half of the cheese. Add any other condiments desired, serve, and enjoy!

Number Of Ingredients 8

8 large eggs
salt and pepper
8 slices bacon, minced
1 large tomatoes, cored, seeded, and chopped fine
1/2 green bell pepper, cored, seeded, and chopped fine
4 garlic cloves, minced
2 tablespoons unsalted butter
3 ounces shredded monterey jack pepper cheese or 3/4 cup monterey jack pepper cheese

Steps:

  • Whisk the eggs, 1/2 teaspoon salt, and 1/8 teaspoon pepper together in a large bowl. Set aside.
  • Fry the bacon in a 12-inch nonstick skillet over medium-high heat until crisp, about 8 minutes. Stir in the tomato and bell pepper and cook until the vegetables are softened, about 6 minutes.
  • Stir in the garlic and cook until fragrant, about 30 seconds. Transfer the mixture to a paper towel-lined plate and wipe the skillet clean with paper towels. Return the skillet to medium heat.
  • Melt the butter in the skillet, swirling to coat the skillet, until the foaming subsides. Add the eggs and bacon mixture to the pan and cook, stirring gently in a circular motion, until the mixture is slightly thickened, about 1 minute.
  • Use a rubber spatula to pull the cooked edges of the egg toward the center of the pan, tilting the pan so the uncooked egg runs to the cleared edge of the pan. Repeat until the bottom of the omelet is just set but the top is still runny, about 1 minute.
  • Cover the skillet, reduce the heat to low, and cook until the top of the omelet begins to set but is still moist, about 5 minutes.
  • Remove the pan from the heat. Sprinkle the cheese evenly over the omelet, cover, and let it sit until the cheese partially melts, about 1 minute. Slide half of the omelet onto a serving platter using a rubber spatula, then tilt the skillet so the remaining omelet flips over onto itself, forming a half-moon shape. Cut the omelet into wedges and serve immediately.

10 eggs, warmed for 5 minutes in hot water
1/4 cup water
2 heavy pinches salt
1/4 cup any combination chopped, fresh herbs (chives, parsley, tarragon, dill, or basil)
4 teaspoons room temperature butter, plus 2 teaspoons for finishing omelet
1 cup of any combination sauteed peppers and onions, grated cheese, sauteed mushrooms, cooked and drained spinach

Steps:

  • Add eggs, water, salt, and herbs to blender and combine on high for 5 to10 seconds.
  • Heat a 10-inch non-stick aluminum pan over medium-high heat. Once pan is hot add 1 teaspoon butter and brush around surface of pan. Using a 4 1/2-ounce ladle, place 1 ladle full of egg mixture into center of pan and stir vigorously with rubber spatula for 5 seconds. As soon as a semi-solid mass begins to form lift pan and move around until the excess liquid pours off into pan. Using your spatula move around the edge of the egg mixture to help shape into round and loosen edge. Let sit for 10 seconds without touching. Place 1/4 cup of filling onto 2/3 of surface of omelet.
  • Shake pan to loosen from pan. Left up the far edge of the pan and snap it back toward you. Using your spatula, fold over 1/3 of the omelet without filling. Slide omelet onto plate and fold over so that omelet is a tri-fold. Coat with 1/2 teaspoon butter.
  • Repeat process above for remaining 3 servings. Serve immediately.

I make this to share around the table so that each person doesnt have to wait fro me to cook their omlette individually. The base recipe is for 2 people. You can double for 3, triple for 6. I use JUMBO eggs

3 eggs
1 tablespoon water
1 tablespoon butter
nonstick cooking spray
1 pinch salt
1 pinch pepper
1/2 cup swiss cheese, shredded
2 bagels

Steps:

  • Beat eggs with water and add pepper to mix.
  • Spray Large Omlette Pan with non-stick spray while cold.
  • Melt butter in large omlette pan over medium heat-be careful not to burn the butter.
  • Pour egg mix into pan and swirl around to cover-lower heat to low.
  • keep swirling pan so that egg evenly cooks over the low heat- be careful not to overcook or brown the bottum too much.
  • when eggs are almost cooked through ( top is still soft) sprinkle cheese over the top.
  • put lid onto pan and turn off heat - let this sit for about 1-2 minutes until cheese melts and eggs puff up.
  • Sprinkle salt lightly on top.
  • Fold omlette over and cut in half.
  • serve over a hot bagel ( open face).

1 tablespoon unsalted butter
2 tablespoons finely shredded cheddar
Kosher salt and freshly ground pepper
Chopped chives, sliced tomato, and buttered toast for serving

Steps:

  • Using a fork, beat eggs with 1 teaspoon water until yolks and whites are completely combined and no streaks remain. The water helps incorporate them and steams while the omelet cooks, which puffs it up. Season with 1/8 teaspoon kosher salt and a few cracks of pepper.
  • Heat butter in an 8-inch nonstick skillet over medium-high until foaming;swirl to coat. When foam subsides, pour eggs into center of skillet. Let stand 10 seconds. Stir eggs with a rubber spatula in a circular motion with one hand while shaking skillet with the other, about 15 seconds. Reduce heat to medium. Working your way around skillet, gather outer set eggs toward center, then tip skillet so runny eggs move to outside edges, about 1 minute. Lightly spread any remaining runny eggs evenly over top and cook until creamy but no longer wet.
  • Sprinkle cheddar onto far side of omelet. Remove from heat. Tip pan away from you; gently slide spatula under near side of omelet and fold up and over cheese. Slide onto a warm plate. Top with chopped chives and serve, with sliced tomato sprinkled with salt and buttered toast, if desired.
