3 medium onions
Vegetable oil
for drizzling
1 pound ground beef
Salt and pepper
2 cups chopped mushrooms (small white ones)
1 2-pound bag sauerkraut
1 28-ounce can peeled tomatoes
1 cup vegetable broth
1 bottle shish kebab sauce
2 cups water
1/2 cup heavy cream

Steps:

  • Cut onions in small cubes and brown in pan with a drizzle of oil
  • Add ground beef, salt and pepper, and brown meat
  • Cut mushroom in small pieces and add to meat and onions
  • Add sauerkraut, tomatoes, vegetable broth and shish kebab sauce, and simmer for 15 minutes, adding water when needed (you may need more than 2 cups)
  • Right before serving, stir in heavy cream

1 lb smoked Polish sausage, cut into chunks
5 medium potatoes, peeled and cubed
2 medium onions, chopped
2 carrots, chopped
5 cups chicken broth or 5 cups vegetable broth
2 cups sauerkraut
1 (6 ounce) can tomato paste

Steps:

  • In a large saucepan, add sausage, potatoes, onions, carrots and chicken broth.
  • Bring to a boil, reduce heat and simmer for around 30 minutes, until potatoes are cooked.
  • Add sauerkraut and tomato paste, mixing well.
  • Return to a boil, reduce heat, cover and simmer another 30 minutes.

10 ounces sauerkraut
9 ounces bacon, chopped
1 onion, chopped
1 large garlic clove, crushed
4 1/4 cups cold water
1/2 teaspoon paprika
2 teaspoons chopped fresh dill
5 ounces smoked sausage, sliced (your choice of sausage)
5 ounces sour cream
sea salt & freshly ground black pepper

Steps:

  • Rinse the sauerkraut in cold water and leave to drain.
  • Place sauerkraut, onion, garlic and cold water in a large saucepan with seasoning.
  • Bring to the boil, then simmer for 15 minutes.
  • Meanwhile, fry the chopped bacon in a deep frying pan until the fat starts to run.
  • Stir in the paprika and mix into the sauerkraut mixture.
  • Return to a gentle simmer for another 15 minutes then add the dill and sausage of your choice.
  • Stir in the cream, check the seasoning and reheat until just on the point of boiling.
  • Serve with rye bread.

This is very easy and delicious soup. Each family in Czech Republic makes it a little bit different this is the way we do it.

1 (15 ounce) can sauerkraut (drained)
5 -6 medium potatoes (cut it into small pieces)
1/2 onion (chopped)
1 teaspoon caraway seed
salt
pepper
2 tablespoons sour cream
1/2 Polish kielbasa (cut into small pieces)
1 tablespoon vinegar

Steps:

  • Put the onions into the saucepan with the little bit of oil and cook over low heat until lightly yellowed do not brown.
  • Add water and potatoes with salt and caraway seed. Let it cook for few minutes then add sauerkraut and polish kielbasa.
  • Let it cook for at least 20 minutes or until potatoes are soft. Then add some sour cream, pepper and vinegar if needed.

When DH and I moved to his home village, the first person I made friends with was the wife of that smart guy who helped us tile the cellar. He invited us to his birthday party and I didn't do anything but talk to his wife and eat this soup - I just couldn't stop eating, it was so good! We met weekly since then, but it took years until I finally got the recipe. Great to make ahead for a party.

3 large onions
2 garlic cloves
3 tablespoons canola oil
2 lbs ground beef
3 lbs sauerkraut
2/3 cup tomato paste
4 cups tomato juice
4 cups beef stock
paprika, to taste (sweet)
ground caraway, to taste
salt, to taste
pepper, to taste
Tabasco sauce, to taste
10 small pickled cucumbers
1 bunch parsley
1 cup sour cream

Steps:

  • Coarsely chop onions, finely mince cloves.
  • In a large pot (big enough for the sauerkraut, beef and 8 cups of liquid) heat oil and saute onions and cloves until onions are translucent, then add the ground beef. Cook until done, mashing all lumps of meat thoroughly with a fork. There should not be big lumps of meat when it's done.
  • Pull the sauerkraut apart (don't dump it into the pot in a lump, or you will have burger soup with a giant sauerkraut dumpling) and add it to the meat in small portions. Immediately add tomato paste, tomato juice and beef stock. Mix well, then add one tablespoon pepper, paprika powder and caraway and some salt (depending on how salty the stock already is).
  • Bring to a boil and simmer on low heat for about 30 minutes.
  • Try the soup and add salt and spices to taste, then add Tabasco to taste.
  • Finely slice the cucumbers and add to soup, let simmer for five more minutes.
  • Finely chop the parsley.
  • Serve the soup in bowls, garnish with one dollop of sour cream and some parsley.
  • Enjoy!

SAUERKRAUT BIEROCKS CASSEROLE

I grew up on sauerkraut bierocks but, unfortunately, never learned how to make them from my grandma. I found this recipe on another site and have added some things to make this taste just like the ones she made. (Grandma didn't put cheese in her bierocks but it's a great addition here!)

1/2 cup onion, chopped
1 lb lean ground beef
2 -3 tablespoons garlic, minced
1 teaspoon red pepper flakes
2 cups sauerkraut, drained and squeezed dry or 1/2 head cabbage, chopped
1 tablespoon Worcestershire sauce
2 (8 ounce) packages crescent rolls (I use Butter & Garlic)
2 cups cheddar cheese, shredded

Steps:

  • Preheat oven to 350°.
  • Brown onion, garlic and ground beef in a large skillet over medium-high heat for about 4 minutes.
  • Add red pepper flakes and continue cooking until the ground beef is fully cooked. (If using fresh cabbage, add here and cook until soft.)
  • Drain extra fat out of the skillet then stir in drained sauerkraut and Worcestershire. Heat through and set aside.
  • Press 1 package of crescent roll dough into the bottom of a lightly greased 9x13-inch baking dish.
  • Spread beef mixture on top and cover with cheese.
  • Lay second package of crescent roll dough over the top of the beef and cheese mixture.
  • Bake for 25-30 minutes or until golden brown.
