EASY WATERMELON SORBET IN YOUR ICE CREAM MAKER



Easy Watermelon Sorbet in Your Ice Cream Maker image

Using four simple ingredients and your ice cream maker, you can have the freshest tasting homemade watermelon sorbet at home!

Number Of Ingredients 4

4 cups watermelon (cubed with seeds removed)
3/4 cup water
1/2 cup granulated sugar
2-3 Tablespoons lemon juice

Steps:

  • In a small/medium saucepan combine the water, sugar, and two tablespoons lemon juice. Stir to (mostly) dissolve the sugar.
  • Bring to a gentle boil over high heat and turn down to medium. Boil gently for three minutes. Set aside to cool. (I set aside in the fridge).
  • Cube and de-seed the watermelon.
  • Place the cubed watermelon and simple syrup you made in a blender. Blend on high till it turns to a smooth watermelon puree.
  • Taste the watermelon puree. If it is too sweet, add up to one more Tablespoon of lemon juice to balance the sweetness. If it tastes fine to begin with, then leave it alone.
  • If your ice cream maker requires that you cool or chill the puree, do so before proceeding.
  • Transfer to your ice cream freezer. Freeze according to directions on your ice cream maker/freezer.
  • When the desired sorbet consistency is reached eat right away or spoon the frozen mixture into an airtight freezer container.
  • You can save in the freezer for up to two weeks. If the sorbet is too frozen to scoop, allow to rest on the counter for about five minutes to soften slightly.

4 cups diced seedless watermelon
1 cup white sugar
3 tablespoons lemon juice
1 dash salt
¼ cup cold water
1 (.25 ounce) envelope unflavored gelatin
1 cup chilled heavy cream

Steps:

  • Combine the watermelon, sugar, lemon juice, and salt in a large mixing bowl; stir to coat evenly. Cover the bowl with plastic wrap and refrigerator for 30 minutes.
  • Blend the mixture in a blender until smooth; return to the bowl.
  • Pour the cold water into a saucepan. Sprinkle the gelatin over the cold water; let stand 1 minutes. Place the saucepan over low heat; cook for 2 minutes. Stir the gelatin mixture into the blended watermelon mixture. Add the heavy cream; beat with an electric hand mixer at medium speed until the mixture is fluffy.
  • Transfer the mixture into an ice cream maker and freeze according to manufacturer's directions until it reaches "soft-serve" consistency. Transfer ice cream to a one- or two-quart lidded plastic container; cover surface with plastic wrap and seal. For best results, ice cream should ripen in the freezer for at least 2 hours or overnight.

8 cups seeded chopped watermelon
1-1/2 cups sugar
1/2 cup lemon juice
2 envelopes unflavored gelatin
1/2 cup cold water
2 cups whole milk

Steps:

  • In a large bowl, combine watermelon, sugar and lemon juice. Chill for 30 minutes; place half in a blender. Blend until smooth; pour into a large bowl. Repeat with the other half; set aside. , In a saucepan, cook and stir gelatin and water over low heat until gelatin dissolves. Add to watermelon mixture; mix well. Stir in the milk until well blended., Freeze in an ice cream freezer according to the manufacturer's directions. Serve immediately or freeze and allow to thaw about 20 minutes before serving.

1/2 cup corn syrup
4 tablespoons lemon juice
3 tablespoons grenadine
3 fresh mint leaves
1 (3-pound) seedless watermelon

Steps:

  • In a small saucepan, bring sugar, syrup, lemon juice, grenadine and mint leaves to a boil dissolving the sugar granules. Let cool slightly. Cut the rind off the watermelon and cut into chunks. Puree half of the chopped watermelon in a blender. Strain through a fine mesh strainer into a large glass bowl. Repeat with remaining watermelon. Add slightly cooled syrup mixture and mix well to incorporate. Place sorbet into a 2-quart plastic container and freeze for 3 to 4 hours.

Very light and refreshing with the perfect amount of sweetness. Lime juice brightens up the flavor and adds a delightful zing. The texture is soft, reminiscent of a very light sorbet combined with a shaved ice. This is a great recipe to make with plentiful watermelon available in the summertime. It's the perfect ending after a filling summer dinner or a refreshing snack on a hot day. You could even pour a shot of Cointreau® over the top or blend the mixture with tequila and enjoy it as a boozy summer treat.

8 cups cubed seeded watermelon
2 medium limes, zested and juiced, divided
2 tablespoons honey
1 pinch chili-lime seasoning (such as Tajin®)

Steps:

  • Place watermelon cubes in a single layer on a sheet pan. Freeze at least 5 hours or overnight.
  • Zest limes; set aside for garnish. Juice limes until you have 2 tablespoons juice.
  • Place 1/2 of watermelon cubes in food processor with 1 tablespoon honey and 1 tablespoon lime juice. Blend until smooth and creamy and transfer to a large bowl. Repeat with remaining watermelon, honey, and lime juice.
