1 tablespoon butter (melted)
¼-⅓ cup bread crumbs
½ tablespoon parsley freshly chopped
3 medium potatoes (chopped) ((400 grams))
1 small cauliflower (broken into florets)( or 3 1/2 cups) ((350 grams))
½ tablespoon parsley freshly chopped
1 large egg (beaten)
1 cup firm mozzarella, gruyere or fontina cheese (shredded) ((100 grams))
¼ cup freshly grated parmesan cheese ((25 grams))
2 dashes pepper
salt to taste

Steps:

  • Pre-heat oven to 350F (180 C). Lightly drizzle a medium baking dish with olive oil.

Puree cauliflower instead of actual potatoes for a "Mock" Garlic Mashed Potatoes recipe from Food Network to get the same creamy comfort without the carbs.

1 medium head cauliflower
1 tablespoon cream cheese, softened
1/4 cup grated Parmesan
1/2 teaspoon minced garlic
1/8 teaspoon straight chicken base or bullion (may substitute 1/2 teaspoon salt)
1/8 teaspoon freshly ground black pepper
1/2 teaspoon chopped fresh or dry chives, for garnish
3 tablespoons unsalted butter

Steps:

  • Set a stockpot of water to boil over high heat.
  • Clean and cut cauliflower into small pieces. Cook in boiling water for about 6 minutes, or until well done. Drain well; do not let cool and pat cooked cauliflower very dry between several layers of paper towels.
  • In a bowl with an immersion blender, or in a food processor, puree the hot cauliflower with the cream cheese, Parmesan, garlic, chicken base, and pepper until almost smooth.
  • Garnish with chives, and serve hot with pats of butter.

One of my favorite side dishes when I was doing low carb. This is something we still enjoy. This recipe is very versitale. I have used bacon bits instead of bacon, added some butter and sour cream. Let your imagination go wild. This also freezes nicely and is easily doubled.

16 ounces frozen cauliflower
8 ounces cream cheese with chives, softened
8 ounces shredded sharp cheddar cheese
4 bacon, slices fried and broken into small pieces
salt and pepper

Steps:

  • Microwave cauliflower until soft (or cook on stove top- I find it easier in the microwave).
  • Drain and mash.
  • Add softened cream cheese, cheddar cheese, salt, pepper and bacon.
  • Put mixture into sprayed 8x8 baking pan.
  • Bake at 350 for 20-30 minutes.
  • Eat or cool and freeze.
  • To freeze place pan in freezer bag or cover with foil.
  • When ready to use, thaw in fridge.
  • Warm in 350 oven 15-20 minutes or in the microwave 8-10 minutes.

1 tablespoon unsalted butter, plus more for dish
1 1/2 pounds Yukon Gold potatoes (about 6 medium), peeled and sliced 1/2 inch thick
Salt and pepper
1 small head cauliflower (about 2 pounds), sliced 1/2 inch thick
1 tablespoon fresh thyme leaves
1 1/2 cups shredded sharp cheddar (6 ounces)
1/3 cup chicken broth

Steps:

  • Preheat oven to 450 degrees. Butter a 2-quart baking dish. In a large pot, cover potatoes with cold salted water by 2 inches. Bring to a boil, then add cauliflower and cook at a rapid simmer until potatoes are just cooked through and cauliflower is crisp-tender, about 10 minutes. Drain in a colander and let sit 5 minutes.
  • Place half the potatoes and cauliflower in dish, sprinkle with half the thyme and cheddar, and season with pepper. Repeat to make a second layer. Add broth and dot top with butter. Bake until cheese is deep golden and bubbling, 15 to 20 minutes.

2 1/2 cups cooked cauliflower (I use frozen, cooked until tender, in the microwave)
1 cup sour cream (low fat works here, too)
3/4 cup shredded cheddar cheese (full-fat works best)
3 green onions, finely chopped
3 -6 slices crumpled cooked bacon or 3 -6 slices turkey bacon
salt and pepper

Steps:

  • Pre-heat oven to 350.
  • Chop cooked cauliflower into very small pieces.
  • Mix sour cream, 1/2 of the green onions, 1/2 of the cheese, 1/2 of the bacon, and salt and pepper to taste in medium bowl.
  • Stir in the cauliflower.
  • Place in medium baking dish and sprinkle remaining cheese and bacon on top.

2 large potatoes, peeled and chopped
1 head cauliflower, cut into florets
3 tablespoons butter
3 tablespoons all-purpose flour
1 cup heavy cream
1 cup shredded Swiss cheese
salt and pepper to taste

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Lightly grease a medium casserole dish.
  • In a pot with enough water to cover, boil the potatoes 10 minutes, or until tender but still firm. Drain, and set aside.
  • In a pot, place the cauliflower in a steamer basket over boiling water. Steam 5 minutes, until tender but still firm. Set aside.
  • Melt the butter in a saucepan over medium heat, and whisk in the flour. Gradually stir in the heavy cream until thickened. Remove from heat, and mix in 1/2 cup Swiss cheese until melted. Season with salt and pepper.
  • Arrange the potatoes and cauliflower in the prepared casserole dish. Pour the cream sauce over the potatoes and cauliflower, and sprinkle with the remaining Swiss cheese.

6 tablespoons all-purpose flour
1/2 teaspoon garlic powder
1/4 teaspoon salt
1/4 teaspoon pepper
2 1/2 cups milk
3/4 cup shredded cheddar cheese
3/4 cup shredded swiss cheese
6 large russet potatoes, sliced into 1/4 inch slices
1 small onion, finely chopped
1 lb diced cooked ham
1 (16 ounce) package frozen cauliflower
1/4 cup crushed corn flakes

Steps:

  • Preheat oven to 375 degrees (350 for glass), spray casserole dish with Pam.
  • To prepare the cheese sauce, melt butter in a medium saucepan over medium heat.
  • Whisk in flour, garlic powder, salt and pepper.
  • Mix in milk and stir constantly until thickened.
  • Mix in the cheddar cheese and Swiss cheese and continue to stir until smooth. Reduce heat to low.

1/4 cup cream
1/4 cup sour cream
2 tablespoons butter
2 garlic cloves (optional)
salt and pepper

Steps:

  • Steam the cauliflower until tender.
  • I prefer to do this in the microwave. Drain well.
  • Place the steamed cauliflower in the food processor or mixer.
  • Do not put it in a blender, it doesn't give it the right consistency.
  • Pulse slowly adding only a little of the cream, butter and sour cream at a time.
  • Watch out that it doesn't get too runny.
  • Add the garlic and salt and pepper.
  • Keep mixing until smooth.
