These shrimp fajitas were seasoned to perfection and just the right amount for two people. We love the combination of seasoning... slightly sweet and savory with a little spice. A great recipe for a beginner cook looking to treat someone special to an amazing dinner. You'll look like a pro!

1/2 tsp ground cumin
1/2 tsp garlic powder
1/2 tsp ground black pepper
1/2 tsp salt
1/2 tsp chili powder
1/2 tsp light brown sugar
2 Tbsp olive oil
2 clove garlic, smashed
3/4 lb large shrimp, peeled
1 Tbsp olive oil
1 large white onion
2 medium poblano chiles
1/4 c packed cilantro leaves
warmed flour tortillas
1 lime

Steps:

  • 1. Mix cumin, garlic powder, black pepper, salt, chili powder, and brown sugar.
  • 2. In medium bowl, add all but 1 tsp of the spice, the olive oil, the crushed garlic, and the peeled shrimp. Mix and let sit while preparing vegetables.
  • 3. Heat 1 tbsp olive oil (not from the shrimp) in a medium pan and cook onion until it starts to brown, then add the chilis. Saute for 3 additional minutes, then add remainder of dry spice mixture. Saute until tender.
  • 4. Transfer vegetables to a bowl and add shrimp to pan. Cook until shrimp are cooked, 3-4 minutes. Add vegetables back to pan and reheat.
  • 5. Serve in tortillas with cilantro, a squeeze of lime, and sour cream if desired.

1/2 lb boneless beef sirloin steak (1/2 to 3/4 inch thick)
1 teaspoon vegetable oil
4 teaspoons Old El Paso™ taco seasoning mix (from 1-oz package)
2 cups frozen bell pepper and onion stir-fry (from 1-lb bag), thawed, well drained
4 Old El Paso™ flour tortillas for soft tacos & fajitas (6 inch; from 8.2-oz package), heated
1/2 cup Old El Paso™ Thick 'n Chunky salsa

Steps:

  • Heat closed contact grill 5 minutes. Brush both sides of steak with oil; rub with 2 teaspoons of the taco seasoning mix. Sprinkle vegetables with remaining taco seasoning mix.
  • When grill is heated, place steak and vegetables on bottom grill surface. Close grill; cook 4 to 8 minutes or until desired beef doneness.
  • Slice steak diagonally across grain into thin slices. Wrap steak and vegetables in warm tortillas; top with salsa.

1 -2 boneless skinless chicken breast
chopped garlic
chopped onion
salt
pepper
wine or mexican beer
yellow bell peppers or red bell pepper, seeded and sliced to equal about 1 cup
1 small onion, sliced
diced tomato
shredded cheddar cheese or monterey jack cheese
prepared guacamole
sour cream
chopped chile
prepared salsa
warmed flour tortilla

Steps:

  • Dump the chopped garlic, chopped onion, salt and pepper in either wine or beer to equal about 1 cup and combine well.
  • Dump the chicken breast and vegetables in the mixture and marinate for a couple of hours or overnight.
  • In an oiled hot iron pan, sauté the chicken, peppers, onion slices and diced tomatoes until done.
  • Slice the chicken and serve immediately with warmed tortillas.
  • Serve with cheese, guacamole, sour cream, chopped chilies and salsa.

2 tablespoons lemon juice
1-1/2 teaspoons seasoned salt
1-1/2 teaspoons dried oregano
1-1/2 teaspoons ground cumin
1 teaspoon garlic powder
1/2 teaspoon chili powder
1/2 teaspoon paprika
1/2 teaspoon crushed red pepper flakes, optional
1-1/2 pounds boneless skinless chicken breasts, cut into thin strips
1/2 medium sweet red pepper, julienned
1/2 medium green pepper, julienned
4 green onions, thinly sliced
1/2 cup chopped onion
6 flour tortillas (8 inches), warmed

Steps:

  • In a large bowl, combine 2 tablespoons oil, lemon juice and seasonings; add the chicken. Turn to coat; cover. Steps:

  • Preheat an air fryer to 370 degrees F (190 degrees C) according to manufacturer's instructions.
