FAGGOTS WITH ONION GRAVY

Made from pork shoulder and pigs liver, meatball-like faggots are a blast from the thrifty past - serve with mashed potatoes

little oil, for the tin
170g pack sage & onion stuffing mix (we used Paxo)
500g pack diced pork shoulder
300g pig liver
½ tsp ground mace
2 onions, thinly sliced
1 tbsp sunflower oil
2 tsp sugar
1 tbsp red wine vinegar
3 tbsp plain flour
850ml beef stock
handful chopped parsley
mash and veg, to serve (optional)

Steps:

  • Heat oven to 160C/140C fan/gas 3. Lightly oil a very large roasting tin. Tip the stuffing mix into a large bowl, add 500ml boiling water, stir and set aside.
  • Pulse the pork in a food processor until finely chopped. Add the liver and pulse again. Add to the stuffing with the mace, 1 tsp salt and plenty of black pepper. Stir well. Shape the mixture (it will be very soft) into 24 large faggots and put in the prepared tin.
  • To make the gravy, fry the onions in the oil until starting to turn golden. Add the sugar and continue cooking, stirring frequently, until caramelised. Tip in the vinegar and allow to sizzle. Mix the flour with a couple of tbsp water. Pour the stock into the onions, then add the flour paste and cook, stirring constantly, until smooth and starting to thicken. When it is thick, pour into the tin with the faggots, cover with foil and bake for 1 hr until cooked through. Serve sprinkled with parsley, with mash and a veg, if you like.

I can still remember, when I was six or seven years old, travelling down to Ponterdawe in South Wales for the weekend to see my Grandmother. We would arrive just in time for lunch on a Saturday. She had a Bullmastiff dog called Gellert. The problem was she had always fed him titbits from the table - a big mistake as this causes the dog to drool all the time. In those days all little boys used to wear shorts! Lunch would always be home made faggots with peas, all smothered in Bovril gravy with slabs of fresh white bread, thick with real butter. Of course, Gellert would take up station under the table, usually around my legs . . . but the faggots were great. This is the recipe for Faggots from back then, real comfort food, which can be enjoyed just as much today as it was then . . . and it is a really easy, low budget meal to prepare. You will either need a mincer or an electric mixer to do the preparation. I always cook my faggots ahead and then warm them up when I wish to eat them. This allows the flavours to intensify and makes the faggots richer.

1 lb lamb liver
1/4 lb onion
6 ounces white breadcrumbs
4 teaspoons dried sage
1 beef bouillon cube
1 teaspoon butter, for each faggot
1/2 pint water

Steps:

  • Make your bread crumbs by putting the dried bread in the mixer on a high setting until you have fine bread crumbs.
  • Put bread crumbs in large mixing bowl.
  • Chop onions in the mixer and add to the mixing bowl, this can be as fine or as coarse to suit your own tastes.
  • Chop the liver in the mixer and add to the mixing bowl, this can be as fine or as coarse to suit your own tastes.
  • Add the sage and mix thoroughly.
  • Shape the mixture into small balls (should make 8 to 10).
  • Place in a greased ovenproof dish or tin.
  • Put a small knob of butter on each faggot.
  • Make stock with OXO (beef) cube and water and pour around the faggots.
  • Cover with foil and bake in a preheated oven (180°C / 350°F / Gas Mark 4) for fifteen minutes.
  • Remove foil and cook for further fifteen minutes.
  • Remove faggots and when cool cover and keep in the fridge until required.
  • To serve:
  • To reheat place the required number of faggots in a saucepan with beef stock (OXO or preferably Bovril) two-thirds of the way up the faggots. Bring to the boil and simmer for 5 to 10 minutes.
  • Thicken stock to make a gravy and pour over.
  • Serve with garden peas (or mushy peas) and thick slices of freshly buttered bread.

I am passing on this recipe for faggots more for the sentimental value than for any expectation that you will use it. My grandmother ("Nanna") was a cook in a "big house" in southern England during the 30's. When I was in England a couple of years ago she granted me access to her hand-written recipe book.

This famous oldtime dish will warm you up on a cold night. A favourite of my clients I was asked to cook this often. Served with a rich onion gravy it is still a winner. You could serve boiled potatoes and cabbage to make a larger meal.

1 lb pig liver, chopped
1 lb stale bread, cubed
1/4 lb bacon fat
1 lb onion, chopped
2 teaspoons mixed herbs
1/2 teaspoon salt
1/4 teaspoon pepper
2 tablespoons flour
6 ounces lentils, soaked
1/2 teaspoon salt

Steps:

  • Place the bread in a bowl and cover with warm water, leave for five minutes.
  • In a food processor mix the liver, bacon fat and the onion, do not over process, the ideal is a course mix.
  • Press the bread as dry as possible and beat with a fork till smooth, add the herbs and seasoning to the bread. Add the minced meat and mix the bread and meat well.
  • Flour hands and form the mix into largish balls , not too large!
  • Place in a lightly greased tin and bake in the oven 450 degrees till firm, about 45 minutes.
  • Meanwhile put the lentils in a pan, cover with water bring to the boil, reduce heat and simmer till soft. Drain the lentils and mash them adding the salt.
  • Serve the faggots on a bed of lentils with a rich onion gravy poured over. Wonderful.

These are very popular meatballs in Wales. They are made from pork or beef liver, and pork butt, spices and onions.

2 lbs pork liver or 2 lbs beef liver, cut into large pieces
1 lb pork butt, cut into large pieces
1 lb fresh pork fat, cut into large pieces
1 egg
2 cups breadcrumbs
2 large yellow onions, peeled and minced
2 teaspoons crumbled dried sage
1 teaspoon dried thyme, whole
2 teaspoons salt
1/2 teaspoon fresh ground black pepper

Steps:

  • In a meat grinder, grind the liver, pork, and fatback finely.
  • Mix all of the ingredients together well and mold into 1 1/2 inch meatballs.
  • Place them in a greased pan and add 1 cup of water.
  • Bake for 40 minutes in a preheated 350 oven.

These delicious meatballs can be made without the caul(pig apron) but it does help to retain moisture and gives an authentic taste. Best served with mashed potatoes or Pease Pudding - Yummy. This recipe is from Gary Rhode's Classic British Cookery.

2 medium onions, finely chopped
1 garlic clove, crushed
1/2 teaspoon fresh thyme leave
1/2 teaspoon fresh sage leaf, chopped
1/2 teaspoon fresh parsley, chopped
2 ounces unsalted butter
1/4 pint beef, jus
6 ounces lean topside beef or 6 ounces rump steak
6 ounces beef heart, trimmed
6 ounces ox kidney, trimmed
6 ounces lamb liver, trimmed
1 egg
1 lb pig apron, soaked in water for 24 hours
2 pints beef stock
1 ounce beef dripping

Steps:

  • Cook the chopped onions, garlic and herbs in the butter until soft. Add the beef jus and boil to reduce by half. Leave to cool and allow to set in fridge.
  • Mince the meat through a medium cutter, then place into the bowl of a food mixer and beat slowly adding salt and pepper to taste. The salt will thicken the meat, giving a gelatinous texture. Add the egg and the reduced cooled onion mixture. Chill for 2-3 hours till firm.
  • Squeeze any excess water from the caul and cut into 8inch squares. Spoon about 3 oz of the faggot mix into the centre of each square and wrap and turn the caul around the meat to form firm ball shapes.
  • When you are ready to cook he faggots, warm the beef stock. Fry the faggots in the dripping until brown on all sides, then place them in the stock and simmer very gently for 12-15 mins until just starting to firm up. Remove the pan from the heat and leave to rest.
  • The faggots can now be allowed to cool, left in the cooking liquor and chilled. The liquor will set like a jelly and the faggots can be kept in the fridge for up to a week.
  • When you want to serve the faggots, warm them gently in the jelly for 15-20 minutes To serve lift from liquor and top with onion gravy.

ALTERNATIVE FAGGOTS

This is a recipe for faggots that doesn't need all the liver, belly, shoulder pork etc. Not to mention the caul to wrap it in. I appreciate this isn't a traditional recipe, but it is a nice alternative when you want something similar without the effort.

1 lb ground pork
1 bunch flat leaf parsley, leaves picked and finely chopped
12 sage leaves, finely chopped
1 large leek, split lengthways and cut into fine strips
salt & freshly ground black pepper
vegetable oil, for shallow-frying
1 onion, sliced
2 garlic cloves, chopped
1/2 cup red wine
1 teaspoon beef gravy granules
3/4 cup hot water

Steps:

  • In a large bowl, mix together the pork, parsley, sage and leek.
  • Season with salt and freshly ground pepper.
  • Using your hands, shape the mixture into large, even-sized meatballs.
  • Heat a little vegetable oil in a heavy-based frying pan.
  • Add the faggots and let them cook without stirring until they develop a crust.
  • Turn once browned on one side. Remove the faggots from the pan and reserve them.
  • Add the onion to the pan and fry for 2-3 minutes. Chuck in the garlic and fry, stirring, for a further 2 minutes.
  • Pour in the red wine, bring to the boil and cook briskly until reduced by half. Sprinkle the gravy granules into the pan and cover in hot water, mixing well.
  • Bring to the boil, then return the faggots to the pan.
  • Cover the pan and cook the faggots for 10 minutes until cooked through.
  • Serve the faggots with smooth mashed potato.

A pound of pig's Liver
One pig's Kidney, diced.
250grams Belly pork
1 onion
A small bunch of sage
A small handful of breadcrumbs
1 teaspoon of salt
1 teaspoon of pepper
1 egg to bind.

Steps:

  • Put pork liver kidney and onion into a pan with seasoning and water to half cover. Simmer gently for 40 mins then strain. Keep the liquor. Mince the meats or chop finely and blend with other ingredients. Add some of the liquor. Pile onto a greased tray and spread out to about an inch and a half thick. Score the top with a knife to make individual squares. Cover with greased foil and bake at gas 6 or 200C for an hour. Take the foil off for the last fifteen minutes to crisp the top. Serve with garden peas.

fresh sage (chopped) or dried sage
1 level tsp. dried mixed herbs
2 eggs, beaten
1.2 lb. oatmeal
milk
salt and pepper
1 oz. flour

Steps:

  • 1. Wash and mince the meat. You can choose how coarse to do this. 2. Add the onion, breadcrumbs, oatmeal, herbs, and eggs. Add seasoning, but not too much salt as the bacon will have its own salt. 3. Mix well together to give a moist mixture. shape into small balls (if necessary, add a bit of milk to give the desired consistency). 4.Place the faggots into a well greased ovenproof dish and cover with foil. Cook in a moderate oven (350F) for 40 minutes. Remove the foil and cook for another 10 minutes to brown the faggots. 5. Mix the flour with a little cold water and make a gravy with the juices. 6.The traditional serving for faggots is hot with peas, but they go well with other vegetables and french fries.
