1 pound ground beef
1 medium onion, chopped
2 cans (15 ounces each) Ranch Style beans (pinto beans in seasoned tomato sauce)
1 package (9-1/4 ounces) Frito corn chips
2 cans (10 ounces each) enchilada sauce
2 cups shredded cheddar cheese
Thinly sliced green onions, optional

Steps:

  • Preheat oven to 350°. In a large skillet, cook beef and onion over medium heat 6-8 minutes or until beef is no longer pink and onion is tender, breaking up beef into crumbles; drain. Stir in beans; heat through., Reserve 1 cup corn chips for topping. Place remaining corn chips in a greased 13x9-in. baking dish. Layer with meat mixture, enchilada sauce and cheese; top with reserved chips., Bake, uncovered, 15-20 minutes or until cheese is melted. If desired, sprinkle with green onions.

Frito Chili Casserole is the perfect comfort dinner. Delicious layers of crunchy Fritos, Southwestern chili, and lots of gooey cheese make for a winning weeknight meal!

1 lb ground beef
1 onion (chopped)
4 oz green chiles (chopped, (1 can))
4 oz black olives (sliced, (1 can))
16 oz chili ((1 can))
16 oz chili beans ((1 can))
15 can corn (drained, (1 can))
1 c. salsa
1 Tbsp taco seasoning
10.5 oz Fritos ((1 bag))
2 c. cheese (shredded)

Steps:

  • Preheat oven to 350-degrees. Gather ingredients.
  • In a large skillet, cook ground beef and onions until cooked through and onions become transparent. Discard grease if needed.
  • Stir in chiles, olives, chili, chili beans, corn, salsa, and taco seasoning. Bring to a simmer for about 10 minutes, stirring often.
  • Crush Fritos and spread half of them evenly in a 9x13 deep baking dish. Add chili mixture and top with remaining crushed Fritos.
  • Bake for 25 minutes. Add cheese and bake an additional 10 minutes or until cheese is melted.

DEEP-DISH FRITO PIE

Three words: fancy Frito® pie. We love eating the classic out of the bag (who doesn't?) but this deep-dish version is packed with Frito® flavor -- in the crust, chili and topping.

6 ounces Fritos® (4 1/2 cups), plus more for serving
1 cup all-purpose flour (see Cook's Note)
1 large egg, lightly beaten
8 ounces sharp Cheddar, shredded
Kosher salt and freshly ground black pepper
1 tablespoon olive oil
1 pound ground beef (80/20)
4 cloves garlic, finely chopped
1 red bell pepper, stemmed and seeded, chopped
1/2 medium onion, chopped
1/4 cup chili powder
1 tablespoon tomato paste
1 teaspoon ground cumin
1 cup low-sodium chicken broth
1 tablespoon cornstarch
For Serving: Sour cream, guacamole, pico de gallo, shredded iceberg lettuce, pickled jalapeno slices, chopped onion and fresh cilantro leaves

Steps:

  • Position a rack in the center of the oven and preheat to 350 degrees F.
  • Pulse 4 ounces (3 cups) of Fritos® in a food processor until finely ground. Remove and reserve half of the Frito® crumbs. Add the flour, egg, 2 ounces (1/2 cup) Cheddar, 2 to 3 tablespoons of water and 1 teaspoon salt to the crumbs in the food processor. Pulse until a uniform dough forms, add an additional tablespoon of water if needed.
  • Transfer the dough to a 9-inch pie pan and use the bottom of a measuring cup to press evenly across the bottom and up the side of the pan. Prick holes in the bottom of the dough with a fork. Bake until lightly browned, 15 to 20 minutes. Set aside while making the chili.
  • Meanwhile, heat the oil in a large skillet over high heat. Add the beef and cook, breaking it up with a wooden spoon, until browned but not completely cooked through, 6 to 8 minutes. Transfer to a medium bowl with a slotted spoon, leaving behind as much fat in the skillet as possible. Reduce the heat to medium, add the garlic, bell pepper and onion and cook, stirring, until tender but not browned, 6 to 8 minutes. Add the chili powder, tomato paste and cumin and cook, stirring, until fragrant, about 1 minute. Add the chicken broth and reserved beef along with any accumulated juices to skillet. Bring to a simmer and cook, stirring and scraping up any brown bits from the skillet, until the liquid is almost evaporated, 6 to 8 minutes. Season to taste with salt and pepper. Add the cornstarch, reserved Frito crumbs and 2 ounces (1/2 cup) Cheddar and stir until combined.
  • Transfer the chili to the pie crust, top with the remaining 4 ounces (1 cup) Cheddar, cover with foil and bake until the cheese is melted and the filling is bubbly, 15 to 20 minutes. Remove the foil and bake, uncovered, for 5 minutes more. Let cool 15 minutes then top with a layer of sour cream, guacamole and pico de gallo. Mound iceberg lettuce on top and sprinkle with pickled jalapeno slices, chopped onion, remaining Fritos and fresh cilantro leaves.

BBQ PULLED PORK FRITO PIE

2 cups BBQ pulled pork
2 cups of your favorite BBQ sauce
2 cans black beans, drained, rinsed and drained again
Kosher salt and freshly ground black pepper
4 tablespoons unsalted butter
5 large eggs
3 cups Fritos corn chips
3/4 cup grated white Cheddar
3/4 cup grated Monterey jack
1/4 cup fresh cilantro leaves
4 green onions, thinly sliced
1/2 cup pickled onions or chiles or a combination

Steps:

  • Combine the pork with 1 1/2 cups of the BBQ sauce in a medium saucepan, bring to a simmer over low heat and cook until heated through, about 10 minutes.
  • Meanwhile, combine the black beans, the remaining 1/2 cup BBQ sauce, a splash of water and some salt and pepper in a medium saucepan. Bring to a simmer and cook until heated through, about 5 minutes.
  • Melt the butter in a large nonstick skillet over medium heat, crack the eggs into the pan, season the tops with salt and pepper and cook until the whites are milky white and the yolks are slightly firm, about 4 minutes.
  • Scatter the chips on a platter and scatter half of the Cheddar and Monterey jack over the top. Now spoon on the hot pork and beans and top with the remaining cheese. Sprinkle the cilantro and green onions over the top. Slide the eggs in a single layer on top and sprinkle with the pickled onions. Cut into wedges and serve.

1 cup chopped onions
1 package (1 oz) Old El Paso™ original taco seasoning mix
2/3 cup water

1 can (15 oz) Progresso™ black beans, drained, rinsed
1 bag (9.25 oz) Fritos™ corn chips (about 5 1/2 cups)
2 cups shredded Mexican cheese blend (8 oz)
1/4 cup chopped green onions
1 cup sour cream
1 cup refrigerated guacamole

Steps:

  • Heat oven to 350°F. Spray 13x9-inch (3-quart) glass baking dish with cooking spray.
  • In 12-inch nonstick skillet, cook beef and onions over medium-high heat, stirring frequently, until brown; drain. Stir in seasoning mix and water. Heat to boiling. Reduce heat to medium; simmer uncovered 3 to 4 minutes or until thickened. Stir in enchilada sauce and black beans; cook 1 to 2 minutes or until heated through.
  • Place 4 cups of the corn chips in single layer in baking dish. Top with 1 cup of the cheese; spoon beef mixture over cheese, then top with remaining 1 cup cheese.
  • Bake 18 to 20 minutes or until cheese is melted and edges are bubbly. Top with remaining corn chips and the green onions. Serve with sour cream and guacamole.

This is junk-food at its best - quick, inexpensive, filling, hearty, and fun! :-) It's also super easy to whip up and very kid and family-friendly! Great for dinner, lunch, potlucks, or sports-watching parties! A little secret: I almost always make this with chili from Wendy's -- it makes for an extra yummy treat!

Frito Scoops
3 -4 cups shredded cheese
1 (15 ounce) can canned chili or 2 -3 cups chili, of your choice
1/2 onion, diced finely
diced jalapeno (optional)

Steps:

  • Cover bottom of casserole dish with Frito scoops.
  • Cover Fritos with shredded cheddar cheese.
  • Pour chili over Fritos and cheese.
  • Top with more cheese.
  • Sprinkle with diced onions, and sliced jalapeños (jalapeños are optional, depending on your desired heat level).
  • Bake in 350°F over until cheese is melted and pie is well heated through (can also be zapped in the microwave, as alternative way of cooking).
