I found this recipe years ago, and have not made any other since. This dough freezes very well.

Number Of Ingredients 6

2 ½ cups all-purpose flour
1 cup shortening
¼ teaspoon salt
1 egg
¼ cup cold water
1 tablespoon distilled white vinegar

Steps:

  • Combine flour and salt in a large bowl. Cut in shortening until it resembles coarse crumbs.
  • Mix egg, water, and vinegar together in a separate bowl. Pour into flour all at once and blend with a fork until dough forms into a ball. Divide into 3 equal-sized rounds.
  • Wrap with plastic and chill in a refrigerator until ready to prepare.

My son is diabetic. This crust is sugar free easy and delicious substitute for graham cracker crusts. It's also a good way to get fiber in your diet which is a must with diabetes. It even smells good when baking!

1 1/2 cups fiber one original bran cereal
1/3 cup splenda or favorite sugar free sweetener granulated
6 T melted butter

Steps:

  • 1. preheat oven to 375 degrees. Spray 9 or ten inch pie tin with pam
  • 2. Into blender or food processor add dry cereal and Splenda. Blend approximately 20 seconds until about half is ground up. It's okay if you still see about half twigs. Put into a bowl. Stir in melted butter until combined.
  • 3. Press mixture into prepared pie tin and bake 7 minutes. Cool and fill with filling of your choice. Sugar free pudding recipes are great.

My grandmother supported her family during the Depression by baking. This is her recipe for pie crust. I use this often as I am a pie baker. The trick to good pie crust is to be gentle and treat it very lightly.

½ cup vegetable shortening
1 ½ cups all-purpose flour
½ teaspoon salt
½ cup cold water

Steps:

  • Mix shortening, flour, and salt together with a fork or a pastry blender until very crumbly. Add as much water as needed to hold together, and mix lightly with a fork.
  • Roll gently on a floured pastry cloth to about an inch larger than pie plate. Fold carefully in half, lift to pie plate, and unfold. Press into pan. For a single-crust pie, trim with a small knife to about 1/2 inch beyond rim. Fold up, and pinch so edge of pie is raised from rim.

This is a great alternative to a graham cracker crust that packs about 25% less calories. I've been using this versatile cereal in a lot of applications, and this is one of my favorites.

2 cups Fiber One cereal (original)
1/4 cup margarine or 1/4 cup butter
1 tablespoon vanilla extract
1 teaspoon cinnamon
2 tablespoons splenda artificial sweetener

Steps:

  • Preheat oven to 350°F.
  • Crush the Fiber One cereal in a sealed bag or process in a food processor until a crumb consistency.
  • Melt butter and combine all ingredients.
  • Mix thoroughly.
  • Press mixture firmly into a 9" pie dish or springform pan.
  • Bake for 8-10 minutes. Do not brown.
  • Remove and let cool.
