1 cup extra-virgin olive oil
2 cloves garlic, minced
ΒΌ teaspoon dried oregano
1 pinch salt, or to taste
1 pinch dried rosemary, or to taste
1 pinch dried basil, or to taste
ground black pepper to taste

Steps:

  • Combine the olive oil, garlic, oregano, salt, rosemary, basil, and pepper in a skillet over medium heat; cook until the garlic begins to sizzle, about 5 minutes. Remove immediately from heat.

This garlic and herb mixture is a flavor bomb. When topped with olive oil, it turns into a delicious dip for bread. Keep extra olive oil close by, you can always top up the plate with more.

Number Of Ingredients 11

2 garlic cloves, or more depending on how garlicky you want it
2 tablespoons capers, drained
1/2 teaspoon dried oregano
2 teaspoons chopped fresh rosemary
2 teaspoons chopped fresh thyme
3 tablespoons finely grated parmesan cheese
Pinch sea salt, if you have it try truffle salt
Fresh ground pepper, to taste
Pinch crushed red pepper flakes, optional to make it spicy
1/2 cup extra-virgin olive oil, plus more as needed
Crusty bread, cubed

Steps:

  • Finely mince the garlic and capers. Add to a bowl along with the oregano, rosemary, thyme and cheese. Season with a small pinch of salt and pepper. Use the back of a spoon to smoosh the herbs into the garlic and capers.
  • Make one or two mounds of the garlic-herb mixture on a rimmed plate. Drizzle the olive oil on top. Serve with cubes of bread.

GARLIC-INFUSED OIL AND DIPPING SAUCE

Yield 1/2 cup oil

Number Of Ingredients 8

1/2 cup extra virgin olive oil
4 cloves garlic, thinly sliced
Balsamic vinegar
Pinch red pepper flakes
Pinch salt
Freshly ground black pepper
Finely grated Parmesan or Romano cheese
Hot crusty loaf Italian or French bread, sliced

Steps:

  • To make the garlic oil, in a small saucepan, gently heat the oil over medium heat. Add the garlic and cook until it is fragrant but not colored, 3 to 5 minutes. Remove from the heat and let cool. Cover and let steep for 1 hour. Strain into a sterilized bottle or jar and discard the garlic. Use within 24 hours. (Or store in a sterilized container in the refrigerator for up to 1 week.)
  • To make the dipping sauce, place the oil at room temperature in a shallow bowl or decorative plate. Swirl a drizzle of balsamic decoratively into the center. Sprinkle with the pepper flakes, salt, and ground black pepper, and top with a light coating of cheese.
  • Serve as a dip for hot bread.

I love to have this on hand as a base for salad dressings, garlic bread, pizza topping, or just garlic flavored olive oil. For salad dressing whisk your favorite vinegar (balsalmic, red wine vinegar...) with a little honey, then add about the same amount of this dipping sauce and you have a wonderful dressing. For garlic bread brush this on slices of bread, broil for 2 - 3 minutes, flip the bread over and brush that side, broil it for an additional 2 minutes, then add shredded parmesan cheese. Yummy!

6 minced garlic cloves
1/2 teaspoon salt
1 teaspoon italian seasoning (or to taste)

Steps:

  • Combine ingredients and heat in pan until garlic just begins to sizzle. Remove from heat. Store in jar or plastic bottle. Mine keeps fine in the cupboard.
