CAROB ALMOND FREEZER FUDGE



Carob Almond Freezer Fudge image

Ready in 30 minutes, this carob freezer fudge is low in sugar while still tasting quite decadent. Feel free to change up the nut butter, sweetener, and mix-ins as you see fit. The coconut oil is necessary in this recipe though as it helps solidify the fudge when chilled. It melts quickly so be sure to enjoy it straight from the freezer and don't let it sit on the counter for more than a couple minutes.

Number Of Ingredients 8

1/2 cup virgin coconut oil, melted
1/4 cup creamy natural almond butter (roasted or raw are both fine)
1/4 cup carob powder, sifted
1 tablespoon unsweetened cocoa powder, sifted
2-3 tablespoons pure maple syrup (or liquid sweetener of choice), to taste
1 teaspoon pure vanilla extract
1/8-1/4 teaspoon fine grain sea salt
1/2 cup gluten-free rice crisp cereal (to add crunch - optional)

Steps:

  • Line a very small loaf pan (4" x 8") with plastic wrap for easy removal.
  • Mix all ingredients together in a large bowl until smooth.
  • With a spatula, scoop the mixture into the prepared pan and smooth out.
  • Freeze for about 20 minutes, or until solid.
  • Slice into squares and enjoy! Store leftovers in a container in the freezer as it melts quickly at room temperature.

These brownies feature neither sugar nor chocolate, rather they are sweetened with honey and use carob powder and brewed tea to give flavor.

2 cups whole spelt flour
1 cup carob powder
1 teaspoon salt
2 teaspoons baking powder
1 ½ cups honey
1 cup strong brewed vanilla hazelnut tea (such as Yogi®)
½ cup heavy cream
½ cup vegetable oil
2 eggs

Steps:

  • Preheat an oven to 350 degrees F (175 degrees C). Mix the spelt flour, carob powder, salt, and baking powder together in a large bowl.
  • Stir the honey, brewed tea, cream, vegetable oil, and eggs together in a separate bowl. Add the honey mixture into the flour mixture, and stir to thoroughly combine; pour into an 8x11-inch baking dish.
  • Bake in the preheated oven until a toothpick inserted into the center comes out gummy rather than wet, about 45 minutes. Allow to cool before refrigerating overnight for best results.

2/3 cup chopped peanuts
1/3 cup brown sesame seed
1 cup coconut
3/4 cup honey
1 cup peanut butter or 1 cup other nut butter
1 teaspoon vanilla

Steps:

  • In a bowl, stir dry ingredients together.
  • In a pot, melt honey with peanut butter over low heat.
  • When liquid, remove from heat and add dry mixture and vanilla; mix well.
  • Spread into 8x8-inch pan.
  • Refrigerate.

1 cup almond butter (or peanut, cashew, or sunflower seed butter- try what you've got!)
1 cup brown rice syrup
1 cup carob powder, unsweetened, sifted
1/2 cup walnuts, chopped

Steps:

  • Mist an 8-inch square pan with nonstick cooking spray and set aside. Combine nut butter and syrup in a saucepan and heat over low heat, stirring almost constantly until mixture is soft and blended.
  • Remove from heat and beat in carob powder with a sturdy wooden spoon. When well blended, stir in walnuts.
  • Spread evenly in prepared pan. Chill in refridgerator. cut into 16 squares when cool and firm.
  • TIP: to easily release brown rice syrup from the measuring cup, first coat the cup with oil or cooking spray.

EASY NO-COOK CAROB FUDGE



Easy No-Cook Carob Fudge image

From Jane Kinderlehrer's the Art of Cooking with Love and Wheat Germ (and Other Natural Foods.) This stuff is so good! And who says a hunk of butter is bad for you? Well, all right, this book is about 30 year old. I have made it substituting Smucker's Natural Peanut Butter for the butter and omitting the arrowroot. Very good. It's also good rolled in unsweetened coconut. (Oh! I think I used powdered milk once when I didn't have any powdered soymilk.)
