My sister, Cheryl, gave me this recipe. It has everything in it but the kitchen sink, hence the name. These are really great muffins and freeze well, that's if there are any left to freeze because they go so fast.

Number Of Ingredients 14

1 1/2 c flour
1 c sugar
1/2 c oatmeal, uncooked
2 tsp cinnamon
1/2 tsp salt
1 Tbsp nutmeg
2 c apples, peeled, chopped
1 1/2 c carrots, grated
1/2 c nuts, walnuts/sunflower seeds/almonds - chopped
1 c dried cranberries or raisins
3 eggs
1/2 c butter, melted
1 c coconut, shredded
1/2 c applesauce

Steps:

  • 1. In a large mixing bowl combine flour, sugar, oatmeal, cinnamon, salt and nutmeg. Add apples, carrots, cranberries/raisins, nuts and coconut. Stir until well mixed.
  • 2. Beat eggs in a medium bowl with a wire whisk. Stir in butter and applesauce.
  • 3. Add egg mixture to flour mixture. Stir until just moistened.
  • 4. Scoop into muffin cups. Bake in 350 degree oven for 20 to 25 minutes.

A little different from the other Morning Glory Muffins because it uses apple butter. This is a weight watchers recipe. Each muffin is 3 points.

Number Of Ingredients 17

2 1/2 cups all-purpose flour
1 cup firmly packed brown sugar
2 teaspoons baking soda
2 teaspoons ground cinnamon
1/2 teaspoon salt
2 cups shredded carrots
1 cup shredded apple
3/4 cup raisins
1/3 cup chopped pecans
1/4 cup sweetened flaked coconut
1 (8 ounce) can crushed pineapple, drained
1/3 cup vegetable oil
1/3 cup apple butter
2 teaspoons vanilla extract
2 large eggs
2 large egg whites
cooking spray

Steps:

  • Preheat oven to 350.
  • Combine flour, brown sugar, baking soda, cinnamon, and salt in large bowl.
  • Stir in carrot and next 5 ingredients. Make a well in center of mixture.
  • Combine oil and next 4 ingredients; stir with a whisk.
  • Add oil mixture to flour mixture, stirring just until moist.
  • Spoon batter evenly into muffin cups coated with cooking spray.
  • Bake at 350 for 25 - 30 minutes or until muffins spring back when touched lightly in center.
  • Remove muffins from pan immediately; let cool on a wire rack.
