ESSENCE OF SUMMER * RASPBERRY-HONEY
Our raspberry patch and our bees get the credit for this one! Perfect on your English muffins, scones, toast and to use as a glaze for chicken, pork or ham. Vary the spices and you'll have a whole different "essence." Let me know your favorites, please...we're doing a market survey and will be selling this to our poultry customers this summer. Thanks!

Steps:
- Combine honey, jam and cinnamon (don't stir too vigorously or you'll incorporate air into the mixture and you DO NOT want to do that).
- Store in pretty jars (give as gifts); keep in a cool, dark place.
- Try substituting any of these different spices to come up with a different seasonal "essence" such as.
- SPRING ESSENCE: lavendar buds (organic, you don't want to eat any sprays!).
- SUMMER ESSENCE: coriander, chive buds.
- AUTUMN ESSENCE: allspice, pumpkin pie spice, cinnamon.
- WINTER ESSENCE: cinnamon, nutmeg.
- ***On the FLIP side: How about a completely different berry or jam? Like blueberry, boysenberry, orange marmalade, etc.***.

RASPBERRY HONEY
A two-ingredient, all-natural sweetener that's packed with vitamin C, that's this jewel-toned raspberry honey. Try it spooned onto ricotta toast with a crack of black pepper; stirred into seltzer with a squeeze of lemon for a refreshing drink; or whisked with Dijon, apple-cider vinegar, and olive oil for a quick salad dressing.

- Combine honey and raspberries in a small saucepan; cook over low heat until just simmering. Remove from heat; let stand 30 minutes. Strain, pressing down on mixture with a spoon (save the solids for smoothies). Refrigerate in an airtight container up to 2 weeks.
RASPBERRY-HONEY SHMEAR
Nothing is better on a bagel that a thick layer of this fruity shmear. I like mine a bit chunky so that you get random bursts of tangy raspberry flavor mixed in with the cream cheese and sweet honey. If you prefer it smoother, place all ingredients into a mini food chopper or processor and blend until desired consistency. If you like things a little sweeter, add another tablespoon of honey.

- Place cream cheese in a bowl and microwave at 30% power in 10 second intervals until slightly soft but not warm, approximately 20 to 30 seconds.
- Place raspberries and honey over top and lightly mash raspberries with a fork. Stir mixture until evenly combined.
