2 cups sugar
1/4 cup espresso beans, crushed in a mortar and pestle
Ice cubes
8 shots very cold coffee-flavored liqueur, optional
8 shots very cold vodka, optional
8 cups very cold club soda

Steps:

  • Combine the sugar and 2 cups water in a medium saucepan, bring to a boil over high heat and cook until the sugar is completely melted, about 2 minutes. Remove from the heat, add the espresso beans and let sit at room temperature for 30 minutes.
  • Strain, cover and refrigerate until very cold, at least 2 hours.
  • Fill 8 tall glasses with ice. Add about 1/4 cup of the espresso syrup to each glass. If desired, add a shot of vodka and coffee liqueur with the syrup and stir well. Fill to the top with club soda.

FOR A LARGE BATCH (8 SERVINGS):
2 c granulated sugar
2 c water
1/4 c espresso beans, freshly crushed or coarsely ground
ice cubes
8 shots coffee-flavored liqueur (kahlua or tia maria), well chilled
8 shots vodka, well chilled
8 c club soda, well chilled

Steps:

  • 1. Combine the sugar and water in a medium saucepan, bring to a boil over high heat and cook until the sugar is completely dissolved, about 2 minutes. Remove from the heat, add the espresso beans, and let sit at room temperature for 30 minutes.
  • 2. Strain, cover and refrigerate until very cold, at least 2 hours.
  • 3. To make the sodas: Fill 8 tall glasses with ice cubes. Add about 1/4 cup of the espresso syrup to each glass. If desired, add a shot of coffee liqueur and vodka, and stir well.
  • 4. Fill with about a cup of club soda, and serve each soda with a straw.

1 cup coffee ice cream
1 teaspoon instant espresso powder dissolved in 2 tablespoons hot water and cooled
2 ounces (1/4 cup) sambuca, or to taste
3/4 cup chilled club soda
2 tablespoons finely chopped chocolate-covered espresso beans

Steps:

  • With a small ice-cream scoop or spoon, divide ice cream between 2 chilled stemmed glasses. Add espresso mixture, Sambuca and club soda and top with espresso beans.
