JACK'S FRUIT ICE CREAM

After trying a delicious frozen drink concoction prepared with jackfruit, I found myself truly delighted with the exotic and yet familiar flavor. I found myself on a personal quest to use this unfamiliar fruit in new and exciting ways.

Yield A little more than a quart

Number Of Ingredients 8

2 cups heavy cream
2 cups whole milk
8 egg large egg yolks
1 vanilla bean
pinch of salt
1/2 cup natural cane sugar
20 oz can jackfruit in syrup (available in Asian markets)
green food coloring (optional)

Steps:

  • In a heavy saucepan heat milk, heavy cream, and vanilla bean over medium high heat to a simmer. Turn heat down to medium.
  • In a separate bowl whisk together the eggs yolks, sugar, and salt. Sugar will dissolve when heated.
  • Slowly dizzle this egg/sugar mixture into the simmering milk mixture and whisk. Combining these too quickly will result in "scrambled eggs."
  • After you have added these two mixtures together, reduce the heat to a medium low temperature.
  • Remove the vanilla bean and split lengthwise scraping out seeds. Return the pod and the seeds back to the pot. I like to add several drops of food coloring at this point.
  • Continue to stir until the mixture coats the back of a spoon. Strain mixture through a fine-holed strainer, discarding the vanilla pod and refrigerate the mixture over night.
  • Follow manufacturer's instruction for your ice cream maker, and let the fun begin.
  • Meanwhile, drain the jackfruit and pulse it gently in your processor. We want small pieces of fruit for the ice cream.
  • After about 15 minutes into freezing your ice cream add small pieces of jackfruit to the mixture.
  • Serve your ice cream at your next dinner party and enjoy the mystery when your friends/family try to guess the secret ingredient! The flavor is both refreshing and delicious. Enjoy!

1 box yellow cake mix for a single layer cake, (recommended: Jiffy brand) prepared to package directions
2 tablespoons softened butter
1 McIntosh apple, diced
1/2 teaspoon ground cinnamon
1/4 cup sugar
1 pint butter pecan or rum raisin ice cream

Steps:

  • Preheat oven to directions on box. Mix cake mix to directions on box, using 1/2 cup water and 1 egg. Grease a 9 by 9-inch square cake pan or disposable cake pan with butter. Pour in cake batter. Toss apples with cinnamon and sugar and sprinkle on top of cake batter. Bake 20 to 25 minutes. Serve warm cake squares with small scoops of butter pecan or rum raisin ice cream.

1 apple, cored and chopped
salt to taste
1 tablespoon lemon juice
1 tablespoon raisins
½ teaspoon ground cinnamon
½ (1 gram) packet granular sucrolose sweetener (such as Splenda®), or more to taste
¼ cup water, or as needed

Steps:

  • Heat a small skillet over low heat; spray with cooking spray. Add apple, season with salt, and cook until warmed through, 1 to 2 minutes. Sprinkle lemon juice over apples and toss to coat. Stir in raisins, cinnamon, and sweetener. Cook until apples are easily pierced with a fork, adding water if mixture is too dry, 5 to 7 minutes.

4 large green apples
2 tablespoons butter
3 tablespoons brown sugar
1/2 teaspoon ground cinnamon
A pinch ground cloves or 1 whole clove
1 pint vanilla ice cream
1 spray container whipped cream
Freshly grated nutmeg

Steps:

  • Preheat a medium skillet over medium to medium-high heat. Peel and quarter the apples. Core each quarter. Slice the apples up. Add butter to the skillet, then apples. Saute 7 or 8 minutes, add sugar, cinnamon and cloves and cook 2 minutes more. Spoon the sauteed apples into dessert dishes and top with ice cream, whipped cream, and garnish with grated nutmeg.

1/4 cup light brown sugar
1 teaspoon ground cinnamon
Pinch freshly grated nutmeg

3 tablespoons unsalted butter
2 to 3 tablespoons dark rum, optional
1 pint dulce de leche ice cream

Steps:

  • In a medium bowl, toss the apples with the lemon juice, brown sugar, cinnamon, nutmeg, and salt. Melt the butter in a medium skillet over medium-high heat. Add the apple mixture and cook until apples are saucy and softened, about 5 minutes. Carefully add the rum and cook another minute.
  • Divide ice cream among 4 bowls and top with hot apples.
