KIELBASA KAPUSTA - SLOW COOKER RECIPE!

This recipe for Kielbasa Kapusta is my family's traditional Polish Kapusta recipe made in a slow cooker!

2 Tablespoons butter
2 Tablespoons bacon drippings
2 ½ cups sweet yellow onions (finely chopped)
2 32 ounce cans sauerkraut
1 teaspoon salt
1/2 teaspoon freshly ground black pepper
1/2 cup light brown sugar
1 3/4 cups water
3 pounds kielbasa (cut into 2-inch slices)

Steps:

  • In a large skillet over medium heat melt butter and bacon drippings until foaming subsides, about 2-3 minutes. Add onions and cook, stirring occasionally, until onions are translucent and edges begin to brown, about 8-10 minutes.
  • While onions cook rinse and drain sauerkraut at least twice. Make sure sauerkraut is well drained and add it to slow cooker along with onions, salt, pepper, brown sugar, water, and kielbasa. Give everything a good stir and cover. Cook on high for 1 hour, then reduce to low and cook for an additional 6 hours, stirring occasionally. Serve.

OMG! Eric's mother gave me her famous recipe handed down from mother to daughter. Eric had warned me she never gives out recipes so never ask. So I didn't but after I told a large group of people (at Eric's fathers wake) the secret ingredient in my potato salad, she took me a side and told me the recipe.

FOR EACH JAR OF SAUERKRAUT YOU WILL ADD
equal parts shredded cabbage to canned sauerkraut
2 whole cloves
2 bay leaves
thick kielbasa cut into 3 inch pieces

Steps:

  • 1. Drain and rinse canned Sauerkraut and put into a baking dish with equal amount of cabbage, add bay leaves and cloves. Add a little water and cook in 350 degree preheated oven for 1 1/2 hours. Turning every 1/2 hour. it will start to turn a smokey tan color. Add kielbasa cut on the diagonal in about 3 inch pieces. cook another 1 1/2 to 2 hours and serve.

1 (16 ounce) jar sauerkraut
1 medium onion, peeled & chopped
butter
2 (14 1/2 ounce) cans butter beans
1 (2 link) package kielbasa, cut in chunks
salt & pepper, to taste

Steps:

  • In a stockpot, add sauerkraut and bring to boil; rinse and drain.
  • Return sauerkraut to stockpot and add enough water to cover sauerkraut.
  • In a small skillet, saute onion in butter until soft. Add butter beans and cook at least 30 minutes.
  • Add kielbasa and cook 45 minutes to 1 hour, the longer the better.
  • Season with salt and pepper and serve with crusty bread.

2 1/2 lb pork country ribs, individually sliced
1 lb maple bacon sliced into 1" pieces (save the grease)
1 1/2 large yellow onions sliced
2 can(s) sauerkraut (14.5 oz each)
1 1/2 Tbsp garlic powder
1 2/3 tsp smoky paprika
16 oz chicken broth

Steps:

  • 1. Heat a large skillet hot enough for the bacon pieces. Spread them across the bottom (you don't need to separate each piece as they will separate as you stir). Stir them around to get the pieces cooked to medium texture. You don't want them crisp for this recipe. Take out the pieces & place them in a small bowl.
  • 2. Place the pork in the hot bacon grease and brown both sides including the edges. Remove from pan & put aside. Empty the bacon grease but do not wipe/wash. Leave the pan greased.
  • 3. Rinse the sauerkraut once and spread in heated pan with about 1/3 of the can juice. (I drain the cans and add water & drain again keeping approx.1/3 of the juice left in each can.)
  • 4. Add sliced onions to the pan and stir while frying to semi-cook the veggies and absorb remaining bacon grease (about 5 min.).
  • 5. Add the remaining ingredients including garlic powder & smoky paprika along with the chicken broth (I used College Inn but any good broth will do). Mix as well as you could as not to splash outside the pan. Turn down the heat to med/low and cover. Cook for 35-40 minutes.

A standard Russian peasant dish handed down from my great-grandfather. Nothing fancy, but I haven't met anybody yet who doesn't like it. Great on chilly days. (Note: my family used to add a dab or two of butter to their plates, but that's optional.)

2 rings kielbasa
2 heads cabbage
5 -6 medium potatoes
salt and pepper

Steps:

  • Peel potatoes and cut into quarters.
  • Cut kielbasa into 3-inch lengths.
  • Cut cabbage into wedges, discarding the outer leaves and core.
  • Throw everything into medium-to-large stewpot, with the cabbage on top; add just enough water so that it comes about one to two inches short of covering cabbage (cabbage will"cook down").
  • Bring to a boil, then reduce to medium heat and cook for about 20 minutes or until cabbage is tender and potatoes can be split easily with a fork.
  • Drain and serve in one big bowl or straight out of the pot, peasant style!

This is a truly authentic "Old World recipe"-friends of our family who moved here from Poland gave it to my mother years ago. It's been a favorite Sunday dinner with all of us ever since then. I've found that it's always a hit at potluck dinners, too. After my husband and I moved to our dairy farm, I discovered that this hearty, one-dish dinner was a perfect one for our busy schedule...and that any leftovers taste even better the second day!

1 tablespoon olive oil
1-1/2 pounds pork stew meat
1 medium onion, chopped
1-1/2 pounds smoked Polish sausage, cut in 1/2-inch slices
1 quart sauerkraut, rinsed and well drained
2 cups coarsely chopped cabbage
1 tablespoon caraway seeds
1 can (10-3/4 ounces) condensed cream of mushroom soup, undiluted
Pepper to taste

Steps:

  • In a large skillet, heat oil over medium-high heat. Add pork and onion; brown meat. Transfer to a 5-qt. slow cooker. Stir in remaining ingredients. Cook, covered, on low until pork is tender, 6-8 hours.
