1 lb fresh bulk pork sausage
2 cups prepared biscuit mix
2 medium sliced onions
3/4 cup condensed tomato soup
2/3 cup milk
3/4 cup water
1 tablespoon water

Steps:

  • Heat oven to 400°F.
  • Form sausage meat into 6 patties.
  • Simmer in frying pan with the 2 tablespoons water, keep covered.
  • Remove the cover, allow both sides to brown.
  • Put patties in casserole dish or 8x8x2-inch cakepan.
  • Brown the onions in the sausage fat.
  • Then put onions over sausage.
  • Pour tomato soup and water, combined, on top.
  • In a bowl, blend the biscuit mix and milk, creating a softened dough.
  • Roll to fit the baking dish and put on layered sausage, onion, and soup.
  • Lightly brush the dough with milk.
  • Bake 20 minutes.

Steps:

  • Heat oven to 400.
  • Form sausage meat into 6 patties.

  • Brown 1/2 pound sausage in a skillet with 1/4 cup chopped onion and 1 each diced celery stalk and carrot. Add 1/2 cup mashed potatoes, and salt and pepper. Roll out a can of refrigerated biscuit dough and cut into twelve 3-inch rounds. Top each with a spoonful of meat filling and fold in half; pinch to seal and brush with a beaten egg. Make slits in the top and bake at 350 degrees F until golden, about 15 minutes.

The orignal for this recipe came from the Burger Cookbook, a little paperback cookbook I purchased in the 1970's sometime and it has been loved to pieces. This is one of the favourites from that book with some slight modifications. In its original day, it would have been considered a budget stretcher with only the 1/2 lb of hamburger, now I consider it to be a heart friendly dish since I now use very lean beef and I modified a biscuit recipe for the topping to use oil instead of a saturated fat. You can tweak this by changing the veggies to your taste. Occasionally I will add some chopped mushrooms.

1/2 lb extra lean ground beef
3/4 cup chopped onion
3/4 cup chopped celery
1/4 cup chopped green bell pepper
1 (10 ounce) can condensed tomato soup
1 teaspoon prepared mustard
1 1/2 cups flour
2 teaspoons baking powder
1/2 teaspoon salt
5 tablespoons oil
1/2 cup 1% low-fat milk, approximately

Steps:

  • Cook beef and vegetables in an oven proof skillet until beef is browned. Stir in soup and mustard and continue heating for a few minutes.
  • Prepare dough: mix flour, baking powder and salt in a small bowl. Make a well in the center. Pour milk and oil into the well and stir with a fork till mixture comes together, adding a little additional milk if necessary. Knead the dough on a lightly floured surface for about a minute.
  • On a lightly floured surface (wax paper eases transfering dough to the pan), pat dough into a circle large enough to cover mixture in the skillet leaving a narrow space between edge of dough and pan.
  • Bake in a 450 F oven for about 15 minutes till biscuit is done and golden brown. To serve, turn out onto a serving plate so that biscuit is on the bottom "upside down" or cut biscuit into wedges and spoon out onto plates. Serves 4.

1 (8 ounce) can tomato sauce

Steps:

  • Saute the onion, green pepper and beef in oil until brown.
  • Drain grease.

Nonstick cooking spray
16 ounces frozen hash browns, thawed
1 tablespoon unsalted butter, melted
1/3 cup finely grated Parmesan
1/2 teaspoon freshly ground black pepper
4 cooked sausage links, sliced 1/4-inch thick
1 bunch scallions, thinly sliced
1 cup shredded Cheddar
3 large eggs
1/2 cup half-and-half, whole milk or heavy cream
1/2 teaspoon kosher salt
1/2 teaspoon freshly ground black pepper
Hot sauce, to taste, optional

Steps:

  • For the crust: Preheat the oven to 425 degrees F. Spray a 10-inch cast-iron skillet with nonstick spray.
  • Spread the hash browns over a layer of paper towels to air-dry for 10 to 15 minutes (alternatively, you can press them vigorously between layers of paper towels 2 to 3 times).
  • In a medium bowl, stir the dried hash browns, melted butter, Parmesan and pepper together. Press the mixture into the base and evenly up the sides of the prepared skillet. Transfer to the oven and bake until the potatoes begin to become golden brown and crisp, about 15 minutes.
  • Meanwhile, for the filling: Toss the sausage, scallions and 3/4 cup of the Cheddar in a medium bowl to combine.
  • In another medium bowl, whisk together the eggs, half-and-half, salt, pepper and hot sauce, if using.
  • Carefully press the sausage mixture into the browned crust. Pour the egg mixture over the sausage and sprinkle with the remaining 1/4 cup Cheddar. Carefully transfer the skillet to the oven. Bake until the crust is deeply browned and very crisp and the filling appears set when you gently shake the skillet, 35 to 40 minutes. Cool at least 10 minutes before slicing and serving. Serve warm or at room temperature.

Steps:

  • Preheat oven to 425°. In a saucepan, cook sausage, onion and green pepper over medium heat until meat is no longer pink; drain. Stir in 2 tablespoons flour, basil and fennel. Add tomato sauce. Bring to a boil; cook and stir for 2 minutes. , Transfer to an ungreased 13x9-in. baking dish. Sprinkle with mozzarella cheese. Place remaining 1 cup flour in a large bowl. In another bowl, whisk eggs, milk, oil, salt and, if desired, Parmesan cheese. Stir into flour until blended; pour over casserole. , Bake, uncovered, until browned, 25-30 minutes.

From The American Country Inn and Bed and Breakfast Cookbook, Volume Two. Submitted by the Shenandoah Countryside B&B in Luray, Virginia. I'm quoting the recipe, but when I made it, I didn't use a double boiler -- I just cooked the curd on very low and stirred continuously. Also, for some reason when I beat the egg whites, they never got stiff like your regular meringue, but it didn't seem to make a difference. Also, from the ingredients, it seems to be gluten free. Also, I didn't use all the whipped cream but did spread some on top as a frosting rather than a garnish. Again, I always forget to keep track of how much time it took.

4 eggs, separated
cream of tartar, a pinch
1 1/2 cups sugar
1 cup pecan pieces, finely chopped
2 lemons, juice of
1 lemon, grated rind of
1/2 teaspoon gelatin (unflavored)
1 tablespoon water
1 1/2 cups whipping cream, whipped
vegetable oil cooking spray

Steps:

  • Spray a 9 inch pie plate. In a large bowl with an electric mixer, beat the egg whites with cream of tartar until foamy. Gradually add 1 cup of sugar and beat until stiff. Fold in the nuts. Line the bottom and sides of the prepared pie plate with meringue. Bake in a 325 oven for 25 minutes. Push down to form the shape of a crust, leaving a 1 inch rim. Bake for 25 minutes more. Cool the meringue completely.
  • In a medium bowl, beat the egg yolks until slightly thickened. Add lemon juice, rind and 1/2 cup of sugar. In the top of a double boiler over simmering water, cook the lemon mixture, stirring constantly until thick enough to coat the back of a wooden spoon. Soften the gelatin in the water. Add the gelatin to the lemon mixture. Stir to dissolve. Cool completely. Fold 2/3 of the whipped cream into the lemon mixture. Pour the lemon filling into the meringue. Garnish with remaining cream.

1/3 cup chopped onion
1 tablespoon butter
3/4 cup milk
1 (3 ounce) package cream cheese
3 eggs
1 cup shredded cheddar cheese
1/2 teaspoon Worcestershire sauce
1/2 teaspoon salt (use less if the sausage is salty)
1/8 teaspoon pepper
1 (9 inch) deep dish pie shells, partially baked and cooled

Steps:

  • Preheat the oven to 375°.
  • In a heavy skillet over medium heat, crumble the sausage with a fork.
  • Sauté the sausage until completely cooked.
  • Drain off the fat, remove the sausage, and set aside.
  • Melt the butter in another skillet over medium heat.
  • Sauté the onions in the butter until tender.
  • Add the milk and heat until steam rises, but do not boil the milk.
  • Cut the cream cheese into small pieces, add it to the onion mixture, and remove the pan from the heat.
  • In a large bowl, beat the eggs, then add the cheddar, the onion mixture, the Worcestershire, salt, and pepper.
  • Mix thoroughly and pour this into the pie crust.
  • Top with cooked sausage, and bake for 30 minutes, or until set.
