A fairly simple coffee cake. A great treat for yourself and the family yet pretty enough for company. This is being posted for the British/Irish section of the tour.

3/4 cup butter, softened
1/2 cup brown sugar
1 tablespoon lemon juice
3 large eggs
1 cup all-purpose flour
1/2 cup whole wheat flour
2 teaspoons baking powder
1/2 teaspoon salt
1 1/2 teaspoons cinnamon
1/2 teaspoon nutmeg
1/2 teaspoon ginger
1/2 teaspoon allspice
1/2 cup milk
1/2 cup raisins
2 medium apples, peeled & sliced
2 tablespoons honey, warmed
3 tablespoons cinnamon sugar, for topping

Steps:

  • Preheat oven to 350*.
  • Beat butter and brown sugar in large bowl until fluffy, add lemon juice & eggs & beat well.
  • In another bowl, stir together the flours, baking powder, salt and spices.
  • Fold flour mixture into brown sugar mixture, add milk & raisins; don't overbeat.
  • Pour batter into a greased 9 x 13 springform pan & Arrange apples on top, pressing them down somewhat into the batter.
  • Bake 1 hour then drizzle with warm honey & sprinkle with cinnamon sugar.

1 cup flour
1/2 cup whole wheat flour

cinnamon sugar (topping)

Steps:

  • Preheat oven to 350.
  • Grease a 9x13 springform pan.
  • Beat butter and brown sugar until fluffy,.
  • Add lemon juice & eggs, beat well.
  • In another bowl, stir together the flours and cinnamon.
  • Fold flour mixture into brown sugar mixture, add milk & raisins.
  • Pour batter into 9 x 13 springform pan. Arrange apples on top. Bake 1 hour. After taking cake out of oven brush with warm honey and sprinkle with cinnamon sugar.

1 (18 1/4 ounce) box yellow cake mix
3 eggs
1 cup plain yogurt
1 (21 ounce) can apple pie filling
3 tablespoons sugar
1 tablespoon cinnamon
2 teaspoons flour

Steps:

  • In large mixing bowl, combine cake mix, eggs and yogurt.
  • Beat for 3 minutes.
  • Spread into greased and floured 13x9 pan.
  • Arrange pie filling over the batter.
  • Combine cinnamon, sugar and flour.
  • Sprinkle on top of cake.
  • Bake at 350 for 40-45 minutes.
  • Serve warm.

1/2 teaspoon ground cinnamon
1/4 cup reduced-calorie margarine, melted
2 medium granny smith apples, peeled cored and diced into 1/4-inch cubes
2 tablespoons lemon juice
1 tablespoon all-purpose flour
1/2 cup Splenda granular (low calorie sweetener)
1 teaspoon ground cinnamon
2 tablespoons reduced-calorie margarine
1/2 cup softened reduced-calorie margarine
3/4 cup egg substitute, at room temperature
1 teaspoon vanilla extract
1 cup Splenda granular (low calorie sweetener)
1 1/2 cups all-purpose flour, sifted
1 teaspoon baking soda
1 teaspoon baking powder
1/2 cup skim milk, at room temperature

Steps:

  • Preheat oven to 350°F Spray 9x9x2" metal baking pan with vegetable cooking spray and set aside.
  • Topping: In medium bowl, combine SPLENDA, flour, cinnamon and margarine. Stir until well blended. Separate mixture into small clumps, approximately ¼ teaspoon each and place on cookie sheet. Bake 8-10 minutes. Cool to room temperature. Crumble into fine, uniform texture. Set aside.

1 tablespoon unsalted butter
2 granny smith apples, medium-large, peeled and cored, cut into 1/4-inch dice
1 1/4 cups granulated sugar
2 cups unbleached all-purpose flour
2 teaspoons ground cinnamon, divided
1 teaspoon table salt
10 tablespoons unsalted butter, softened (1 1/4 sticks)
1 teaspoon baking powder
1/2 teaspoon baking soda
3/4 cup buttermilk (or low-fat plain yogurt)
1 large egg, at room temperature
1 teaspoon vanilla extract
3/4 cup walnuts, finely chopped (or pecans)
1/2 cup dark brown sugar, packed

Steps:

  • Heat 1 tablespoon butter in a 10-inch skillet (preferably nonstick) over high heat until golden. Add apples, cover, and cook over high heat, stirring frequently, until they are dry and very tender, 2 to 3 minutes.
  • Remove from heat, sprinkle apples with 2 tablespoons sugar, and lightly toss until glazed.
  • Cool to room temperature.
  • Adjust oven rack to center position and heat oven to 350 degrees.
  • Generously grease bottom and lightly grease sides of 10-inch springform pan.
  • Sprinkle bottom of pan with dry bread crumbs, then shake lightly to coat.

  • Add buttermilk or yogurt, egg, and vanilla; whisk vigorously until batter is thick, smooth, fluffy, and frostinglike, 1 1/2 to 2 minutes.
  • Fold in apples using a rubber spatula, then scrape batter into prepared pan and smooth top.
  • Add nuts, brown sugar, and remaining teaspoon cinnamon to reserved crumbs; toss with a fork or your hands until blended.
  • Sprinkle crumbs over batter, pressing lightly so that mixture adheres.
  • Bake cake until center is firm and cake tester comes out clean, 50 to 55 minutes (See Tip *).
  • Transfer cake to rack; remove pan sides.
  • Let cake cool completely, about 2 hours, before serving.
  • When completely cooled, cake can be slid off pan bottom onto serving plate.

  • *Do not insert a skewer into this cake to test for doneness until the center appears firm when the pan is shaken. If you do, the topping may squeeze air out, and the middle of the cake may sink.

1 cup golden brown sugar, firmly packed
2 tablespoons golden brown sugar, firmly packed
3/4 cup sugar
4 teaspoons ground cinnamon
3/4 teaspoon salt
1/2 teaspoon ground ginger
3/4 cup vegetable oil
1 teaspoon baking powder
1 lb granny smith apple, peeled and chopped
1 cup buttermilk
1 large egg

Steps:

  • Preheat oven to 325.
  • Butter and flour 9-inch square pan.
  • Mix flour, brown sugar, sugar, 2 1/2 teaspoons cinnamon, salt and ginger in large bowl.
  • Add oil and stir until mixture resembles coarse meal.
  • Transfer 3/4 cup of mixture to small bowl.
  • Stir remaining 1 1/2 teaspoons cinnamon into mixture in small bowl and reserve for topping.
  • Mix baking soda and baking powder into flour mixture in large bowl.
  • Add apples. Whisk buttermilk and egg in another small bowl to blend.
  • Add to apple mixture and stir just until combined.
  • Pour batter into prepared pan.
  • Sprinkle reserved topping evenly over.
  • Bake cake until tester inserted into center comes out clean, about 1 hour 20 minutes.
  • Transfer to rack and cool slightly.
