3 cups shredded Mexican cheese blend, divided
2 cups cubed fully cooked ham
1 small green pepper, chopped
1 small onion, chopped
1 medium tomato, chopped
12 flour tortillas (6 inches)
10 large eggs
2 cups half-and-half cream
2 tablespoons all-purpose flour
1/2 teaspoon salt
1/2 teaspoon onion powder
1/2 teaspoon pepper
TOPPINGS:
4 green onions, thinly sliced
1/2 cup cherry tomatoes, quartered
1 can (2-1/4 ounces) sliced ripe olives, drained, optional

Steps:

  • Preheat oven to 350°. Place 2 cups cheese, ham, green pepper, onion and tomato in a large bowl; toss to combine. Place 1/2 cup mixture off center on each tortilla. Roll up and place in a greased 13x9-in. baking dish, seam side down., In another bowl, whisk eggs, cream, flour and seasonings until blended; pour over enchiladas. Sprinkle with remaining cheese; add toppings., Bake, covered, 30 minutes. Uncover; bake until cheese is melted and a knife inserted in egg portion comes out clean, 10-15 minutes longer. Let stand 10 minutes before serving. Freeze option: Cover and freeze unbaked casserole. To use, partially thaw in refrigerator overnight. Remove from refrigerator 30 minutes before baking. Preheat oven to 350°. Cover casserole with foil; bake as directed, increasing uncovered time to 25-35 minutes or until cheese is melted and a thermometer inserted in center reads 165°.

MEXICAN ENCHILADA CASSEROLE

This casserole is especially good for those like myself that don't really care for canned enchilada sauce. It also freezes well and can be assembled, frozen, then baked later. Use 1/2 cup homemade taco seasoning if you have it; chili powder can be found online.

1 ½ cups canned tomato sauce
⅓ cup chili powder (such as Gebhardt®)
½ cup water, or as needed
1 ½ pounds ground turkey
1 ½ cups chopped onion
2 (1 ounce) packages taco seasoning mix, divided
⅔ cup water
16 (5 inch) corn tortillas, cut in half
3 cups shredded sharp Cheddar cheese
3 cups shredded Monterey Jack cheese
1 ½ (10 ounce) bags shredded iceberg lettuce
2 cups chopped fresh tomatoes

Steps:

  • Preheat oven to 425 degrees F (220 degrees C). Spray a 3-quart casserole dish with cooking spray.
  • Combine tomato sauce with chili powder and 1/2 cup water or as desired in a small saucepan over medium heat; bring to a simmer and stir to make a pourable sauce. Remove from heat and set enchilada sauce aside.
  • Cook and stir ground turkey, onion, and 1 envelope of taco seasoning mix in a large skillet over medium heat, chopping turkey as you cook, until meat is crumbly and no longer pink, about 10 minutes. Stir in 2/3 cup water and remaining envelope of taco seasoning mix and cook, stirring often, until moisture has evaporated from turkey mixture. Mix 1 cup of enchilada sauce into turkey mixture and remove skillet from heat.
  • To layer the casserole, spread 8 tortilla halves into the bottom of the prepared baking dish, overlapping as necessary to fit. Toss sharp Cheddar cheese and Monterey Jack cheese together in a bowl and spread 1/4 of the cheese mixture over the tortillas in an even layer. Top with 1/3 the turkey mixture, 1/3 the lettuce, 1/3 the chopped tomatoes, and about 1/3 cup of the remaining sauce. Repeat layers twice more. Place 8 tortilla halves on top of the casserole and spread with remaining 1 1/4 cup shredded cheese mixture.
  • Bake in the preheated oven until cheese on top of casserole is melted and browned, 20 to 30 minutes.

1 pound ground beef (90% lean)
1 can (10 ounces) enchilada sauce
1 cup salsa
6 flour tortillas (10 inch)
2 cups fresh or frozen corn
4 cups shredded cheddar cheese

Steps:

  • Preheat oven to 350°. In a large skillet, cook ground beef over medium heat until no longer pink, breaking it into crumbles; drain. Stir in enchilada sauce and salsa; set aside. , Place 2 tortillas, overlapping as necessary, in the bottom of a greased 13x9-in. baking dish. Cover with a third of the meat mixture. Top with 1 cup corn; sprinkle with 1-1/3 cups cheese. Repeat layers once, then top with remaining tortillas, meat and cheese. , Bake, uncovered, 30 minutes or until bubbly., Freeze Option: Cover and freeze unbaked casserole. I made this for breakfast pot luck and came home with an empty plate and lots of compliments. I used half pork and half beef chorizo and used the full 18 ounces, also a medium salsa. The original recipe is from Chew Out Loud and calls for the small amounts listed. The larger amounts reflect what I used.

12-18 oz chorizo sausage, no casings, i used 1/2 pork and 1/2 beef
10 eggs, large
1/4 c milk, whole
1/4 tsp salt, i left out and it was fine
1/2 tsp garlic powder
3 Tbsp olive oil
1-2 c black beans, rinsed and drained, i used 2 cups
1/2 tsp salt
12 corn tortillas, 8 inches each
15 oz mexican blend shredded cheese
20-28 oz enchilada sauce, canned, i used 28 oz.
1 c chunky salsa
2 1/4 oz sliced olives, drained
3 Tbsp fresh cilantro, chopped for garnish, i left off

Steps:

  • 1. Grease a 13x9 glass baking dish; set aside. Preheat oven to 350F.
  • 2. In a large nonstick skillet, cook chorizo while stirring and breaking it up into small pieces until cooked through. Transfer to a bowl and set aside.
  • 3. In a bowl, beat eggs together with milk, ¼ tsp salt, and garlic powder.
  • 4. In same skillet, heat olive oil over medium heat about 1 min. Add beaten eggs and cook, gently pushing and stirring cooked portions to the center and allowing uncooked portions to come underneath until scrambled eggs are set. Transfer to a bowl and set aside.
  • 5. In a bowl, combine enchilada sauce, ½ tsp salt, and salsa.
  • 6. Spread a third of the salsa mixture on the bottom of prepared baking pan. Layer 6 corn tortillas, followed by half of the scrambled eggs, half of the chorizo, and half of the beans. Sprinkle with half of the cheese. Spread a third of the salsa mixture on top, followed by the remaining tortillas, scrambled eggs, chorizo, and beans. Spread the remaining third of salsa mixture. Sprinkle with the rest of the cheese. Top with sliced olives.
  • 7. **This is were you want to cover and chill if making ahead.**
  • 8. Cover with foil and bake 20 minutes. Remove foil and bake another 20 minutes or until cheese is bubbly. **If made ahead let set at room temp about 30 to 40 minutes before baking.**
  • 9. Garnish with chopped cilantro.
  • 10. * Notes: Casserole may be assembled the night before, covered and chilled overnight, and baked the next morning. If cold, additional bake time may be required. Regular sausage may be used if you don't want any heat, but Chorizo is highly recommended.
