My kids love when I make these yummy muffins. After trial and error of several muffin recipes, I've come up with what I think is my favorite one. Enjoy!

cooking spray
2 cups all-purpose flour
½ cup white sugar
2 tablespoons brown sugar
1 tablespoon baking powder
½ teaspoon salt
1 egg
1 ¼ cups milk
⅓ cup vegetable oil
2 teaspoons vanilla extract
¾ cup mini chocolate chips

Steps:

  • Preheat oven to 400 degrees F (200 degrees C). Lightly spray 48 miniature muffin cups.
  • Mix flour, white sugar, brown sugar, baking powder, and salt together in a bowl.
  • Lightly beat egg in a separate bowl; stir in milk, vegetable oil, and vanilla extract. Mix liquid mixture into flour mixture until incorporated. Fold in chocolate chips. Fill muffin cups 3/4 full with batter.
  • Bake in the preheated oven until a toothpick inserted in a muffin comes out clean, 10 to 11 minutes. Cool for 1 minute before transferring muffins to a wire rack.

1 c flour
1/2 tsp bakn powdr
1/2 tsp bakn soda
1/4 tsp salt
2 over ripe bananas, mashd
1/2 c sugar
1 large egg, beatn
3 Tbsp butter, meltd
1 tsp vanilla
1 Tbsp peanut butter
6 miniature reeses peanut butter cups, each cut into quartrs
CRUMB TOPPING
3/4 c brown sugar
2 Tbsp flour
1/2 tsp cinnamon
1 Tbsp butter

Steps:

  • 1. MIX IN BOWL FLOUR, BAKN POWDR, BAKN SODA N SALT. IN SEPERATE BOWL MIX MASHD BANANAS, SUGAR, BEATEN EGG, MELTD BUTTER, VANILLA N PEANUT BUTTER. ADD WET INTO DRY...JUST UNTIL MOISTND.
  • 2. WITH A SMALL SPOON FILL UP A SPRAYD OR PAPER LINED MINI MUFFIN PAN . NOW PRESS LIGHTLY IN EACH MUFFIN A QUARTR PIECE OF REESES PEANUT BUTTER CUP.
  • 3. PREHEAT OVEN TO 375.....IN A SMALL BOWL COMBINE BROWN SUGAR N FLOUR AND BUTTER....I USE MY FINGERS FOR THIS PART....JUST RUB SMALL PIECES OF BUTTER INTO MIXTURE :). ADD CHOPPD PEANUTS FOR A CRUNCHY TOPPING :)
  • 4. SPRINKLE CRUMBS ONTOP OF EACH MUFFIN. NOW BAKE FOR 10-12 MINUTES.

Peanut butter banana muffins - these are high in protein and very healthy! If you want to be really decadent you could add 1 cup of mini chocolate chips too.

3 mashed bananas
1 cup flour
1/2 cup wheat germ
1 cup oats
1/2 cup brown sugar
1 1/2 teaspoons baking powder
1/2 teaspoon baking soda
1/2 teaspoon salt
3/4 cup peanut butter
2 tablespoons butter
1 teaspoon vanilla
1 large egg
1/2 cup milk

Steps:

  • Mix dry ingredients in one large bowl.
  • Put peanut butter and butter in glass measuring cup and microwave until melted, about 40 seconds.
  • Add peanut butter/butter mix to wet ingredients.
  • Add wet ingredients to dry and mix gently. (Not too much!)
  • Bake at 400 degree oven for 15-20 minutes.

Elvis was known for his love of peanut butter and bananas, but I added a few extra goodies that I think he would approve of.

Yield about 50 cookies

Number Of Ingredients 13

Nonstick cooking spray
3 cups sugar
2 sticks (1 cup) butter, softened
1 cup peanut butter (crunchy or smooth, your call)
2 tablespoons molasses
1 tablespoon pure vanilla extract
Big pinch of baking powder
2 teaspoons kosher salt
3 very ripe bananas
2 1/2 cups all-purpose flour
1 1/4 cups chocolate chips
5 ounces pretzels, smashed (about 3/4 cup pretzel crumbs)
10 bacon strips, cooked crisp and chopped fine

Steps:

  • Preheat the oven to 350 degrees F and spray a baking sheet or sheets with cooking spray.
  • In a big bowl, mix the sugar, butter, peanut butter, molasses, vanilla, baking powder and salt until it's all one color. Add the bananas and mash them up real good in there.
  • Add the flour and gently mix until incorporated, with no lumps.
  • Fold in the chocolate chips, pretzel pieces and bacon.
  • Using two spoons, form balls about the size of a large walnut and drop them on the prepared baking sheet(s) at least 2 inches apart. Place the sheet(s) in the fridge to chill for 10 minutes.
  • Bake for 12 minutes, or until golden on the outside and super gooey in the middle, just like the King would want them. Let cool on a wire rack off the baking sheet.
