2 slices whole wheat bread, toasted
1 Tbsp. KRAFT Real Mayo
1 lettuce leaf
1 slice tomato
1 KRAFT Singles

Steps:

  • Heat small skillet sprayed with cooking spray on medium heat. Break egg into skillet; cover. Cook 4 to 5 min. or until white is completely set and yolk begins to thicken but does not become firm.
  • Spread 1 toast slice with mayo.
  • Fill toast slices with lettuce, tomato, Singles and egg.

An ELT is like a BLT, but with one obvious caveat - it uses eggs instead of bacon. Of course, bacon is great when you're craving something hearty and it adds a nice crispy texture to sandwiches, but if you're a vegetarian or if you just hate dealing with a bacon-greased pan, eggs are a welcome substitute. The runny, creamy yolk gives the sandwich a rich, buttery appeal while the crisp lettuce and fresh tomato keep things on the lighter side. Lather the bread with homemade basil mayonnaise and you've got a meal fit for breakfast, lunch and dinner.

3 tablespoon mayonnaise
3 tablespoon thinly sliced fresh basil leaves
1 teaspoon dijon mustard
1/4 teaspoon coarse salt
1/4 teaspoon freshly ground black pepper
2 large eggs
4 slices hearty whole grain country-style bread
4 leaves red-tipped or green leaf lettuce
1 large or 2 medium-sized heirloom tomato, ends trimmed, thinly sliced

Steps:

  • Step 1: Mix 3 tablespoons mayonnaise, 3 tablespoons basil, 1 teaspoon Dijon mustard, ¼ teaspoon salt and ¼ teaspoon pepper in a small bowl. Set aside.
  • Step 2: Heat a small nonstick skillet over medium heat until hot. Spray with nonstick spray or olive oil. Crack 2 eggs into the skillet. Reduce heat to low, cover the pan and cook until egg yolks are medium set, 3 to 4 minutes.
  • Step 3: While the eggs cook, toast 4 bread slices.
  • Step 4: Spread mayonnaise mixture on one side of each piece of toasted bread. Top 2 bread slices with 2 lettuce leaves and half of the tomato slices. Top with fried egg and then add the second piece of bread to make a sandwich. Serve with plenty of napkins.

A quick, easy, and basic recipe for patty melts. I used Jewish rye bread but any bread will work as long as it's rye. I double the cheese but feel free to use 1 slice per patty melt.

1 pound ground beef
½ teaspoon salt
¼ teaspoon ground black pepper
2 tablespoons butter
1 large onion, sliced
6 teaspoons mayonnaise
6 slices rye bread
6 slices sharp Cheddar cheese

Steps:

  • Season ground beef with salt and pepper and divide into 3 equal-sized balls. Shape each ball as close as possible to the shape of the bread. Make an indentation in the center of each patty with your thumb.
  • Melt butter in a skillet over medium heat and cook onion until soft and translucent, 5 to 8 minutes. Remove from the skillet and divide into 3 equal portions. Place beef patties into the same skillet and cook until desired doneness, 3 to 5 minutes per side.
  • Meanwhile, spread 1 teaspoons mayonnaise on one side of each slice of bread.
  • Place bread mayonnaise side-down in the skillet. Top with 1 slice of cheese, 1 beef patty, 1/3 of the onions, a second slice of cheese, and another slice of bread, mayonnaise side up. Cook bread until golden brown and cheese has started to melt, 3 to 4 minutes. Flip each sandwich over and cook an additional 3 to 4 minutes.

1 tablespoon milk
2 slices white bread
1 pinch salt and pepper to taste
1 slice American cheese

Steps:

  • Crack the egg into a microwave-safe cereal bowl and whisk in the milk. Season with salt and pepper. Cook in the microwave on 100% power for 1 to 2 minutes, or until cooked through.
  • While the egg is cooking, toast the bread. Use a spoon to remove the cooked egg from the bowl and set it on one piece of toast. Top with a slice of cheese and the other piece of toast. Cook in the microwave until cheese is melted, about 15 seconds.

2 hard-boiled eggs, sliced lengthwise
2 slices white bread
1/4 cup mayonnaise
2 slices tomatoes
2 -4 leaves iceberg lettuce
1 dash sea salt
1 dash pepper

Steps:

  • Toast bread, let cool.
  • Spread mayonnaise on one side of each piece of bread.
  • Top one slice of bread with 2 slices of tomatoes, season per preference with both sea salt and pepper.
  • Arrange eggs evenly over tomato slices.
  • Top eggs with lettuce and place other slice of bread on top.
  • While lightly pressing sandwich together from top down, cut sandwich in half.
