This soup is a delicious combination of potatoes, celery, garlic, and onion. Top with Parmesan cheese, fresh basil, and parsley flakes.

1 tablespoon olive oil
1 red onion, chopped
4 cloves garlic, minced, or more to taste
2 large russet potatoes, cut into 1-inch pieces
1 bunch celery with leaves, diced
4 cups water
1 cube chicken bouillon (such as Knorr®)
½ tablespoon garlic salt, or more to taste
ground black pepper to taste

Steps:

  • Heat oil in a stockpot over medium-high heat; stir in onion. Cook and stir until onion has softened and turned translucent, about 5 minutes. Add garlic and cook until fragrant, about 1 minute. Add potatoes and celery and saute until celery is tender and slightly browned, 3 to 5 minutes. Add water, bouillon cube, garlic salt, and pepper. Bring to a boil and cook until potatoes are tender, 20 to 25 minutes.
  • Fill blender halfway with soup. Cover and hold lid down with a potholder; pulse a few times before leaving on to blend. Pour into a pot. Repeat with remaining soup. Serve hot.

I had a nice bunch of fresh organic celery I wanted to put to use and I was thinking about cream of celery soup. The only recipe for it I've ever tried was terrible, so I figured I would wing it and invent my own. Here it is, and it's pretty darn good!

3 Tbsp butter
2 c chopped celery, with a few leaves
1/2 c chopped onion
2 clove garlic, minced
1 c chicken broth, low salt, low fat
1 c milk
1 c sour cream
2 bay leaves
1/4 tsp celery seed
salt and pepper to taste
1 tsp cornstarch

Steps:

  • 1. In a large saucepan, melt butter; add onion and celery and cook over medium heat about 10-15 minutes until tender. Add the garlic and cook another minute.
  • 2. Stir in the chicken broth, milk, and sour cream; mix thoroughly.
  • 3. Add the bay leaves, salt and pepper to taste. Reduce heat and simmer about 15 minutes or until heated through.
  • 4. Sprinkle cornstarch into soup and stir until it starts to thicken slightly.
  • 5. Serve while hot. Delicious with a crusty bread or crackers. Or sprinkle some seasoned croutons over the soup for extra flavor.

Number Of Ingredients 11

1 tablespoon olive oil (or vegetable)
3 cups sliced celery
2 cups diced potatoes (about 1 lb)
1 cup chopped onion
1 teaspoon minced garlic
2 cans low sodium chicken broth (10 3/4 oz each)
1/2 cup water
1/2 cup skim milk
1 tablespoon Dijon mustard
shredded cheese (to garnish)
parsley (to garnish)

Steps:

  • Heat oil in large saucepan over medium-high heat until hot.
  • Add celery, potatoes, onion and garlic; cook and stir about 5 minutes or until celery is crisp-tender.
  • Add broth; bring to a boil.
  • Reduce heat and simmer, uncovered, about 10 minutes or until potatoes are fork-tender.
  • Place half the soup mixture in food processor or blender; process until smooth.
  • Pour into remaining mixture.
  • Stir in milk, water and mustard; heat 1 to 2 minutes until hot.
  • Sprinkle with shredded cheese.

6 medium potatoes, peeled and diced
2 medium onions, chopped
1 large carrot, sliced thin
1 - celery stalk, liced thin
1 tablespoon(s) parsley flakes
1 tablespoon(s) salt
1/8 teaspoon(s) pepper
2 tablespoon(s) butter
1 can(s) (13 oz.) evaporated milk
5 cup(s) water

Steps:

  • Place all ingredients, except milk, in crockpot. Cover and cook on low for 10-12 hours, or on high for 3-4 hours.
  • At the beginning of the last hour, stir in the milk.
  • NOTE: You may add 1 or 2 cloves of garlic if you so desire. You may also add cheese, bacon bits, any number of things, but this is a simple recipe that you can throw together quickly in the morning and forget.

I was looking for a soup that would be beneficial for your health, especially when one had a cold. This recipe appeared on the web and looked like it would fit the bill.

2 tablespoons olive oil
1 small onion
1 leeks or 1 bunch green onion
6 stalks celery
1/2 teaspoon kosher salt
1 medium potato
4 garlic cloves
bay leaf
parsley
thyme
7 cups water or 7 cups chicken stock

Steps:

  • Chop onion, Green Onion and Celery. Heat Oil and cook veggies for ten minutes. Make sure not to color veggies while cooking. Make a garni of 2 sprigs of parsley and thyme and one bay leaf. Add water or chicken stock, I used one can of chicken stock and the rest water. Add potato and garlic which have been halved. Cook 30-40 minutes adding additional salt and pepper for taste.When soup is done remove garni and blend the whole soup. If there is strings from the veggies you can strain. Reheat. Make garnish from piece of celery for the top of soup when you serve, by making tiny strips not slices.

This is a variation of my usual potato soup. I created this one simply because I had a bunch of celery I wanted to use up. It was deemed very tasty by my boyfriend, and I agree. 10-31-14

4 medium potatoes, peeled and cubed
1 c celery, chopped small
1/4 c onion, chopped
1/2 c chicken broth
1-1/2 c half & half
1/4 tsp salt
1 pinch pepper
1/4 tsp garlic powder
1 Tbsp butter
1/2 c cheese of your choice

Steps:

  • 1. Place celery, potatoes, and onion in a pot of boiling salted water. Simmer for 15-20 minutes; drain.
  • 2. Stir in all other ingredients except cheese and simmer, uncovered, for 30 minutes.
  • 3. Add cheese and allow to melt completely; serve while hot.
