SHIRRED EGGS : EASY AND ELEGANT
The easiest elegant way to dress up eggs for breakfast! This is a simple recipe with a huge payoff. The cream in the bottom gives the eggs a silky texture and although I give two options below, almost anything can be added to them. Great for breakfast in bed!

Steps:
- Preaheat oven to 375°F.
- Take 4 ramekins, and spread 1 TBS of butter on the sides and bottom of each.
- Pour 1 tsp cream into each ramekin.
- Crack an egg into each ramekin, and use a spoon to move the yolk into the center of the ramekin.
- Put in each ramekin: 2TBS Cheese, 1 1/2 TBS rosemary, and 1 TBS bread crumbs.
- Place in oven for 12-15 minutes (until whites solidify and eggs are just set), they will continue cooking after the come out.
- Let sit for 3-5 minutes and serve with toast.
- NOTE: you can also makes these with Parmesan Cheese and fresh chives yummers.

- Slice eggs in half and remove yolks. Mash yolks with fork in medium bowl. Add mayonnaise, salt and pepper. Blend well.

- Break eggs into large mixing bowl and beat slightly.
- Add the milk, cheese, croutons, onion, and mustard and let sit overnight.
- Fry the bacon and break up into bite-sized pieces.
- Slice green pepper and tomato.
- Pour egg mixture into a large greased baking dish.
- Top with bacon and tomato slices.
- Bake covered at 375 for 55 minutes.
- Make the sauce for the eggs by combining the 2 cans of soup and 1/2 c milk. Heat and serve over eggs.

This is a recipe I threw together one night as I was making "breakfast for dinner" for Brad. He traditionally prefers scrambled eggs, but wanted something a bit more special.

Steps:
- Combine the beaten eggs, milk, hot sauce, and spices. Set aside.
- Heat a non-stick skillet to medium-high heat and melt butter.
- Add onion and scatter. Saute, stirring occassionally, to allow the onion to carmelize.
- When onion is browned to your liking, scatter it evenly around the skillet and lower heat to medium.
- Add the egg mixture to hot skillet. It will set quickly from the heat, but resist the temptation to move it around.
- After 1-2 minutes, push the cooked egg to one side, allowing the wet egg to run onto the hot skillet. Continue this on alternating sides of the pan until you've got a neat little pillow of browned, oniony, delicious scrambled eggs that are set to your liking.
- NOTE: Or, if you're not anal-rententive like me, scramble the eggs however you like and enjoy. It won't be as attractive, but will be just as tasty.

Steps:
- Fill large skillet halfway with water.
- Add vinegar and bring to a gentle boil.
- Meanwhile whisk egg yolks, 2 tbs. water and lemon juice in small saucepan.
- Cook over low heat, whisking constantly, until bubbles begin to form around the edge of the pan.
- Whisk in butter, 1 piece at a time, until butter is completely incorporated and sauce is thickened.
- Remove from heat.
- Stir in salt, paprika and ground red pepper.
- Break eggs and carefully add to simmering water.
- Cook uncovered, gently spooning water over the tops of yolks until whites are set and yolks are cooked, 3 to 4 minutes.
- Place 1 toasted muffin half on each of 4 plates.
- Set aside 1/4 cup sliced salmon for garnish.
- Arrange remaining salmon over muffins.
- With slotted spoon, place poached eggs on salmon.
- Spoon sauce over eggs.
- Top with reserved salmon.
- Sprinkle with parsley.
