Steps:
- Cook pasta according to package directions. Drain.
- In a Dutch oven, brown ground beef over medium heat. Add chopped onion, and cook until onion is soft. Add green pepper and tomato sauce; cook until pepper is soft.
- Serve sauce over pasta.

BAKED ELBOW MACARONI WITH ITALIAN SAUSAGE AND PEPPERS
Found this recipe on the box of whole wheat macaroni, and thought I would give it a try. Very good. I used fat free cheese and it tasted just as good as full fat. Lower in fat, and loaded with fiber.

Steps:
- Cook the elbow macaroni according to package directions. Preheat oven to 350 degrees F.
- Heat olive oil in large skillet. Add garlic, onion, peppers, and basil. Saute 3 minutes, then add the sauce and sliced Italian sausage. Simmer 5 minutes.
- Spread 1 cup of the sauce mixture into the bottom of a 9x13 baking dish.
- Layer 1/2 of the macaroni, 1/2 of the sauce mixture, 1 cup mozzarella and 1/2 cup Parmesan.
- Repeat, and bake 25 minutes.
- Let stand 10 minutes before serving.
ELBOW PARMESANI
I got this from the back of a box of macaroni. We loved it and I wanted to share it. Also, didn't want to lose it and knew it would be safe if I put it on here. It is very simple and quick to make and during the summer that counts for a lot because I don't have as much time to cook. I took it to a potluck and brought home an empty dish so I was happy about that...lol. Cook time includes the simmer time and time to cook the macaroni and veggies

- Cook macaroni according to pkg. directions.
- Steam veggies.
- Bring half and half to boil in 12-16 inch skillet.
- Reduce heat and simmer for 5 minutes stirring constantly.
- Remove from heat.
- Add warm macaroni and veggies (including tomato) to half and half in skillet.
- Toss well and then add butter and seasonings and parmesan cheese.
- Toss again and serve hot.

Steps:
- Cook the macaroni in plenty of boiling salted water.
- Meanwhile melt the butter in a wide skillet; add onion. Saute 15 minutes.
- Add zucchini; saute 5 more minutes.
- Stir in tomatoes, parsely and garlic. Simmer, uncovered, for 5 minutes.
- Stir in ricotta, milk, Romano and 1 T of the Parmesan.
- Combien the cooked elbows with the sauce.
- Pour into a 1 1/2 quart baking dish. Sprinkle with remaining cheese.
- Bake at 350 until top is lightly browned, about 20 minutes.

BAKED ELBOWS AND MEATBALLS
After my party this past weekend I had a whole lot of sauce and meatballs left over. I didnt want them to go to waste and yet another meatballs sub was just not happening. I had homemade sauce and meatballs for the party so I used them in this dish. However you can use your favorite sauce and frozen meatballs for a quick dinner...

Steps:
- 1. Preheat oven to 350
- 2. In a large baking dish spread a layer of sauce and then put elbows on top.
- 3. Mix elbows with sauce.
- 4. Now add a layer of the sliced provolone
- 5. Sprinkle with parmesan cheese
- 6. Add meatballs on top of this
- 7. Then another layer of provolone
- 8. Top off with sauce and sprinkle with parmesan
- 9. Bake in oven for about 30 to 35 minutes
- 10. Allow to cool slightly
- 11. While pasta cools slice rolls in half and butter insides, sprinkle with a touch of garlic salt and then garlic powder and place face down on a baking sheet. Bake in 400 oven till light brown and crispy on outsides.
- 12. Serve pasta with additional sauce if desired and several slices of garlic bread
