GRANDMA'S CANDIED YAMS



Grandma's Candied Yams image

4 large yams
8 tablespoons (1 stick) unsalted butter
2 cups packed dark brown sugar
1/2 cup canned pineapple juice
2 1/2 to 3 teaspoons ground cinnamon
1 1/2 teaspoons pure vanilla extract
Pinch of ground cloves
1/2 cup strawberry preserves

Steps:

  • Preheat the oven to 375 degrees F.
  • Cut off the ends of the yams, then peel and cut the yams into 1/2-inch-thick circles. Add to a 2-quart baking dish. Set aside.
  • In a medium pot, melt the butter over medium heat. Add the brown sugar and stir until thoroughly blended. Stir in the pineapple juice, cinnamon, vanilla and cloves. Taste the mixture to make sure it's sweet to your liking and pour over the yams. Spread the strawberry preserves on top of the yams.
  • Cover the dish with aluminum foil and bake until the yams are semi-tender, about 40 minutes. Remove the foil and bake until the yams are caramelized, 20 to 25 minutes more.
  • Plate and serve hot. And don't forget to pour the sauce from the baking dish on top!

¼ cup unsalted butter
½ cup pineapple juice
½ cup white sugar
½ cup brown sugar
1 teaspoon ground cinnamon
½ teaspoon ground nutmeg
2 (29 ounce) cans cut yams, drained
1 (8 ounce) can pineapple chunks, drained
1 ½ cups miniature marshmallows

Steps:

  • Preheat the oven to 350 degrees F (175 degrees C).
  • Melt butter in a saucepan over medium-low heat. Add pineapple juice, white sugar, brown sugar, cinnamon, and nutmeg; stir to combine and cook until sugars have dissolved, 2 to 3 minutes.
  • Meanwhile, place drained yams in a casserole dish. Add pineapple chunks. Pour sauce over top.
  • Bake in the preheated oven for 1 hour. Add marshmallows to the top and continue to bake until golden and melted, 10 to 15 minutes more. Let stand for 15 minutes before serving so sauce can thicken.

This is a dish that we make every Thanksgiving and is quite easy and tasty. There usually isn't too much left. And the orange yam color adds some interest to the table. A lot of this recipe is dependent on the amount of yams and 'eyeballing it' so the measurements aren't always exact. This can also be made ahead of time and reheated. Servings are estimated as we make this for about 22 adults and 8 children under 8 yrs of age. Please note that if recipe is to be made ahead of time and reheated, it should be on the moist side since it will need the additional liquid during reheating.

5 lbs yams (or sweet potatoes)
2 (20 ounce) cans crushed pineapple, in its juice
1 -2 cup walnuts or 1 -2 cup pecans (whole, halved, or slightly chopped)

Steps:

  • Peel yams and cut into thirds or quarters.
  • Place into boiling water and cook until soft, approximately 10-15 minutes.
  • Drain water and mash yams.
  • Add 1 can of crushed pineapple and mix well.
  • Continue adding crushed pineapple until mixture is quite moist.
  • Add nut pieces.
  • Note: Depending on the consistency, you may want to add a smaller can of crushed pineapple or pineapple juice instead of or in addition to the second can mentioned above.

4 large sweet potatoes, peeled and cut into 1/4-inch-thick rounds
8 tablespoons (1 stick) salted butter
2 cups granulated sugar
One 20-ounce can crushed pineapple
1 teaspoon ground cinnamon
1 teaspoon ground cloves
Pinch kosher salt
1 teaspoon pure vanilla extract

Steps:

  • Preheat the oven to 375 degrees F. Place the sweet potatoes in a 2-quart baking dish. Set aside.
  • In a medium pot, melt the butter over medium-low heat. Add the sugar and stir until smooth. Drain the pineapple in a strainer, reserving the juice. Stir in about half the pineapple and half the pineapple juice; reserve the rest of the pineapple and juice for another use. Stir in the cinnamon, cloves and salt. Bring the mixture to a boil, remove from the heat and add the vanilla extract. Pour the mixture directly over the sweet potatoes.
  • Cover the dish with aluminum foil and bake until the sweet potatoes are just tender, about 45 minutes. Remove the foil and continue to bake until the sweet potatoes are caramelized, 20 to 25 minutes more.
  • Plate and serve immediately. Pour extra sauce from the bottom of the baking dish on top.

1 can(s) 40 oz. canned princella yams, save juice (other yams are too mushy)
1 can(s) 8 oz. pineapple chunks, save juice
4 Tbsp butter
1 Tbsp cornstarch
1 Tbsp fresh lemon juice
1/2 tsp each: cinnamon, nutmeg & salt
1/2 c brown sugar

Steps:

  • 1. Melt 4 TBS butter in large sauce pan. Add cornstarch and whisk together.
  • 2. Using ALL of the pineapple juice, and some of the yam juice, to make 1 cup of liquid total, add to butter / cornstarch mixture.
  • 3. Whisk to blend.
  • 4. Blend spices with brown sugar (to prevent lumps). Add to roux in pan. Cook until thick and bubbly.
  • 5. Place yams and pineapple in large baking dish.
  • 6. Pour brown sugar sauce over yams. Bake 40 min. at 350 degrees. (Or warm slowly on stove top.)
  • 7. Just before serving, add mini marshmallows on top and carefully bake / broil until golden.

MOM'S CANDIED YAMS WITH CARAMEL

I took my mom's childhood candied yam recipe and added a layer of caramel. It is now a must at every Thanksgiving and Christmas and is often requested with much anticipation by anyone who has had it. One recipe will serve 6, but barely. I promise there won't be leftovers. If you're going to feed 6 or more, I suggest doubling the recipe in a 9x13-inch pan.

1/2 cup margarine, melted
2 teaspoons cinnamon
2 teaspoons ginger
2 teaspoons nutmeg
1/4 cup brown sugar
1/2 cup honey
1 can pineapple bits
1 cup pecans
to taste miniature marshmallow

Steps:

  • Put mashed yams in casserole. Mix together margarine, cinnamon, ginger, nutmeg, brown sugar and honey.
  • Mix in yams with pineapple bits and pecans.
  • Top with miniature marshmallows.
  • Bake at 325 degrees until heated through and marshmallows are bubbly.
  • Note: You may want to cut back on the ginger, I only used 1 teaspoon.

MOM'S THANKSGIVING SWEET POTATO-PINEAPPLE BALLS



Mom's Thanksgiving Sweet Potato-Pineapple Balls image

These are made with canned yams, crushed pineapple and are covered with corn flakes. My Mom got this recipe in the early 1960's and made it every Thanksgiving. The corn flakes add texture and so the balls resemble little porcupines! Note: my husband likes marshmallows with yams so I have since made some with marshmallows inside the balls for those who like it sweet! This year I made half the balls with 3 mini marshmallows that I put put on top in a small indentation. DH's have sugar-free marshmallows which I found on-line (La Nouba brand)! You can also put the yam/pineapple mixture in a ramekin without the cornflakes and just add marshmallows too.

3 (40 ounce) cans yams, drained
1 (20 ounce) can crushed unsweetened pineapple, drained
3 cups corn flakes, whole flakes, may need more for coating

  • Drain the yams and the pineapple VERY well.
  • Mash the yams and pineapple in a large bowl with your hands or a masher.
  • Roll into baseball size balls and cover in the corn flakes. They look nice with the flakes sticking up.
  • For those who like marshmallows, place a marshmallow or use some mini marshmallows, placed in the center of the ball and then cover with the corn flakes; or indent and add marshmallows.
  • Chill balls in the refrigerator to firm up.
  • Place balls on a foil lined cookie sheet and bake, at 350°, to heat through and until cereal starts to brown; about 25 minutes.
  • Easy to serve with a spatula.
  • Since a "ball" is a portion and you can adjust the size of the balls based on how many guests you have!

4 lbs sweet yams, orange variety preferred
3/4 cup unsweetened pineapple juice
1/4-1/2 cup butter
2 -4 cups sugar, depending on your taste (start with 2 cups)

Steps:

  • Peel and cut yams. cut to diagonal slices about 1/4 inch slices.
  • Boil pineapple juice and sugar till syrupy.
  • Add yams and simmer for 10 minutes.
  • Remove yams and transfer to 13x9 pan.
  • Arrange slices to nice galette design, overlapping each pieces.
  • Meanwhile, add butter to the pineapple syrup, let simmer till fully incorporated.
  • Pour on the yam slices.
  • Bake in pre heated 350 oven till tender about 30 minutes.
  • This will be thickened and gooey.
  • Serve warm.
  • Delicious!
