GRILLED CHEESE WITH EVERYTHING BAGEL SEASONING

1/4 cup cream cheese, at room temperature
3 scallions, sliced
1 tablespoon butter, plus more as needed
4 thick slices seeded wheat or country white bread
Everything Bagel Seasoning, for sprinkling, recipe follows
2 ounces mozzarella, thinly shaved or sliced
4 slices tomato, cut into half-moons
4 thin slices red onion, cut into half-moons
1 tablespoon capers
Kosher salt
1 teaspoon sesame seeds
3/4 teaspoon poppy seeds
1/2 teaspoon dried minced garlic
1/2 teaspoon dried minced onion
1/4 teaspoon kosher salt

Steps:

  • Mix together the cream cheese and scallions until well combined.
  • Melt the butter in a large skillet over medium heat. Add the bread slices and toast until lightly browned on one side; remove to a cutting board, toasted-side up (the toasted sides will become the insides of your sandwich). Spread all four slices with scallion cream cheese, then sprinkle with Everything Bagel Seasoning. Top two of the slices with mozzarella, sliced tomato and red onion. Press the capers into the cream cheese on the other two slices. Form sandwiches.
  • Add a bit more butter to the skillet if it seems dry. Place the sandwiches in the skillet, cover with a lid and cook until toasted on the bottom, 3 to 5 minutes. Flip the sandwiches and cook, covered, until toasted on the reverse side and the mozzarella is melted, about another 2 minutes. Sprinkle with a pinch of salt, cut in half and serve.
  • Mix together the sesame seeds, poppy seeds, dried minced garlic, dried minced onion and salt.

Calling all cheese fanatics! Do you love cheese? I think I may have the sandwich for you. My local Einstein Brothers used to have this on their menu - if I recall correctly, it was around the year 2001. Back then, this sandwich cost about $6 or so, so I figured out how to make these for myself at home. This glorious sandwich has since been pulled from the menu, probably because the fat content is enough to induce an instant heart attack! Ha ha, just kidding of course. Anyway, I love this sandwich (in moderation) and it's very easy to make using a sandwich maker,grill or skillet. Bon appetit!

2 slices tomatoes
1 slice swiss cheese
1 slice cheddar cheese
1 slice provolone cheese
1 slice monterey jack pepper cheese
2 tablespoons chive & onion cream cheese
butter or margarine
2 slices of thick sourdough bread (or bread of your choice)

Steps:

  • Lightly butter each slice of bread and place, butter side down on a plate.
  • Spread 1 tablespoon of chive and onion cream cheese on each slice.
  • Top one piece of bread with slice of tomato. Layer with Swiss, cheddar, provolone and pepper jack cheese.
  • Top with second slice of tomato. Place second slice of bread on top so that buttered side faces out.
  • Place in lightly oiled skillet and grill on medium heat until lightly browned.
  • Turn over, and lightly brown the other side.
  • Cut in half and enjoy with a dill pickle!
  • These can also be made with a sandwich/panini maker or placed under the broiler until cheese is melted.

  • Spread cream cheese on one side of bread. Grease skillet with cooking spray; heat to medium. Place a slice of bread onto skillet, cream cheese-side up. Top with cheeses and tomato. 1 cup very warm water (110 to 115 degrees, not steaming)
1/2 tablespoon yeast
1 tablespoon light corn syrup plus
1 teaspoon light corn syrup
1 tablespoon molasses plus
1 teaspoon molasses
1/2 teaspoon vegetable oil
1 teaspoon salt
2 cups bread flour plus about
2/3 cup bread flour to incorporate
while kneading
1 1/2 tablespoons sugar for water bath
Cornmeal for dusting

Steps:

  • Combine the warm water and yeast in a medium bowl and stir until the yeast is dissolved. Be sure the water is not too hot, or it may kill the yeast. Add the corn syrup, molasses, and oil to the bowl and stir thoroughly. Add the salt. Pour the 2 cups of bread flour into the bowl and incorporate it with the other ingredients. Sprinkle a little of the reserved flour over the dough in the bowl and turn it out onto a surface that has been dusted with more of the reserve flour (depending on your climate you may not have to use all of the reserve flour, but you will surely use most of it). The dough should become very smooth and elastic, dry to the touch, and not tacky. You will have to knead for 6 to 7 minutes to get the right consistency. Put the dough back into the bowl or another container, cover, and let it rise in a warm place for 30 to 40 minutes. The dough should double in size. Punch down the dough and cut it into 4 even portions. Working with one portion of the dough at a time, form the dough into a ball. Turn the edge of the dough inward with your fingers while punching a hole in the center with your thumbs. Work the dough in a circle while stretching it out and enlarging the center hole so that it looks like a doughnut. The hole should be between 1 to 1 1/2 inches in diameter. Place the 4 portions of shaped dough onto a greased board or baking sheet, cover (a clean towel works well), and allow the dough to rise for 20 to 30 minutes. The dough should nearly double in size. Preheat the oven to 400 degrees. Fill a medium saucepan 2/3 full of water and bring it to a boil. Add 1 1/2 tablespoons of sugar to the water. Working with one bagel at a time, first enlarge the hole if it has closed up to less than 3/4 of an inch. Be careful not to overwork the dough at this point or it won't have the proper consistency. Drop the bagel into the water, cover the saucepan, and boil for 20 seconds. Flip the bagel over, and boil for another 20 seconds. Immediately take the bagel out of the water with a slotted spoon, let the water drip off for about 10 seconds, then place the bagel onto a baking sheet that has been dusted with cornmeal. Repeat for the remaining bagels. Be sure the bagels do not touch each other. Bake the bagels for 26 to 30 minutes, or until they are light brown. This recipe yields 4 bagels.
